Grilled Corn Salad🥗 with Tomato🍅 and Avocado🥑⠀

This easy summer salad goes with any protein Ingredients
4 ears sweet corn
1 garlic clove pressed or minced
1 jalapeño seeds and ribs removed, then minced
Zest and juice of 2 limes
1/2 cup extra virgin olive oil
2 ripe avocados🥑 halved, pitted, peeled and diced
1 cup halved cherry tomatoes🍅
6 scallions thinly sliced
1/2 cup finely chopped fresh cilatnro leaves
Freshly ground black pepper

💥🥑Take chicken salad to a new level with the addition of avocado. This naturally creamy chicken and avocado salad is healthy and contains no mayo or sour cream!🥗💥
2 medium cooked chicken breasts, shredded or chopped (we used rotisserie chicken)
2 ripe avocados, pitted and diced
½ cup corn (roasted, canned, or frozen)
¼ cup red or green onion, minced
2 tablespoons cilantro, minced (or parsley or dill)
2 tablespoons lime (or lemon) juice
2 tablespoons olive oil
salt and pepper to taste
In a large bowl, add the shredded chicken, avocado, onion, avocados, corn, and cilantro.
Drizzle with the lime (or lemon) juice, olive oil and season with salt and pepper. Toss gently until all the Ingredients are combined.
Notes: additional add-ins that go well with this salad include chopped tomato, chopped cucumber, bacon chopped and cooked, or black beans.

Baked vanilla donuts with raw blueberry icing 🍩. While lilac season may be a solid 6 months from now, if you’re on the opposite side of the globe these are right on point! Besides, a donut topped with autumn leaves doesn’t have quite the same ring to it...
1 1/2 cups (190g) plain flour.
1/2 tsp fine salt.
1 tsp (5mL) baking powder.
1/2 cup almond milk.
2 tsp apple cider vinegar (ACV).
1 tsp vanilla extract.
1/2 tsp ground turmeric.
1/3 cup coconut sugar.
2 Tbsp olive oil.
3 Tbsp Aquafaba.
1. Preheat oven to 180 degrees C, and set aside a donut pan.
2. Which auqafaba for a few minutes until light and fluffy, set aside.
3. In a large mixing bowl, add ACV and milk. Set aside to thicken for a couple of minutes, then add remaining wet ingredients (vanilla, oil, sugar). Mix to combine.
4. Sift dry ingredients (flour, baking powder, salt, cinnamon and turmeric) into the bowl and mix together. Finally, fold through Aquafaba, then spoon mixture into the donut holes (to 3/4 full). Smooth down with a wet finger.
5. Bake 9-12 mins, then allow to cool for 10 mins before inverting onto a wire rack to cool.
To make the icing, blend; 1 cup macadamias, 1 Tbsp lemon juice, 1/3 cup blueberries, 2 Tbsp pure maple syrup and 2 Tbsp coconut oil. Blend until VERY smooth, then dip cold donuts in. Enjoy! Xx

Easter breakfast 2019. Just the two of this year so that means I get to take extra care with everything I do today. First up, malted Belgian waffles with macerated strawberries and whipped cream. Finally perfected my recipe!
I never knew I had a thing for tortillas until I bought some and tried them🤤. What I didn't like? The price and all the extra ingredients added to make sure they remained "fresh". What I was surprised to find out is that, to prepare them, you only need: - 250g whole grain flour;
- 150ml water;
- 10ml olive oil;
Even better.. You only need to:
1. Mix all the ingredients in a bowl.
2. Make small balls out of the dough (I made 10) and let them rest under a towel for 15 min.
3. Spread a bit of flour on a flat and smooth surface and, using a rolling pin, flatten the balls into tortillas (don't make them too thin, else you'll probably end up with nachos after point 4).
If they get sticky just spread a bit more flour.
4. Use a preheated frying pan (add a drop of water inside the pan and if it gets all frizzy it's ready) to cook them. Since we're not aiming at nachos they should be cooked for not more tham half a minute per side.
I woke up at 9am and my automatic reaction was that I need ice cream from @uhlmansicecream 😂
Being a New Englander, I LOVE ice cream. Doesn’t matter the season, you can catch me eating it all year round 🍦
A healthy relationship with food doesn’t necessarily mean just eating whole foods, which your diet should consist of those things, but it’s also enjoying treats without guilt and moving forward with your day. There are way too many times people suffer with food guilt, I’ve been there before. All it does is end up in a downward spiral of binge eating and/or beating yourself up for your actions
Enjoy and move on, life is too short for the blame game and not enjoying an ice cream cone here and there 😉

Going bananas up Ben Lomond in Scotland today - absolutely perfect day for it! Did you know, that the reason your banana gets black spots or goes darker is because it releases a chemical called ethylene as it gets older OR when it gets a tiny bruise, which then ripens it even faster! This is in such abundance in bananas that if you’re trying to ripen fruit - you can pop it in a sandwich bag with a banana and voila - overnight ripening (perfect for those pesky avocados! 🥑) it’s perfectly safe to eat - and actually - tastier because it’s oh so sweet and ripe. I hope you had the most wonderful day today - enjoy the moments ☀️🍌 PS how perfect is the view (minus my tired feet 🤭☺️)

