🍷The Grand Leopold, a Byrrh (pronounced "beer") cocktail. It's a little tart and fruity, but boozy for a shaken drink. I found this recipe (created by axleoke) in the September issue of Imbibe. I suppose that may make it a "fall drink," but it's not a bad segue between winter and spring. It did quite nicely for a lazy evening at home while it was a brisk 50° here in Augusta.

Recipe:
- 1 1/2 oz cognac
- 3/4 oz Byrrh
- 1/4 oz Curacao
- 1/4 oz lemon juice
- 1 dash Peychauds bitters

Add everything to a shaker with ice. Shake and strain into a cocktail glass. Express a lemon twist and discard. No garnish.

I've been exploring Byrrh lately. I stumbled across a bottle while wandering around a liquor store while traveling, as you do. No? Maybe I'm the only one... I love aimlessly walking around a liquor store in a different city to see if there is anything new to me or exciting.

Anyway, I'm really into this Byrrh stuff lately. I included it in my #homebarawards entry for March and have been pouring it into several other concoctions, including this one. I'm still trying new recipes with it and seeing what works and what doesn't. I love the slightly bitter and very juicy flavor it adds. I already bought myself a backup bottle, so be on the lookout for more Byrrh drinks!

The issues of food waste and energy conservation have been hot topics in the hospitality industry for a while now, and have been culminating in the bar world as of late. .
@beefeatergin_us is doing its part by encouraging eco-conscious cocktail making through their #DrinkWithYourEyes campaign.

DRAGON'S RESOLVE
makes one drink
1 ounce @beefeatergin .5 ounce beefeater pink
2.5 ounce dragon fruit puree
1.5 ounce passion fruit tepache
.5 ounce simple syrup (optional) *

Add all the ingredients to a blender and mix (without ice)Pour the mixture into the dragon fruit shell and top with crushed ice. Garnish with pineapple leaves and edible petals. .
Here is how i applied a sustainable ethos to the Dragon's Resolve:
.
1. THINK LOCAL AND SEASONAL: I am fortunate enough to live in South Florida, where Dragon fruit grow naturally. In fact, I was able to forage this fruit from a friend's backyard  avoiding packaging and transport. .
2. RETHINK CITRUS
Citrus can be one of the most wasteful ingredients when it comes to cocktails. For the purpose of this drink, I substituted the necessary acidity with a passion fruit tepache, that also adds the tropical flair to the drink.

3. REPURPOSE INGREDIENTS
In this case, I used the Dragon Fruit in two ways: the puree for the cocktail and the shell for the drink vessel. I used the entire passionfruit as well, also grown locally, to create a tepache--a fermented drink most commonly made of pineapple skins.

4.RECONSIDER GARNISHES
For this cocktail, i repurposed edible flower petals and pineapple leaves to add an eco-friendly aesthetic and avoiding a wasteful, over the top garnish.

5. MINIMIZE ICE
To reduce wasteful overuse of ice. I blended the ingredients without ice and then used crushed ice to help with proper dilution.

6.AVOID PLASTIC
The simplest way to sustainability in the area of the bar is to say goodbye to the plastic straw. If you must, consider a reusable metal, glass or bamboo straws. Similarly, replace plastic stirrers or cocktail picks, with metal or bamboo ones.

👌🦢👯On Pointe. A deliciously boozy, sweet, complex, juicy, and slightly bitter cocktail with a whisper of funk and smoke. This is my last minute entry to this month's #homebarawards.

After all, this month's theme was all equal parts. How could I resist? I tried quite a few variations on this one before I finally decided that it hit the mark. I got 6 equal parts. Not quite at creativedrunk 's level with his legendary 8 Amaro Sazerac (made with all equal parts), but he is a professional. I'm just some dude in Augusta with way too much booze in his house.🤷‍♂️😂 .
Recipe:
- 1/2 oz Byrrh
- 1/2 oz Punt E Mes
- 1/2 oz Carpano Antica
- 1/2 oz Amaro Nonino
- 1/2 oz Black Grouse
- 1/2 oz Hamilton Jamaican Gold rum
- 8 drops Bittermens Orange Citrate

Add everything to a mixing glass with ice. Stir and strain into a chilled glass. No garnish.

I really tried to figure out a garnish for this one that would add to the drinker's experience, but to no avail. Rather than post it with some non-functional garnish that just looks cool, I decided to forego one altogether. I can't remember where I first read/heard this, but it has stuck with me: Non-Functional Garnishes are No F*cking Good. So my lovely wife graciously dusted off her old pointe shoes to add some scenery to an otherwise simple-looking, but definitely not simple drink.

