    INGREDIENTS

  • Oil-free beetroot hummus by @lazycatkitchen. Recipe:
2 cups of cooked chickpeas (1 cup of dry)
2 medium beetroots
1 garlic clove, pressed
½ tsp of fine sea salt, adjust to taste
2 tsp of ground cumin
2 tbsp tahini
Juice of 1 small lemon
approx. ½ cup of water
a few grinds of fresh pepper
1-2 tbsp extra virgin olive oil to serve (optional)
sesame seeds to serve (optional)
Set the oven to 200° C
Wash the beetroots and wrap each one in a piece of kitchen foil (adding a tablespoon of water to each packet). Put into a hot oven and bake for 45 – 60 minutes (until the beetroot is soft enough to pierce with a knife). Once baked, set the beetroots aside until they are cool enough to handle. Keep the beet juice that gathered at the bottom of each packet – it will come in useful in step 4.
Peel the skin off the beetroots with your fingers and chop them into slices.
Place chickpeas, slices of roasted beetroot, reserved beetroot juice, minced garlic, tahini, lemon juice, cumin, salt and pepper into a food processor.
Process until smooth. If the mixture is too dry, drizzle a bit of water into it – be careful not to make it too watery. If you prefer your hummus to be smoother, transfer the mixture into a blender and process some more. Unfortunately, the mixture tends to get stuck in a blender (due to a blender’s construction and thickness of hummus) so making it this way is more work and I’m not entirely sure it is worth the extra effort. Another thing that results in much smoother hummus is peeling chickpeas after cooking. It is an arduous task, however, so don’t do it unless you are a smooth hummus fanatic.
Adjust seasoning to taste. Serve with fresh bread and as a part of a mezze selection.

  • Spicy Tahini Hummus with veggies and pickled cabbage. There was pita on the side as well. The hummus was topped with chili oil, 🌶 paprika and rock salt. So good! And snackable.

Recipe: 🥘 
1 1/2 cups Chickpeas or Garbanzo Beans (soaked and cooked or rinsed and drained from a can)
1/2 of a cup Tahini (Sesame paste)
1/8 of a cup Dijon Mustard
2 tablespoons Lemon Juice
1/2 teaspoon Salt
1/2 cup of Water (or more if needed)
1 tablespoon Pure Maple Syrup (can be omitted)
Small handful Fresh Parsley + more for garnish
Olive Oil (optional)
Paprika (optional)

Method: 🧂 
Place all ingredients except olive oil, paprika, and extra parsley in a food processor. Pulse until hummus is smooth, adding more water if needed.
Add hummus to a large bowl and drizzle with a tablespoon or two of olive oil, sprinkle with paprika, and garnish with fresh chopped parsley.

  • Humus - am facut din nou, dar de data asta am mai pozat pasii pe parcurs, sa pot sa scriu si reteta aici. 🍋🥄
➡️Pentru humus e nevoie si de o pasta din seminte de susan (tahini), pentru care am incalzit semintele de susan in tigaie cam 3-4 min, invartind continuu, sa nu se arda (doar le incalzim putin, fara sa isi schimbe culoarea). Le-am lasat la racit, dupa care le-am maruntit in rasnita electrica, am mutat pasta obtinuta in alt vas, am adaugat 50-70 ml ulei masline si un praf de sare si am mixat cu blenderul de mana (pana se face o pasta omogena). That s it ☺️
➡️Pe langa tahini (3 linguri), mai trebuie 5 lg de ulei masline, 1 praf sare, 4 catei usturoi, zeama de la o jumatate de lamaie, si cam atat.🍽️
➡️Boabele de naut (250 g) le-am lasat peste noapte la inmuiat, dupa care le am fiert 30-40 min (apa in care fierb trebuie pastrata) si le am lasat sa se raceasca. Cojitele lor trebuie indepartate (dureaza mai mult etapa asta), apoi intr un bol le omogenizam cu mixerul de mana impreuna cu celelalte ingrediente, adaugand putin cate putin din apa in care au fiert, pana obtinem consistenta dorita.
Ps: tahini se poate pastra la frigider intr un borcan cu capac chiar si 2 luni.
E a doua oara cand fac reteta asta si chiar merita (vazand ca si celorlalti le place, nu doar mie☺️)

  • These baked hummus pinwheels are incredibly yummy. Eating hummus in a warm appetizer is a little different - but I think I might like it more! It gives the dip a whole new element of flavor. Combine that with spinach and sun dried tomatoes and you have a home run kind of appetizer. You've got to try it!⁣

  • If there was ONE spice blend I could convince you to add to your pantry, it would be za'atar seasoning. I know it sounds fancy but I promise you can find it in the spice section of most grocery stores!

This blend is so good sprinkled on roasted vegetables, mixed into hummus, or whisked into a vinaigrette for an easy salad dressing! To blend the chickpea and tahini, we used our One Stop Chop Manual Food Processor by @oxouk. The sharp blades were brilliant at blending the chickpeas smoothly and the handle was very easy to use. It doesn't take up much room but allows you to make so many basic recipes, such as guacamole (another dip that has to be homemade) and pesto. Manual food processors have one up on electric hand blenders as it is much easier to control the texture of the final product. With electric blenders, you can easily end up over blending if what you wanted was a coarse texture.

