I’m lucky because when I’m working towards my goals (like having abs without needing to pull my skin up to reveal them 😝) being able to see them coming through is a huge motivator for me. But the real MVP’s in my eyes are the people who have made huge (& sustainable) transformations in the face of what might look like an impossible goal. Those guys are the real deal because they have NAILED the ability to break down a big goal into smaller ones to stay disciplined (I didn’t say motivated!!) when they can’t even visualise their goal. I’m so impressed and proud of you guys - and you’re mentally stronger and tougher than I’ll ever be ❤️ Just because someone isn’t ‘shredded’ or a typical vision of ‘fit’ doesn’t give anyone the right to assume they haven’t been putting in the work. I hear too many gym ‘experts’ talking **** about others in the gym not doing things optimally or perfectly. Leave them alone!! Everyone is learning.

Cookie Dough Bites by @thevegansix 💛 Recipe:⠀
3/4 cup raw cashews⠀
1/4 cup raw walnuts⠀
1/2 cup oat flour⠀
1 cup soft pitted medjool dates⠀
1 tsp vanilla extract ⠀
1/2 cup non dairy chocolate chips⠀
Add cashews and walnuts to the food processor and process until and they form a fine flour. Add flour, dates, and vanilla and process again until dough forms. Fold in chocolate chips and roll into balls. Store in the fridge until ready to eat. ⠀

Vegan Baked Donuts w/ Pink Pitaya Glaze 🍩💗
So light and fluffy! We love how cute they turned out and how easy they were to make by @dash_of_delightful .
For the Donuts:
-1 cup flour, loosely packed
-1/3 cup sugar
-1 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp salt
-2 tbsp coconut oil, melted
-1 flax egg (1tbsp ground flaxseed + 3tbsp water-mix separately and set aside)
-1/3 cup non dairy milk
-2 tbsp coconut milk creamer
-1/2 tbsp vanilla extract
For the Glaze:
-1/2 cup powdered sugar
-1/2 tsp vanilla extract
-1/8-1/4 tsp @unicornsuperfoods pink pitaya powder
-1-2 tbsp non dairy milk or coconut creamer
Preheat oven to 350° and prepare your donut pan (I used a 6 donut @nordicwareusa pan). In a large bowl whisk together all of the dry ingredients and set aside. In small bowl whisk together all of the wet ingredients until fully blended. Add wet ingredients to dry ingredients and gently fold. Be careful not to over-mix or you will end up with very dense donuts. Fill donut cavities about 3/4 of the way full**. Place in the oven and bake for 12-14 minutes. Remove from oven and place donuts on wire rack to cool. (You will want the donuts to be slightly warm when glazing). **I think its easier to use a piping bag or a ziplock bag to pipe batter into the pan. It gives a more consistent shape and you won’t end up with lumpy donuts. .
For the glaze:
In small bowl, whisk together all of the glaze ingredients except for the milk/creamer. Add milk/creamer in small amounts and stir until the desired consistency is reached.
Take the warm donuts and dip into the glaze. Return to wire rack and allow to set for about 30-45 minutes at room temperature before serving. (Be sure too add sprinkles immediately after glazing). Enjoy! 🥰

Babes, rice crispy treats are an absolute childhood favourite of mine! Here is a QUICK, NO BAKE & HEALTHY version, packed with healthy fats to keep you satisfied! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
🥣INGREDIENTS ( makes 16 mini squares)
Serving 1 rice crispy square: | Calories: 73| Carbohydrates 9,3g | Protein: 1,9g | Fat: 3,8g
1/2 cup nut butter
1/3 cup honey
2 cups puffed rice ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

This post goes out to my long lost (but not forgotten) love: overnight oats. I’ve had a long love affair with smoothies, but at last the oats and i are back together & better than ever. This is a messy breakfast, no aesthetic marble board ova here! Perfect for taking on the go to class, eating in the car while driving (safely pls), or just eating at home because they are just so good. I do my oats a lil different, so make sure you save & try them for yourself! #dEATS 👉🏻 1/2 cup rolled oats, 1/2 cup vanilla almond milk, 2 tbs of maple syrup, 1 scoop of vanilla protein powder + sprinkle of cinnamon & stir. Let sit overnight. In the morning (optional, but 10/10 recommend) heat your jar in the microwave for 1 minute 🔥 Trust me, do it. Then add in peanut butter, granola, coconut flakes, banana slices, and a little more maple syrup. It’s heaven on earth, and i stand by that. Overnight oats are my type of fast food 😋 Happy Thursday!! 💕

