  • Chocolate-blood orange tart by @esra.tok.vegan 🍊🍫 Ingredients for the crust - 80 g (2/3 cup) mixed nuts - 70 g (1/2 cup) oatflour
- 3 tbsp coconut sugar - 2 tbsp cacao powder - 2 tbsp coconut oil - 2 tbsp non-dairy milk
- 1/2 tsp baking powder - 1 blood orange (zest) 
Ingredients for the filling - 100 g dark chocolate - 150 ml (2/3 cup) soy cream - 2 tbsp maple syrup
- 1 blood orange (juice)

Place nuts in a food processor and pulse until ground. Add other ingredients and blend until mixture comes together. Press the crust into a pie tin and bake for 15-18 minutes at 180 C. 
For the filling place chopped chocolate in a bowl
and add heated cream. After 2 minutes mix carefully until all the chocolate is melted. Add maple syrup, orange juice, mix well and then pour over the cooled crust. Add some peeled and sliced blood oranges on top. Chill in the refrigerator for 2-3 hours.

Make sure you seal all along the edges and get any air out. Heat up cooking oil in a wok or frying pan and deep fry the wontons until golden brown and crispy. . .

Add Tom yum paste, mushrooms and continue to cook for a few minutes until mushrooms are cooked. Turn off the heat, add in sugar, lime juice, and salt and pepper to taste. .
♥️ To serve 
Pour the Tom Yum soup over the cooked noodles and topped with fried wontons and some coriander. Serve immediately.

Makes 28 cookies 
Dry
80g almond flour 
50g oat flour, GF certified if needed 
1/4 tsp baking soda
1/4 tsp pink salt 
1/2 tsp lemon zest

Wet
100g | 1/2 cup homemade almond butter
100g | 4 tbsp pure maple syrup
1/2 tsp vanilla paste
3 tbsp white sesame seeds, to decorate 
_
Vegan lemon curd
1,5 tbsp cornstarch
120ml (1/2 cup) non-dairy milk
60ml (1/4 cup) fresh lemon juice (about 2 lemons)
50g (2 tbsp) maple syrup
2 tsp organic lemon zest
1/8 teaspoon turmeric 
4 tbsp maple syrup 
1/4 tsp pink salt

Instructions
In a small bowl, combine the dry ingredients.
In another bowl, whisk together all the wet ingredients until well combined. 
Combine with the dry ingredients.

Shape about half tablespoon of the cookie dough into a ball and roll into sesame seeds. Repeat with all of the dough.
Place the balls on a lined baking sheet and slightly press the to flatten.
Press a teaspoon in the middle of the cookies to make the dent.
Refrigerate for about 15 minutes.
Pre-heat the oven to 180 ºC (355 ºF). Bake the cookies for about 8-9 minutes.
When you pull them out of the oven, immediately press a teaspoon into the cookies.

Allow the cookies to cool on the baking sheet for about 10 minutes, then transfer to a cooling rack.
The cookies keep well in an airtight container. 
I recommend filling them right before serving to avoid them becoming mushy.

For the vegan lemon curd
Add all the ingredients to a small saucepan and whisk well to combine.
Heat over medium heat whisking continuously until the curd starts to thicken. 
Remove from heat and let cool down to room temperature, stirring regularly. Cover with plastic wrap (in contact with the surface) and place in the refrigerator for one hour. Give it a good stir before using. Use a pastry bag to fill the cookies, right before serving.

Recipe:
- 2 glasses of millet flakes (toasted- bought, crunchy without oils)
-1/2 glass of white buckwheat (optional)
- 1 glass of coconut flakes - 1/2 glass of blanched almonds
- 1/2 glass of macadamia nuts
- 3-4 spoons of maple syrup
- 2 spoons of coconut oil
- juice of 1/2 lemon/lime and a little of orange juice - 2 spoons of pink pitaya
-1 spoon of Blue Spirulina 💫
Chop nuts and divide in half. Pull out 2 pans and throw the ingredients in half: Combine the maple syrup with oil, juice and pitaya and the second Blue Spirulina. Gently heat and combine all ingredients - add flakes and nuts and mix. Heat for a few minutes💥💥💥 💫

Turned out great together with chai spices ☺ And it has a suprise, a hint of one ingredient - coffee! 🎉 I topped my bowl with turkish yoghurt, granola🥜, cacao nibs🍫, coconut shreds🥥, drizzle of maple syrup🍁 and coffee milk☕🥛 😍 Try it yourself! ☕BREAKFAST CHAI LATTE BOWL☕ (1 serving)

1 serving cooked quinoa🍚 
1/2 cup gluten free oats🌾 
1 tbsp chopped almonds🥜 ~ 1 tbsp vegan instant chai 
150 ml almond milk🥛 
1 tbsp instant coffee powder☕ 
1. Stir to combine quinoa, oats, almonds and instant chai in a bowl. Set aside. 
2. Warm up the almond milk in a saucepan and then add the coffee. Stir until the coffee has dissolved. 
3. Pour almost everything into the bowl, but save a little coffee milk for serving later. Combine and cover and let sit overnight in the fridge.
4. Serve in a bowl and top with a dollop of yoghurt and pour the saved coffee milk over. Top with granola, cacao nibs and coconut shreds. Drizzle with syrup. Let's eat! .