Lui che fin da subito mi ha appoggiata e ha capito l'importanza di mangiare vegetale per la salute, ma ha sempre messo le mani avanti dicendo "la vita è una, io mangio sano ok, ma qualche eccezione per piacere del palato dovrò farla" (aggiungo anche x abitudine di come è/siamo cresciuti). Ma infatti legandomi a questo discorso a tutte voi che mi seguite e NON siete vegane, voglio dirvi che io NON vi voglio fare diventare vegane (l'ho detto più volte, quando usciamo capitano le eccezioni anche a noi), ma ci tengo tanto tanto tanto a non farvi fare l'errore che ho fatto io negli anni passati, e che fanno in tante, tutti i giorni la carne, vi prego, non fatelo! Mio suocero ne è l'esempio, con il colesterolo molto oltre il limite. È dannoso per la vostra salute. Non voglio puntare troppo sull'amore verso gli animali o sui benefici per il pianeta, perché so che molta gente è egoista, lo dico proprio per voi! Introducete piano piano ricette naturali alle vostre giornate, io ce la metto tutta (e quando ricevo complimenti da marito o vedo i figli che divorano il piatto, è la soddisfazione più grande) per farvi scoprire e conoscere RICETTE FACILI con legumi, verdure, cereali (ricordate di variarli), frutta fresca e secca... Voi prendete spunto e se vi va condividetemi con le vostre amiche mamme!

  • 🌽🥕SALTEADOS DE GARBANZOS Y VEGETALES🥕🌽 Aquí les traigo una receta súper fácil y deliciosa!
✨A mi me encantan los garbanzos,ya que puedes hacer muchas recetas con el ellos como el falafel y hummus (recetas post anteriores),( y lo bueno de esta receta es que puedes hacer gran cantidad y dejarla en la nevera/refrigerador para toda la semana😉, ¡y así no tienes excusas para comer vegetales!

🥦Ingredientes: para dos porciones
🥦1/4 de taza de garbanzos cocidos 🥦1/4 de cebolla 🥦1/8 de pimentón
🥦Un pedacito de apio
🥦1 champiñón 🥦4-5 tiras de vainitas/porotos verdes
🥦1/3 de taza de zanahoria rallada 🥕
🥦1/3 de taza de maíz🌽 🥦1/3 de taza de vegetales congelados ( yo utilizó ensalada primavera🥕🌽, foto en posts anteriores)
🥦Sal y pimienta
🥦Especias a tu gusto (yo utilicé cilantro, ajo en polvo, paprika y cúrcuma)
👁Tip: Puedes colocarles los vegetales que más te gusten, no tienen que ser necesariamente los que utilicé yo ✨Procedimiento:
1️⃣Picar todos los vegetales en tiras
2️⃣En un sartén caliente a temperatura mínima colocar 1 C de aceite de oliva🥄 ( o el que prefieras) y agregar la cebolla con el pimentón, revolver 
3️⃣Cuando la cebolla esté medio transparente, agregar el resto de los vegetales con la sal, pimienta y especias, revolver 
4️⃣Esperar a que se cocinen los vegetales y listo ✅ ✨Lo puedes comer como tú quieras, con ensalada🥗, como acompañamiento🍛, con pan 🍞o Arepa (receta en post anteriores), todo queda a tu creatividad!
✨👉🏻Yo lo acompañe de lechuga, pasta de calabacín/zucchini( receta post anteriores) y calabacín/zucchini al horno con sal y pimienta🥗, otra opción fue en el desayuno con lechuga y pan sin gluten🍞 con hummus (receta en post anteriores) y zanahoria 🥕

  • “Make in a bag” day 2! Did you know you can make hummus in a bag? It’s super easy and the kids LOVE it! Just pop some garbanzo beans (washed and drained) in a ziplock bag with a squeeze of lemon juice, some olive oil, salt and pepper. Seal and have them smash it up! You can even add different herbs or seasonings like everything but the bagel seasoning or some premade pesto. .

  • Vegan snaccident (noun): Eating a whole tub of hummus by mistake. And still wanting more. 🤷‍♀️ Any vegan knows hummus is life, right? I’ve been trying to make it more myself recently as it’s so easy and so cheap to do so too! A tin of chickpeas can be less than 50p and you can customise with whatever ingredients you have in the fridge or cupboard 🌱 
Check out my stories for an easy step-by-step go make at home. All you need is a food processor, chickpeas and whatever flavour you wish to add. If you make it, don’t forget to share using #CookingItVegan 💚

  • This hummus is un-beetable! 😋 We love finding ways to incorporate veggies into our recipes and this one does the trick (and yes, this amazing colour is just from the beet itself!) 🌸⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
RECIPE:⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 small beet ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 15-ounce can chickpeas ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp lemon zest⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 lemon juice ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 Tbsp tahini ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 garlic cloves⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Roast beet at 400F until soft (quartered and wrapped in foil with a bit of avocado oil) once cooled blend with food processor into small bits ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Add all remaining ingredients and blend ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Option to add/drizzle olive oil for a creamier hummus (we typically opt out of this and don’t notice a huge difference!)
