  • Last big family holiday a month before my wedding🙌🏻❤️🤭I’ve seen my feed with crowded with a ton of chatter about holidays and eating during them. To be honest, if you’d asked me a year ago about my attitude on a family holiday a week before my final wedding dress fitting, I’d probably have told you that I’d be stressed out about it. I’m proud to say that is not the case today ❤️ Do you feel like you get guilt from both sides? People commenting on your food if you make healthy choices or people also saying that you are “not healthy” anymore if you eat a big dessert? I had some of the best pastry ever from the farmer’s market but am also eating carrot oats instead of sausage casserole for breakfast today 🤗 If you want to eat healthy or you want to indulge, do you! No judgement today on yourself or anyone else❤️

A little dessert inspo that will please anyone on a holiday: almond butter and chocolate- stuffed dates! These are sliced medjool dates stuffed with @woodstockfoods almond butter and @eatingevolved chopped chocolate and they’re heaven. Happy Easter and Passover weekend to all of you!

  • Cajun Crispy Breaded Chickpeas by @starinfinitefood! 😍🌈 Tag someone you'd enjoy this with.

Recipe: 1 can chickpeas, drained and outer layers removed
1/2 cup almond flour
1 tablespoon olive oil (or any oil)
2 tablespoon Cajun seasoning

Instructions:
Preheat oven to 375.
Spread the chickpeas out on a baking sheet and roast them dry for 30 mins, shaking them around a bit.
Mix together the almond flour and Cajun seasoning in a small bowl.
Remove from oven and place in a bowl. Toss with olive oil.
Add the almond flour mixture and coats the beans.
Spread the bean out on a piece of parchment paper on a cookie sheet and bake for another 10-15 minutes until crisp on the outside.

Ingredients

9 small spinach tortillas (5-inch diameter)
2 cups of cooked rice (360 g)
One 15 oz can kidney beans or black beans (rinsed and drained)
1 small/medium onion
1/2 tbsp oil
2 garlic cloves
1/2 bell pepper
3/4 cup canned mushrooms (100 g) or use fresh
Spice mix: 1/2 tsp onion powder, 1/2 tsp ground cumin, 1/2 tsp paprika, 1/4 tsp smoked paprika, 1/4 tsp ground ginger, sea salt to taste
1 tbsp lemon
1 tbsp Liquid Aminos
4 tbsp plant-based milk
1/3 cup passata
1 batch vegan cheese sauce
Instructions
Cook rice as per the instructions on the package. You will need 2 cups of cooked rice for this recipe.
Prepare spinach tortillas as per this recipe (click). Or use store-bought flour tortillas or corn tortillas of choice.
Meanwhile, heat oil in a pan/skillet over medium heat and add the onion, mushrooms, and bell pepper.
Sauté for about 3-5 minutes, then add garlic for a further minute. Stir occasionally.
Add all spices, balsamic vinegar, soy sauce, plant-based milk, passata, and hot sauce. Stir and let simmer for about 3 minutes.
Add cooked rice and beans, stir and turn off the heat.
Taste and adjust seasoning if needed.
Preheat oven to 410 degrees Fahrenheit (210 degrees Celsius) and line a baking sheet with parchment paper.
Make one batch of the vegan cheese sauce (on feed) or use store-bought vegan cheese.
Add about 2 tbsp of the rice filling on one side of a tortilla and 1 tbsp of the vegan cheese. Fold the other side over the filling and press it slightly down with your fingers. Do the same for the remaining tortillas.

Transfer all tortillas onto the baking sheet. Bake in the oven for about 10-15 minutes or until crispy. Enjoy hot!

Os cuento, llevo unos meses con ansiedad, por motivos de estres, cambios, trabajo, etc.
He puesto unos 7 kilos en 5 meses, debido a todo esto. 
Con esto quiero decir, que no todo es bonito, no os tengo que decir siempre que bien estoy, como muy sano y soy 100% saludable, NO❌. Hay etapas, hay momentos...momentos en los que tenemos problemas y situaciones las cuales nos superan y lo pagamos con el comer, por que? Porque es un placer que a la mayoria de las personas nos gusta muchisimo. Yo, escribiendo esto tambien me motivo porque voy a empezar una nueva etapa, volver a cuidarme, a empezar a tope con todo, y dia a dia os lo voy a ir contando y subiendo mi progreso. Esto no solo afecta a mi fisico, sino a mi cabeza y al deporte que realizo, he perdido fisico en el deporte y muchas mas cosas, el no estar contenta con mi cuerpo y conmigo misma me hace salir del futbol  y estoy siempre pensando en que mal estoy y no estando bien fisicamente(falta de resistencia sobre todo).
Me encanta que sepais esto porque no todo es bonito, yo tambien tengo ansiedad y tambien como mal , mira, meses llevo con ansiedad, pero bueno, he llegado hasta aqui, ha llegado hasta hoy, para decir BASTA y comenzar de nuevo.
Espero que me apoyeis en esto y dia a dia os contare todo sobre el progreso, ire subiendo comidas que haré y cuando tenga tiempos libres rutinas de deporte que haré.

  • life update: i’ve been sick all week (and still am) with a really bad sinus infection and am now i’m taking antibiotics and lots of advil. although my sinuses feel better, now i’m having other symptoms which totally suck but at least now i’m semi-functional🙈 i’ve been having smoothies all week in order to pack in those nutrients since my appetite has been all over the place, but i decided to switch it up today with some CARROT CAKE WAFFLES🎉 also had a green juice for those micros and some kombucha for those probiotics🙌🏻 i hope everyone has a wondering sunday (and easter/passover if you celebrate)🧡

the waffles👉🏻 my fave buckwheat banana bread waffles (recipe in feed) mixed in a smallish shredded carrot topped with 🍌,🍓, @nutista “the nutty one”, raw local honey, @lovvelavva plain yogurt, 🥥 shreds, walnuts, and bee pollen