It's been a minute since my last post. Sometimes life, work, and fun get in the way of our hobbies. After a work trip, some house work that we have been putting off for too long, and planning, prepping and baking for, hosting, and bartending a kick-ass birthday brunch for my wife, I'm happy to say that I'll be posting regularly again!

Welcome to a new era of Spinny McDrinks Boy: Topdown shots!!
I got a new tripod that lets me do these shots and I’m excited to use @homebarawards Game of Thrones challenge to debut this new look!

While I’ve only seen probably three episodes of the series, I’ve actually done a lot of reading
Not of the books mind you
Of the tvTropes and GoT Wiki pages
To commemorate the most iconic creatures of the show, I decided to use Scotch and Mezcal together for their iconically smoky flavors. A little spicy bitters mixed with Aromatic help make the flaming breath of this burnt-orange-peel sour. Here’s the Drogon in the Sky with Dany. Cheers!

1.5 oz Laphroaig or an even smokier peatier Scotch
.5 oz Ancho Reyes Verde
.75 oz Lemon Juice
.75 oz Ginger Syrup
.5 oz Orange Juice
Egg White
Aromatic Bitters
Spiced Bitters
Mezcal Spritz
Express your orange twists on the edge of your glass and char, letting cool while making your drink
Dry shake then shake and strain into glass.
Carefully lay your twists and bitters designs in the foam. Heavily spritz with mezcal

For a bold mocktail, use a few chili seeds with some water for the scotch and Ancho Reyes. Don’t overwhip otherwise you’ll end up with a meringue.

PALATE: Upfront Green Chartreuse notes that have been pushed into something more light and refreshing. It then layers into notes of subtle rose, basil and white pepper.

FINISH: More basil on the finish with re-emerging notes of Green Chartreuse and there is a subtle spice of white pepper that lingers.

GARNISH: Basil

Ingredients
2 tbsp. White Peppercorns
1 Bottle Gin 
_
Directions:
Crack the peppercorns and add them to a bowl with the gin. Give it a good stir and then strain through a fine mesh strainer and coffee filter immediately. Pour the gin back in the bottle.

1. Add juniper berries, orange zest, cardamom pods and water into a sauce pan and muddle the juniper berries.
2. Bring mix to a simmer
3. Add in the sugar
4. Allow to simmer for 15 minutes
5. Let it cool and then refrigerate overnight
6. Strain the syrup

300g Frozen Edamame
1 Bottle Vodka
_ 
Directions:
1. Unthaw the edamame
2. Chop coarsely
3. Add vodka and edamame to a glass bowl
4. Stirring occasionally let the edamame infuse for 2 hours 
5. Strain the vodka back into the bottle

1. Add raspberries, port and sugar to a sauce pan and muddle raspberries over medium heat.
2. Bring syrup to a boil and let boil for 30 seconds.
3. Then remove from heat and let cool to room temperature.
4. Strain out the raspberries.

COLOR: Chocolate brown

NOSE: Very faint notes of rum with lime zest.

PALATE: Lots of incredible rum tasting notes that last the whole sip. On the mid palate the notes of walnut and lime shine through in a beautifully balanced way.

FINISH: A little pop of green walnut with notes of rum and this savoury sensation and mouthfeel of the almond oil.

GARNISH: Almond oil drops with a lime zest.

A choose your own adventure drink⁣

Reposting as my entry for this month's Game of Thrones #homebarawards! It was originally made/posted around the Kentucky Derby. Crafting this drink was an interesting experiment and resulted in some fun combinations. ⁣
⁣
After a few attempts at making this #GoTcocktail something hit me: it was getting too complicated. The drink needed to be deconstructed down to it's core parts (SPOILER ALERT! A lot like the show itself and what S8, E3 did in particular). So I homed in on the core ingredients that I wanted for a Jorah themed julep: ⁣
@buffalotrace Bourbon: 2.0oz⁣
@deathandcompany Demerara gum syrup: 0.25oz ⁣
✓House Mint Gum Syrup: 1.25oz⁣
@newhollandbrew #DragonsMilkWhiteStout: Topper (~0.25oz - 0.50oz) ⁣

The next thing that came to mind was that, like many of the GoT characters, Jorah had a lot of adventures that took him to a lot of different places. To allow for a more personalized #cocktail experience and for some of the more complex versions of the drink to be reconstructed, I offered up some optional modifiers that worked well in isolation, but not necessary all together or even in various combinations. It's sort of a take on @deathandcompany's Multiple Choice idea. ⁣
1️⃣ .50oz Black Rum⁣
2️⃣ .50oz Smokey Scotch⁣
3️⃣ .25oz Watermelon Juice⁣
⁣
In the end, it turned out all this work was for a traditionalist who really just wanted to make the original Julep and use pun names for each item at the meal - not a newly imagined version of each item that reflected the theme. Still, it was a fun experiment and fun to play with the #GoT theme.⁣

(c) my Northern Irish wife is ribbing me for not including a garnish in her G&T during Garnish Week (it’s all for the camera) 😂.

