Dreaming of this warm farro grain bowl with roasted maple glazed carrots, cabbage and beets ✨ With the longer days and (slightly) warmer temperatures I’ve been craving tons of veggies, but still want to eat something warm at most meals 🌿 Cue this incredibly easy + versatile grain bowl ✨ I’ve never made farro before this, and I definitely didn’t perfect it, but I love the nutty flavour and that it’s such a great source of fibre, protein, magnesium and zinc 🙌🏼.
To make 👉🏼: Cook farro with the “pasta” method- 1 cup of farro in about 4 cups of water, cooking at a boil for about 20-30 mins (you need to taste it to see if it’s done), then draining off the excess water. Meanwhile, toss 3 carrots (batoned), 1 sliced beet and 2 large slices of cabbage in 1 tbsp maple syrup, a pinch of salt + pepper and 1 tsp of garlic pepper. Roast at 450 F for 20 mins. Once all components are done, drizzle with a lemon tahini dressing (link in stories) and enjoy! 💛

DA GOODS: massaged kale salad (dressing: apple cider vinegar, stone ground mustard, olive oil) with 6.5 minute soft boiled @vitalfarms egg, roasted sweet potato fries and tomatoes (drizzle with @chosenfoods avocado oil, sat + pepper, roast at 400 for 40 minutes, and chopped cucumbers, plus a nice @brandlesslife tahini drizzle over the whole bowl - all @whole30 friendly!
Today’s breakfast was another buckwheat pudding! This time i added greens powder for extra vitamin boost 🥦🥬🥒
Topped with big spoonful of @bulkpowders_uk cashew butter, fruits and hemp seeds ✨
My gut loves this meal! It keeps me very full, satisfied and i found it easy to digest. Finally i can eat something without pain and uncomfortable feeling.. Also soaking nuts, seeds, legumens and beans with water and dash of apple cider vinegar is very helpful and beneficial.
My gut is getting better. I started breaking out on my face and this may be symptom of detoxification (my doctor said that). So i’m hoping the best because like i said i don’t want to go back to eating animal products. I want to heal without animal suffering. Because i love animals and i’ll fight for their freedom 💗 But i also want to fight for my health. And i promise you that i’ll always be ethnically vegan and i’ll always support this lifestyle. No matter if i will need to change my diet. Because veganisim is not only diet for me.
Have been enjoying going to the gym so much lately 🙌. And I have actually gained some weight as well 💪.
Never would have thought I'd be eating more but here I am having the best relationship with food I have ever had ❤️.