✖️RECIPE for Grain Free Peanut Butter Cookie Cups:
1 1/2 cups canned chickpeas
1/2 cup natural peanut butter, or sunflower butter for a nut free option
1/4 cup maple syrup
1 1/2 teaspoons vanilla extract
1/4 cup raw turbinado or coconut sugar
1 1/3 teaspoons baking powder
1/2 cup chopped non dairy dark chocolate ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven to 375 degrees. Oil or line 18 mini muffin tins with paper liners. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add all ingredients except chocolate to a food processor and process until a smooth dough forms. Remove for processor blade and fold chocolate into batter. Divide batter evenly among the mini muffin cups. Bake on middle oven rack 12-15 minutes, or until edges are just beginning to brown. Cool completely before eating! These are even better the next day (if you can wait that long).
Recipe notes: Do not skimp of vanilla extract or you will taste the chickpeas! Also, the sugar is optional, but we love the extra sweetness of the large turbinado sugar crystals bursting in our mouths as we eat warm cookies 🍪

Whole foods love✨
There is nothing I love as much as whole foods that make you feel good on the inside and outside.
On my lunch plate today is a medley of oven roasted and stir fried veggies including asparagus, red bell peppers, broccoli, and eggplants - and a wild caught salmon steak for the healthy fats and protein✨
Two easy freezer waffles for breakfast today 🧇 Sautéed some banana to go on top of one and it’s seriously like dessert! I just warm up a pan, add some cinnamon/sugar and they’re ready in minutes. Made an iced coffee to go with it and I’m set. Don’t have my internship until this afternoon so it’s a slow morning around here. Hope y’all have a great morning 🌞

Today I fell off the wagon.
It’s day 4, and this is me after sleeping in to 11...and then having a 4 hour nap at 2.
I didn’t make my step goal, and I didn’t get my water goal in either...but that’s okay.
Today I just wasn’t feeling it...it was one of those days where I felt down and out and I just wanted to sleep.
And I know working out could have improved my mood and today could have be completely different. But I chose not to.
I could beat myself up about it, but I won’t . Today happened the way it did and it’s over now.
Tomorrow is a new day and I’m gonna keep on going. There is no giving up this time.

Simple easy oat crepes
• 1 cup oat flour
• 1 cup milk of choice • 2 tbsp coconut oil, melted (or any oil)
• 2 tbsp honey or maple
Mix all ingredients in a bowl until combined. Heat a non stick pan on medium heat with some oil. Pour about 1/4 cup of the batter to the pan and let it cook for 3-4 minutes. Flip and fry for additional 1-2 minutes. Serve with filling of choice. Here I am using Greek yogurt with beet powder and honey.

Now I am sitting at a desk for 8 hours a day and then I am sitting in the library for another 5 hours to study. ASIAN STYLE SALMON AND PINEAPPLE FRIED RICE WITH GINGER SOY SAUCE! Happy Tuesday loves. I’m currently sick, but dreaming of this meal using @RightRice’s new Fried Rice Medley! They’re made with RightRice, ancient grains (like quinoa), and veggies, and they taste incredible. These Medleys are available at @WholeFoods and @Amazon now, which is SUPER exciting. All you have to do is boil some water, add the rice and let it sit for 12 minutes! Once it was done I tossed in some chopped avocado, pineapple and red peppers. I also love the new Harvest Pilaf blend, it reminds me of the rice pilaf my mom made when I was a kid. Are you a rice fan? #RiceMadeRighter
Deets: salmon marinated in some coconut aminos and sesame oil and seared on medium high for 2 mins per side. Cucumbers with ginger soy sauce. RightRice fried rice medley tossed with avocado, pineapple and peppers. Sauce: 3 tablespoons water, 1/4 cup coconut aminos, 1/4 cup tamari soy sauce, 1/4 cup raw cane sugar (or coconut sugar), 1/4 cup lime juice, 2 tablespoons minced ginger, 3 cloves garlic minced, Pinch red pepper flakes. Add sugar and water to small sauce pan and bring to a boil, Add all other ingredients and reduce heat to medium, Simmer For about 12-15 minutes until slightly reduced, Remove from heat.
Optional: top with scallions and chopped cilantro.
Well ladies the sweat 6 week challenge is over which means..... chest and tricep day is back!! Oh how I've missed it 😂 It's definitely my favorite muscle combination of the week.