Therefore, I’m entering @homebarawards with a tasty garnish and celebrating #norniron
.
Loads of #GoT is filmed in Northern Ireland...and one of the most dramatic locations is the ‘Dark Hedges’, which is ‘Kingsroad’ in the series. The road is public & you can easily drive down it...if you can avoid the coaches full of GoT fans and the walkers oblivious to ongoing traffic as they walk in their GoT tees snapping pics amid the trees.

This drink uses three trees in its ingredients: elderflower, lime & birch...and the edible garnish mimics the iconic road...
The garnish of this #margarita  variation is poppy seeds and fresh elderflower, both flavours included in the drink.

• 50ml @uwa_tequila blanco #tequila (from Scotland - keeping the Celtic theme)
• 25ml @stgermainuk elderflower liqueur
• 25ml lime juice
• 10ml @sibberi birch water
• 1/2 pinch salt
• 1tsp Poppy seeds
• 1 egg white
👉 chill all ingredients (because we’re using sap and don’t want extra water to dilute the drink: chilling first so we don’t get water from the ice - muddle the tequila with poppy seeds, add all other ingredients and dry shake. Double strain then carefully form your GoT scene using elderflower sprigs and poppy seeds.

NOSE: Notes of Blueberry, Peat and Smoke

PALATE: Immediate notes of umeshu followed by blueberry along with peat and citrus fruit.

FINISH: More blueberry that goes into peat and then even lingers longer into funk.

GARNISH: Basil Leaf

Blueberry Syrup 
Ingredients
1 1⁄2 Cups of Blueberries
1⁄4 Cup of White Granulated Sugar 
1⁄2 tsp of Lemon Juice

Directions
Combine all ingredients into a saucepan over medium heat bringing it to a boil. Muddle the blueberries and stir the compote consistently. Once it is at a boil quickly remove from the heat and let it cool to room temperature. Then strain it through a cheese cloth and/or fine mesh strainer.
Keep in sterilized glass container for 1 week.

To celebrate the end of the epic television series this May the @homebarawards challenge is to create a #gameofthrones themed cocktail. Here is my entry 
I set myself the task of creating the perfect drink for the Queen of Thorns, Lady Olenna Redwyn of House Tyrell. What better cocktail for a Southern Belle than a variation on a classic Mint Julep? Honouring her house with the golden rose sigil being represented with Four Roses Small batch bourbon and a rose liqueur and adding her favourite figs (I did not go all the way to Volantis for them) I found the combination of rose and figs delightful compliments to the classic frosted drink. The Lillet Blanc rounded out the floral elements of the Bitters and liqueur and the dash of supasawa was just enough to make a positive difference.

Highgarden Julep 
50ml fig infused #fourrosessmallbatch Bourbon
20ml #lilletblanc 
20ml #briottet liqueur Di rose
10ml simple syrup
2 dashes #bittertruth Blossom Bitters
1 dash #supasawa acid soloution 
2 mint leaves

Add all ingredients to a shaker. Shake briefly with three large cubes of ice and double strain into a crushed ice filled julep cup wrapped in the thorns of a golden rose to represent the Tyrell house sigil. Garnish with a crown of fresh fig and some fresh mint leaves.

  • Happy #ThirstyThursday guys! You could say this qualifies for a #WineWednesday post too as I’m featuring another great Sherry from @Xecowines
.
I’ve been using their crisp dry Fino since last year so it’s great to finally play with the Amontillado Sherry also affectionately known as the Monti! I did go very fancy with it for the drink I made for Bourbon Legend Eddie Russell (Wild Turkey Master Distiller) - see last Sunday’s post. So today I wanted try one of their signature serves perfect for lovely weather we’ve had in the UK
.
The Monti is luscious to drink, it’s basically an aged Fino which results in a nutty taste profile and if you swipe through the pics you’ll see the resulting gorgeous colour
.
There’s great complexity too:
.
👃🏼On the nose - sweet notes almost apricot / almond / stone fruit to my hayfevered nose!
.
👅To taste it’s still bone dry like the Fino with tones of vanilla, burnt papaya, a touch of caramelised lime
.
🏁Finish - ending in lingering hazelnutty and cinnamon spices, so lingering I had to have some cheese with it!
.
As I said this is yummily complex, maybe if I tried it again tomorrow it would reveal new taste sensations and certainly you might describe it differently too, but it provides a great canvas to mix with or try as this summer serve:

