| PALEO SPARE RIBS | 🐖 Chinese Style Pork Spare Ribs made in your Instant Pot! I have been trying to write out a plan for my #whole30 that I am starting on July 1st and I made myself a note to test out this recipe without the arrowroot powder or maple syrup because I thought I couldn't have that. Buttttttt, yesterday I found out that I CAN have arrowroot powder while on the Whole 30. 😆 I cannot express my excitement. So..now I need to figure out how to get that slightly sweet taste when I make this and I know exactly what I am going to try first. Applesauce! People use applesauce as a natural sweetener in desserts all the time and I love it! So..wish me luck! For the time being..here is my paleo version of these ribs!
They are so incredibly tender and have an amazing caramelized top. It takes 25 minutes of high pressure, followed by 6-7 minutes under a broiler.

Instant Pot Ingredients:
1 rack @hatfieldmeats pork spare ribs
Water to cover
6-8 green onions, cut in 2 inch pieces
1/2 tsp salt
6 cloves garlic, smashed
1.5 tbsp apple cider vinegar
1/4 tsp black pepper
1 tbsp sliced fresh ginger
1/4 cup tamari OR (1/4 cup coconut aminos plus 1/4 tsp salt)
1 tsp Apple Cider Vinegar
*1.5 tbsp maple syrup*
1/4 tsp sriracha
1/4 tsp minced ginger
1/2 tbsp arrowroot powder
1. Add all of the instant pot ingredients to the instant pot. Put in enough water to cover the ribs, but do not exceed the "max fill line". Cook on high pressure 25 minutes.
2. When the ribs have about 5 minutes left in the instant pot, make the sauce.
Add all ingredients except for the arrowroot powder to a pan. Cook on low until bubbly. Slowly add in arrowroot powder and stir. Turn heat off once it has thickened
3. Once the ribs are done cooking turn off machine and unplug. Do a quick release. Use tongs to remove the rack of ribs and place them, meat side up, on a baking sheet lined with aluminum foil. Add sauce to the top of the ribs, put under broiler for 7 minutes. Let sit for a few minutes and cut, or use kitchen shears!

Congee is my go-to food when I’m sick, and right now I’m struck down HARD with shingles. 😭 But I only had 1/3 of a cup of rice left, so I decided to throw some quinoa into the #InstantPot along with the rice to fill it out. It came out wonderfully!
1/3 cup white rice
2/3 cup quinoa
3 cups @pacificfoods mushroom broth
4 cups water
3 cloves of garlic, diced
Generous amount of ginger, turmeric, and ichimi togarashi chilli powder
#instantpot adventure number unknown. 😆. Frozen bone-in pork chops in less than an hour! ~12 min to pressurize, 23 min cooking, 10 min natural release. I just rubbed them in olive oil and seasoned with salt, pepper, and a dash of garlic powder. Not a pork eater myself but hopefully hubby will approve. 🤞. Instant Pot Chipotle Chicken & Cauliflower Rice Bowls
Makes 4 servings
Per serving: 1 Leaner, 1 Healthy Fat, 3 Greens, 3 Condiments
Total Time: 30 minutes
1, 14.5-oz. can fire-roasted diced tomatoes
1/3 cup salsa
1 canned chipotle pepper in adobo sauce + 1 tsp sauce
1 tsp cumin
½ tsp dried oregano
¼ tsp salt
1½ lbs boneless skinless chicken breasts
4 cups frozen riced cauliflower
1 cup reduced-fat shredded Mexican cheese blend
½ medium-sized avocado, sliced
1. Combine first six ingredients in a blender, and blend until smooth.
2. Place chicken in Instant Pot, and pour sauce over top. Secure lid and close pressure valve. Set to 20 minutes at high pressure. Allow pressure to release naturally before opening. Remove chicken and shred, and then toss back in sauce.
3. Meanwhile, microwave riced cauliflower according to package directions.
4. To serve: Divide riced cauliflower, chicken, cheese, and avocado evenly amongst four bowls.
Now that my 2 1/2 year old is sick😢, I’m reminded of the whole ‘moms don’t get to be sick’ thing. I’ve still been very under the weather today but with a sick toddler and a VERY mobile swiffer(also known as my 7 month old) I knew I had to sweep and mop the floors and make a dinner that all of us could eat. I made chicken soup in the #instantpot with my favourite soup base #notanad and the one bowl without rice or noodles is only 1 sp! It was delicious especially considering I haven’t had any solid food for almost 48hrs😩. #ww#wwfreestylerecipes#wwaccountability#wwlifestyle

You don’t have to know all about the components of the lipid panel to look at these numbers and see the huge improvement. (HDL is actually the good cholesterol and we WANT it to be high)
As a medical professional, it is even more exciting for me to get screen shots of lab values like this than physical transformations...Because you can be skinny on the outside and still be terribly unhealthy on the inside. A month of daily Shakeology later, this client was in a size 10 from a size 12, and ALL of her lipids were improved dramatically.
Now let me tell you why. It’s not magic. It’s not a diet drink. It’s WHOLE FOOD NUTRITION. Whole foods that we can’t get in our daily diet here in the US in conventional ways. FOOD. IS. MEDICINE. Proper nutrition can HEAL so many medical problems. This is just ONE example of how our bodies can respond to the perfect vitamin/nutrient/superfood balance.
Not to mention, all of the cholesterol meds come at a cost AND with potentially harmful side effects... Wouldn’t you rather be FIXED rather than take 2-3 pills to put a bandaid on one issue?
Changes like this prevent heart attacks, strokes, and could literally save your life. Isn’t it worth taking a look at your nutrition and entertaining the idea of healing your body naturally? Even if it takes a little effort?
