2 tbsp. extra-virgin olive oil
1/2 onion, finely chopped
4 cloves garlic, minced
1 tsp. ground cumin
1 tsp. chili powder
2 c. shredded chicken
2/3 c. red enchilada sauce
4 tbsp. freshly chopped cilantro, plus more for garnish
2 c. shredded cheddar
2 c. shredded Monterey jack
Sour cream, for serving
Preheat oven to 375° and line two baking sheets with parchment paper. In a medium skillet over medium heat, heat oil. Add onion and cook until slightly soft, 3 minutes. Add garlic and spices and cook until fragrant, 1 to 2 minutes more. Add chicken and enchilada sauce, then bring mixture to a simmer. Stir in cilantro, season with salt, and remove from heat.
Make taquito shells: In a medium bowl, mix together cheeses. Divide mixture into twelve 3 ½" piles on prepared baking sheet. Bake until cheese is melty and slightly golden around the edges, about 10 minutes. Let cool 2 to 4 minutes, then peel shells off parchment. Add a small pile of chicken to each and roll tightly. Repeat until all taquitos are made.
Garnish with cilantro and serve with sour cream, for dipping.

Today's lunch and I am hungry for Pork Chops! Pork Chops, Spinach, Broccoli & Garlic and Onion Gravy made from the juices of the Pork. I have decided to try and eat my big meal at lunch time. That way I can have dinner with my husband before he heads to work.
🥘 Lemon Butter Chicken
4 chicken thighs or breasts (bone-in or boneless)
2 teaspoons smoked paprika
Kosher salt, to taste
Ground black pepper, to taste
1 Tablespoon unsalted butter
2 – 3 cloves garlic, minced
½ cup chicken broth
½ cup heavy cream
¼ cup grated Parmesan cheese
2 cups baby spinach, chopped
Juice of 1 lemon (add the zest if you want extra lemon flavor)
1 Tablespoon chopped fresh thyme or 1 teaspoon dried thyme

- Pan Seared Salmon 🍣 with Creamy Garlic Dijon Sauce!!
4 (6 - 7 oz) skinless salmon fillets
3 tsp olive oil
Salt and freshly ground black pepper
3 garlic cloves, minced (1 Tbsp)
1/2 cup heavy cream
1 1/2 Tbsp dijon mustard (or a little more to taste)
1/2 cup low-sodium chicken broth
1 Tbsp minced fresh dill
Heat a large non-stick skillets over medium-high heat (or use two skillets if you used large 7 - 8 oz fillets like I did so they aren't overcrowded). Add 1 1/2 tsp olive oil to each skillet. Dab both sides of salmon dry with paper towels and season both sides with salt and pepper.
Place salmon in skillet. Let sear until golden brown on bottom, about 4 minutes then flip and continue to cook to desired doneness, about 2 - 3 minutes longer.
Meanwhile, in a liquid measuring cup whisk together with 1 tbsp cream, then mix in enough cream to measure 1/2 cup. Whisk in dijon mustard
Remove salmon from skillet and transfer to a plate, leaving oil in one skillet. Tent salmon with foil.
Add garlic to skillet with oil set over medium heat, saute until just barely golden brown, about 20 - 30 seconds. Pour in chicken broth.
Bring to a simmer then reduce heat to medium-low and let simmer until reduced by about 2/3, about 3 minutes.
Whisk cream mixture once more then pour into skillet. Cook and stir, bringing to a simmer. Let simmer gently, while stirring, for about 30 seconds.
Remove from heat stir in dill, return salmon fillets to pan, spoon sauce over salmon. Serve warm.

-1 large head cauliflower, cut into florets
-1/4 c. finely grated Parmesan
-1 clove garlic, minced
-2 c. shredded mozzarella, divided
-Freshly ground black pepper
-1/2 c. pizza sauce
-1/2 c. pepperoni
-1 tbsp. finely sliced basil
* Preheat oven to 425º and line a baking sheet with parchment. On a box grater or in a food processor, grate cauliflower and transfer to a large bowl. Microwave on high, 8 minutes. Drain thoroughly with paper towels or a cheesecloth until mixture is dry.
* Add egg, ½ cup mozzarella, Parmesan and garlic powder to cauliflower bowl and season with salt and pepper. Mix until combined.
* Form cauliflower into circle shapes on prepared baking sheet and bake until golden, 15 to 20 minutes.
* Spread pizza sauce over half of each round. Sprinkle with mozzarella and top with pepperoni and basil. Fold the cauliflower in half to cover the cheese and pepperoni. Return to oven and bake until the cheese is melted, about 5 more minutes.