MONTI COBBLER 
50ml #XecoWines Amontillado #Sherry
25ml Fresh lime juice
15ml Sugar syrup
Muddled Strawberries & Raspberries & Mint
Garnish: more fruit & mint 
Glassware: #ChefEtSommelier
.
Muddle Fruit in a shaker, then add 4-5 mint leaves and gently muddle as well, add the rest of ingredients lime juice, sugar syrup, and sherry, stir till combined, then pour into an ice filled tumbler, and stir well. Add a splash of soda or tonic to top
.
As it’s #Garnishweek an event by the amazing Amy @moodymixologist I added plenty of frozen fruits and mint throughout the drink and on top too!
.
So don’t wait another Xeco give this one a go!

Sage Demerara Syrup 
Ingredients
1⁄2 Cup of Sage Leaves
1 Cup of Demerara Sugar 1 Cup of Water

Directions
In a saucepan add all ingredients over medium and bring to a boil stirring consistently. Lower heat and let sage infuse over heat for 2 minutes. Remove from heat and let the sage steep for 15 minutes. Strain through a fine mesh strainer.
Keep in sterilized glass container for 3 weeks.

I have always enjoyed cool summer drinks back home in India where summers are excruciating. One such drink is the Lassi. Made simply with cold curd and milk and sweetened with sugar and flavored with spices, it is a tasty and nutritious summer drink that no Indian is unknown to. When I came across this Pisco cocktail with lassi, I just couldn’t stop myself but make one. Pisco adds a subtle maltiness to the lassi flavored with coconut and cardamom, and vanilla goes beautifully with anything milky and balances the citrus. This months @homebarawards contest is all about Game of Thrones. My goal was to make a drink that started off amazing before turning mediocre and just ending terribly.

Now first let me say that with one exception I was pretty content with how everything ended but in my opinion the last season was sloppy, lazy, and just awful storytelling.

I think the perfect cocktail is an old fashioned and I'm particular to the bitter combination below. I wanted to take that and over time turn it in to something hard to swallow. I did that by sticking a huge block of frozen citric acid in it! Actually it's just a block of water that I added a bunch of drops of citric acid solution to.

2 oz bourbon
1/4 oz demerara gum syrup
2 dashes Angostura bitters
1 dash Bittermens Xocolatl Mole bitters
Pour over a block of citric ice
Garnish with a twist...or not if you are too lazy to

This starts off great. The first few sips taste just like an old fashioned should. Once the ice starts to melt a bit the drink seems to lose the effect of the bitters which starts to bring everything out of balance. It's not terrible but you can tell something isn't quite right. Kinda like season 7.

Once you start drinking some more and the ice is above the liquid it starts to melt faster. Eventually you start to get a harsh after taste in your mouth. This causes you to take smaller sips and drink it slower because quite frankly at this point it just isn't good at all. This only makes each subsequent sip taste even worse.

Finally you decide to just finish it off. You have faith that because it was so good to begin with all of that middle stuff must have just been there to set up for an amazing finish. You are wrong. The last sip makes you wonder why you even drink at all.

With the release of detective pikachu in theatres and my nostalgia peaking, I thought I would do a Pokémon inspired series of cocktails “Blastoise” 1.5oz light rum, 0.5oz quality blue curaçao, 1.5oz roasted coconut juice (richer taste) or good quality coconut water (refreshing taste), dash pandan leaf extract, 0.5oz fresh lime juice, 1oz rambutan syrup (from can) and a few rambutan pieces, shaken and poured into glass. Coconut shell spiked with two stainless steel straws as garnish.

Tastes of island adventure, and exotic fruit; a thirst quencher. The idea was to match this heavy mama of a water type Pokémon with a cocktail that was conceptually sound and tasted great!