Yo! Going into this cleanse I was feeling really good. I don’t eat that much anyways so it can’t be that hard!?
This cleanse has not only made me feel good, but it has also strengthened my willpower because you’re gonna want food a lot... like a lot. (I totally recommend chewing gum to get over this. 🤣)
If you’re curious about the cleanse just go for it! You’ll feel great and you positively won’t look back at this and think, “Man, I really wish that I hadn’t been so healthy for those 3-7 days!” That’s just not gonna happen! .
There’s never a bad time to do it so just do it!

this cake was so fun to make! the cake itself is a paleo carrot cake recipe by @foodfaithfit 🙌🏼 even my non-paleo sisters liked the cake! we decided to frost it w @missjonesbakes vanilla frosting (it taste better than simple mills vanilla frosting). for the decorations we got creative & used fruity pebbles & chocolate chips bc that’s all we had 😂 (s/o to my sis for helping me decorate). also don’t be fooled bc I ate a lot of chocolate & some normal desserts too :) just taking time to enjoy things & recharge w family before these last 2 stressful weeks 😅

Long weekends call for a big bake session ✨ Blueberry and almond loaf with lemon cashew cream icing. Low in any kind of sugar, to balance out all that Easter chocolate 🙌 There is NOTHING worse than when your tummy starts to rumble mid afternoon and you have nothing to reach for, or even worse, the snacks you do have leave you hungry within the next hour by interfering with the blood sugar curve. This blueberry and almond loaf if high in healthy FATS to keep you satisfied until dinner. + the antioxidants in the blueberries and vitamin E in almonds are absolute skin superheroes 🌿 One of my favourite recipes in the book and a SUPER easy one to whip up. New Honey Sesame Stir Fry
makes about 4 servings
1.5 lbs boneless skinless chicken breasts, or tenders cut into 1 inch pieces
2 Tbsps sesame oil, divided
3 large pepper bells, different colors, diced large (I used red + yellow)
1 large onion, chopped into big chunks
sea salt and fresh ground black pepper, to your taste
2 fresh garlic cloves, minced or pressed
1/4 raw cup honey
1/4 cup chicken bone broth, or stock
1/4 cup coconut aminos, Bragg's liquid aminos, or low sodium soy sauce
1 tsp gluten free flour
2 Tbsp sesame seeds
2 green onions, thinly sliced
Heat 1 Tbsp oil in a large skillet over medium heat. Add onion and cook for approximately 2 minutes.
Add in bell peppers and garlic and cook for an additional 3-4 minutes, or until veggies are crisp tender. Remove from pan and set aside.
Add the remaining oil to the pan, then add in chicken and season with sea salt and pepper to taste.
Cook for 8 minutes or so, stirring occasionally, until browned and cooked through. Meanwhile, in a small glass bowl whisk together all the sauce ingredients.
Return veggies and add the sauce to the pan and cook, stirring for 2 more minutes until heated through and the sauce thickens a bit.
Garnish with sesame seeds and green onions. I served this over brown rice, but quinoa would also be awesome!

I do MEAL PREP (preparing whole meals or dishes ahead of schedule) whenever I have a busy week on the way.
What I love about it, is that
1️⃣ I can save so much time and energy. All I have to do is to reheat and eat!
2️⃣ I can save money because I don't always have to go to Mcdonalds whenever I get hungry.
3️⃣ Relieves stress because I don't have to overthink about food all the time because I've come prepared. •
I normally prepare meals good for 3 days since I don't want my meal to be frozen for a long time. •
What do I prepare?
1️⃣ Breakfast - Toasted wheat bread with Banana, Lettuce and Peanut butter
2️⃣ Snack - Apple, Banana, Almonds, Nuts
3️⃣ Dinner - Shrimp, Chicken thigh and brown rice •
Where's my lunch?
Usually I don't eat lunch since I get full from my breakfast. I'm drink a lot of coffee or water throughout the day so that's why I don't get very hungry often but when I do, I grab my favorite snacks to keep me full until dinner. 👍🏻 •
However, I don't do meal prep all the time. I still enjoy eating food that's freshly cooked but you know, it's hard to cook when you're too busy or too lazy to cook all the freakin time you eat! So if you're both too busy or lazy, then meal prep might be the best option for you! •

Finally got my sushi fix, thanks to @shizusanshophousebar, an authentic Japanese restaurant that serves authentic southeast Asian food, when craving for some good sushi do head over to @shizusan ( Mumbai, Pune or Bangalore). From fried tempuras to Dim sums and Donburi bowls to noodles one can expect here everything from the Southeast Asian cuisine.
In the frame - the famous Philadelphia roll (Salmon), authentic Salmon and Asparagus rolled in a bed of vinegared rice and Philadelphia sauce topped with finely cut salmon and Tobiko (fish roe/ fish eggs) served with a side of Wasabi and sweet Ginger.
