Декабрь - месяц предпраздничной суеты: подарки, ёлочные украшения, огоньки повсюду и, конечно же, приготовление вкусных блюд. Для меня уже традицией стала выпечка рождественского печенья 🍪 Рецепт у него очень простой.
⠀⠀•250 гр. муки
⠀⠀•100 гр. сахара
⠀⠀•6 гр. разрыхлителя
⠀⠀•125 гр. сливочного масла
⠀⠀•цедра половинки лимона
Все ингредиенты смешать и собрать тесто в несколько шариков, чтобы потом его было легче раскатывать. Завернуть тесто пленкой и положить в холодильник минимум на час (можно и дольше). Выпекать 180° 12-14 мин. Время зависит от толщины вашего печенья.
Если собираетесь готовить печенье с маленькими детьми, то советую приготовить тесто с вечера, а на следующий день заниматься только приятной частью в приготовлении: вырезание формочек, выпечка и по желанию украшение. Этим вы избавитесь от лишней суеты, разбросанной муки и теста по всей кухне. Так сказать дети счастливы и у мамы нервы целы 😁

PAPAYA CHIA PUDDING JARS WITH CHOCOLATE NICECREAM AND GRANOLA by @panaceas_pantry 🧡
Makes 2 large or 4 small
Prep time 10 minutes, plus soaking time (30 mins)
1 medium-sized papaya
1/3 cup vegan yoghurt of choice
1/2 cup Granola
1/2 cup white chia seeds
2 1/3 cups coconut milk
1 tsp pure vanilla extract
1 Tbsp lime juice
1 tsp lime zest
1. Make chia pudding by adding all ingredients to a bowl and whisking together. Set in the fridge for 20 minutes.
2. Cut the papaya in half, and remove the skin and seeds. Put half the papaya in a small blender and blitz until smooth, then dice the other half. Set aside.
3. In a clean blender, add the nice cream ingredients and blitz into a smooth, thick consistency (you will need to use the tamper). 4. Assemble your jars (or put everything in a bowl!) - create layers of papaya, chia pudding, granola and yoghurt, then top with nice cream and papaya chunks. Enjoy immediately.

Soft & Chewy Gingerbread Cookies (Gluten-free + Vegan) by @twospoons.ca 🧡 .
Makes (16 cookies)
1 tbsp ground flax seed
2 tbsp (30 ml) water
1/2 cup (115 g) vegan butter
3/4 cup (150 g) demerara sugar, or raw cane sugar + 2 tbsp more for rolling
1/4 cup (65 g) almond butter
1/4 cup (60 ml) molasses
2 tbsp almond milk
2 cup (245 g) all purpose gluten-free flour blend
2 tsp ground ginger
1 tsp cinnamon
1/2 tsp cloves
1/4 tsp sea salt
1 tsp baking powder
1. Make flax egg by combining ground flax and water. Whisk together and let sit for at least 5 minutes.
2. Preheat oven to 350F/175C. In a large bowl, cream together the vegan butter and demerara sugar until light and fluffy. Add flax egg, almond butter, molasses and almond milk. Beat to combine.
3. In a separate bowl sift gluten-free flour blend, ginger, cinnamon, cloves, sea salt and baking powder. Add dry ingredients to wet in batches and knead dough with a wooden spoon, or your hands.
4. Line two baking trays with parchment paper. Roll dough into balls the size of a ping-pong, and gently press down to form a round disc shape. Pour 2 tbsp demerara sugar into a shallow bowl and dip the cookies top-side-up in sugar. Place on baking tray with dipped side facing up. Continue until all cookies are coated in sugar.
5. Bake cookies in oven for 10 minutes, or until lightly browned and slightly cracking at the ends.
- place cashews into pan, cover with water and boil 10 min. - drain cashews and pour into blender.
- in a pan pour vegan butter with sage, thym and cook until golden brown. Then in blender.
- add all other ingredients into blender except plant based milk and blend.
- add plant based milk step by step until smooth, creamy and thick consistency.
- line a bowl with plastic wrap. Pour the mixture in it and in the fridge for 3-4 hours or overnight.
- then decorate with dried cranberries.

chocolate cake (for a 3-cup cake pan)
-2/3 cup coconut sugar
-1/4 cup nut/seed butter
-1/4 cup coconut oil, or more nut butter
-1 tsp vanilla extract
-1 cup plant-based milk
-2 large ripe bananas, mashed
-1 1/2 cups whole wheat flour, or use GF if needed
-1/2 cup cocoa powder
-1 tsp baking soda
-1/2 tsp baking powder
-1/8 tsp sea salt
Preheat oven to 375F/190C and grease your cake pan. In a large bowl, whisk together the wet mixture: mashed bananas, sugar, nut/seed butter, oil, vanilla, and milk. Then, sift in all the remaining (dry) ingredients. Fold the batter until combined and pour into the cake pan. Bake for 45-50 minutes, or until an inserted toothpick comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
for the glaze:
-3/4 cup powdered sugar
-1/2 cup plant-based yogurt
-2 tsp pink pitaya powder, plus more as needed
Whisk together the sugar, yogurt, and pitaya powder in a bowl. If needed, add a splash of water to thin out the mixture. Drizzle the glaze over the cake as desired & enjoy!
