  • One Skillet Cashew Chicken Stir Fry

Ingredients:
1 Tbsp olive oil
1 lb boneless skinless chicken breasts, cut into 1-inch pieces
Salt and pepper, to taste
3 cloves garlic, minced
2 cups broccoli florets
1 red bell pepper, julienned
1 cup sugar snap peas
½ cup carrots, julienned
⅓ cup unsalted cashews
4 green onions, chopped
.
For the sauce:
4 Tbsp tamari (or soy sauce)
3 Tbsp all-natural peanut butter
2 Tbsp honey
1 tsp. sesame oil
1 Tbsp grated ginger
2 or 3 Tbsp water
——
Instructions:
To make the sauce, whisk together tamari (or soy sauce), peanut butter, honey, sesame oil, and grated ginger in a small bowl. Whisk in 2 or 3 tablespoons of water, depending on the consistency you prefer, and set aside.
In a large skillet over medium heat, drizzle olive oil and add chicken. Season with salt and pepper and sauté until lightly browned, about 4 to 5 minutes. Add the garlic and sauté for about 30 seconds, mixing it with the chicken.
Add broccoli, bell pepper, snap peas and carrots to the skillet, incorporating everything together. Cook an additional 5 minutes, until veggies are tender and chicken is cooked through, then add cashews and green onions and drizzle the peanut sauce over top.
Mix everything together with the sauce, coating well, and cook for one more minute. Serve and enjoy!

Serves: 2 servings
INGREDIENTS
150g (3/4 cup) dried long grain rice
1 and ½ tbsp Cajun seasoning
2 skinless chicken breasts
1 and ½ tbsp olive oil
½ red bell pepper, deseeded and sliced
½ yellow bell pepper, deseeded and sliced
½ green bell pepper, deseeded and sliced
1 small brown onion, peeled and sliced
Small bunch coriander (cilantro) roughly torn
Zest of 1 lime
1 avocado, peeled, de-stoned and chopped

INSTRUCTIONS
Boil a large pan of water, add the rice and simmer for 15 minutes until the rice is tender. Pour into a sieve and leave to drain.
Whilst the rice is cooking, heat a cast iron griddle pan on a high heat and brush on a little oil.
Sprinkle the Cajun seasoning and pour half the oil on the chicken breasts and rub it in using your hands. Flatten the chicken breasts slightly with your hands and place on the hot griddle. Cook for 7-10 minutes, turning once, until the chicken is charred and no longer pink in the middle. Place on a chopping board to rest whilst you cook the vegetables.
Brush the rest of the oil on the griddle and place the peppers and onion on in a single layer. Cook for 5-6 minutes, turning a couple of times, until lightly charred.
By now the rice should be cooked and drained. Fluff it up with a fork and stir through the coriander and lime zest.
Divide the rice between two bowls. Cut the chicken breasts into slices and place on top of the rice. Add the char-grilled peppers and onion and top with the chopped avocado.

  • 🍴Cheesy Cauliflower Nachos

Ingredients
✅1 medium head cauliflower cut into florets
✅2 tsp. olive oil
✅½ tsp. ground cumin
✅¼ tsp. sea salt or Himalayan salt
✅¼ tsp. chili powder
✅¼ tsp. garlic powder
✅½ cup shredded Monterey jack or pepper jack cheese
✅¼ cup chopped tomato
✅¼ cup chopped red onion
✅¼ cup chopped orange bell pepper
✅1 medium jalapeño seeds and veins removed (optional), sliced (can add a second if desired)
✅½ cup mashed avocado
✅2 Tbsp. finely chopped cilantro

Instructions
✅Preheat oven to 425º F.
✅Place cauliflower on baking sheet. Drizzle with oil. Sprinkle with cumin, salt, chili powder, and garlic powder; toss gently to blend. Spread evenly on baking sheet.
✅Bake for 30 to 35 minutes, or until tender-crisp and golden.

Top evenly with cheese. Bake for 3 to 5 minutes, or until cheese is melted.
Top evenly with tomato, onion, bell pepper, jalapeños, avocado, and cilantro; serve immediately.

  • Por aqui cultivamos uma pequena horta de temperos na sacada, muito bom poder colher ingredientes fresquinhos na hora de cozinhar... Plantados em vasos temos hortelã, orégano, alecrim, tomilho, sálvia,  manjericão Basílico e comum. Eles duram bastante nos vasinhos, só precisam ser regados frequentemente.
Esse manjericão Basílico foi para o molho de tomate!! Olha a cor desse molho 😍😍!!
Para o molho, além dos tomates bem maduros, usei apenas alho, azeite, orégano, tomilho, louro, pimenta dedo de moça,  mix de pimentas moídas na hora, manjericão Basílico, sal e uma pitada de açúcar para diminuir a acidez do tomate.

I loved the program so much I became a certified master coach in it in order to really know my stuff and help others in the process. We have a “Spring Clean Your Eating” support group starting up on May 6th where we’ll learn how to eat to fuel our bodies toward our health goals together. DM me if this sounds like a change you’d be interested in. It made such a huge difference for us. ❤️❤️🙏👩‍🍳👨‍🍳