With the release of detective pikachu in theatres and my nostalgia peaking, I thought I would do a Pokémon inspired series of cocktails “Charizard” 0.25oz grenadine syrup and a touch of highly peated scotch mix in glass, 2oz blended scotch, 1.5oz fresh squeezed orange juice, dash of cayenne pepper, shaken, strained and gently poured over barspoon atop peated grenadine base. Orange peel “bowl” with chilli spiked through, filled with barrel proof whisky and lit on fire as garnish. (You can’t tell in the photo, but there was a blue/nearly invisible flame on the entire garnish. The chilli pepper lit from that and I could only capture the small orange flame on it 
Tastes of fire and ash, heat and sweet, a strong presence but tamed with the fruit flavour. The idea was to match this legendary and powerful fire type Pokémon with a cocktail that was conceptually sound and tasted great! Literally lit 🔥

🍷The Grand Leopold, a Byrrh (pronounced "beer") cocktail. It's a little tart and fruity, but boozy for a shaken drink. I found this recipe (created by axleoke) in the September issue of Imbibe. I suppose that may make it a "fall drink," but it's not a bad segue between winter and spring. It did quite nicely for a lazy evening at home while it was a brisk 50° here in Augusta.

Recipe:
- 1 1/2 oz cognac
- 3/4 oz Byrrh
- 1/4 oz Curacao
- 1/4 oz lemon juice
- 1 dash Peychauds bitters

Add everything to a shaker with ice. Shake and strain into a cocktail glass. Express a lemon twist and discard. No garnish.

I've been exploring Byrrh lately. I stumbled across a bottle while wandering around a liquor store while traveling, as you do. No? Maybe I'm the only one... I love aimlessly walking around a liquor store in a different city to see if there is anything new to me or exciting.

Anyway, I'm really into this Byrrh stuff lately. I included it in my #homebarawards entry for March and have been pouring it into several other concoctions, including this one. I'm still trying new recipes with it and seeing what works and what doesn't. I love the slightly bitter and very juicy flavor it adds. I already bought myself a backup bottle, so be on the lookout for more Byrrh drinks!

👌🦢👯On Pointe. A deliciously boozy, sweet, complex, juicy, and slightly bitter cocktail with a whisper of funk and smoke. This is my last minute entry to this month's #homebarawards.

After all, this month's theme was all equal parts. How could I resist? I tried quite a few variations on this one before I finally decided that it hit the mark. I got 6 equal parts. Not quite at creativedrunk 's level with his legendary 8 Amaro Sazerac (made with all equal parts), but he is a professional. I'm just some dude in Augusta with way too much booze in his house.🤷‍♂️😂 .
Recipe:
- 1/2 oz Byrrh
- 1/2 oz Punt E Mes
- 1/2 oz Carpano Antica
- 1/2 oz Amaro Nonino
- 1/2 oz Black Grouse
- 1/2 oz Hamilton Jamaican Gold rum
- 8 drops Bittermens Orange Citrate

Add everything to a mixing glass with ice. Stir and strain into a chilled glass. No garnish.

I really tried to figure out a garnish for this one that would add to the drinker's experience, but to no avail. Rather than post it with some non-functional garnish that just looks cool, I decided to forego one altogether. I can't remember where I first read/heard this, but it has stuck with me: Non-Functional Garnishes are No F*cking Good. So my lovely wife graciously dusted off her old pointe shoes to add some scenery to an otherwise simple-looking, but definitely not simple drink.

    👌🦢👯On Pointe. A deliciously boozy, sweet, complex, juicy, and slightly bitter cocktail with a whisper of funk and smoke. This is my last minute entry to this month's #homebarawards .

    After all, this month's theme was all equal parts. How could I resist? I tried quite a few variations on this one before I finally decided that it hit the mark. I got 6 equal parts. Not quite at creativedrunk 's level with his legendary 8 Amaro Sazerac (made with all equal parts), but he is a professional. I'm just some dude in Augusta with way too much booze in his house.🤷‍♂️😂 .
    Recipe:
    - 1/2 oz Byrrh
    - 1/2 oz Punt E Mes
    - 1/2 oz Carpano Antica
    - 1/2 oz Amaro Nonino
    - 1/2 oz Black Grouse
    - 1/2 oz Hamilton Jamaican Gold rum
    - 8 drops Bittermens Orange Citrate

    Add everything to a mixing glass with ice. Stir and strain into a chilled glass. No garnish.

    I really tried to figure out a garnish for this one that would add to the drinker's experience, but to no avail. Rather than post it with some non-functional garnish that just looks cool, I decided to forego one altogether. I can't remember where I first read/heard this, but it has stuck with me: Non-Functional Garnishes are No F*cking Good. So my lovely wife graciously dusted off her old pointe shoes to add some scenery to an otherwise simple-looking, but definitely not simple drink.

    It's been a minute since my last post. Sometimes life, work, and fun get in the way of our hobbies. After a work trip, some house work that we have been putting off for too long, and planning, prepping and baking for, hosting, and bartending a kick-ass birthday brunch for my wife, I'm happy to say that I'll be posting regularly again!
