1 lb. medium shrimp, peeled and deveined 
2 tsp. ground cumin 
Juice of 1 lime
2 tbsp. freshly chopped cilantro, plus more for garnish
2 cloves garlic, minced 
3 tbsp. extra-virgin olive oil, divided 
Kosher salt 
Freshly ground black pepper
Romaine lettuce, for serving
1 avocado, thinly sliced 
1/4 c. Sour cream, for serving
In a large bowl, stir together shrimp, cumin, lime juice, cilantro, garlic, and 2 tablespoons oil and season with salt and pepper. Toss until combined, then let marinate in the fridge 10 minutes.
In a large skillet over medium heat, heat remaining tablespoon oil. Add shrimp and marinade cook until pink, 2 minutes per side.
Assemble wraps: Add shrimp and avocado to lettuce, drizzle with sour cream, and garnish with cilantro. -

  • Dinner: @chickfila Cobb Salad with nuggets ordered from @doordash. Heck YAAAAASSS! I’ve seen @ketojourneyintx order this and It’s so dang good. The nuggets do have a bit more carbs than the grilled but they don’t have any funky ingredients and they taste amazing!

  • Bacon Wrapped Jalapeño Poppers! 🥓🌶
Legit some of my favorite snacks EVER! These came out amazing. And I have a few jalapeños left over, so I’ll be making more soon! 💖
What’s your favorite air fryer recipe? 🥰
To make these 6 poppers, I used:
3 jalapeños, halved and deseeded
4oz of cream cheese
2oz of cheddar
1/8tsp Black pepper
1/2tsp Garlic powder
1/2tsp Onion powder
6 strips of bacon
I mixed the room temperature cream cheese, cheddar, and spices in a bowl. Then spooned the mixture into the jalapeño halves. Wrap each popper in a strip of bacon. Cook all 6 in the air fryer for 10 minutes at 390.
Perfect. 🤤

  • I have adopted keto lifestyle more than 4 years ago. I have seen a significant decrease in my appetite during this journey. TV shows a commercial  for the kraft cheese, where a mother gets home from work and asks her kids what they want for dinner. Her little girl says excitedly that she wants a bucket of chicken. That reminds me of my childhood. I could eat a big bucket of chicken all by myself with biscuit & mashed potato and gravy. Now, half a wing is enough for me 😂 I was craving for some chicken so I roasted a tiny game hen. I had its leg and the rest went to my German Shepherd. He devoured it in 10 seconds and looked at me like, “was that it? Where is the rest?” 🙄😂 #ketolifestyle #keto #ketodinner #ketoisthebest

Here’s what you need: ⁠
6 slices zucchini ⁠
4 oz ground beef, divide into 3 portions ⁠
1 tbsp Sharp Cheddar spreadable cheese, divided into 3 ⁠
Heat air fryer at 400F for 4 minutes. Next season your zucchini with salt and pepper and spray with avocado spray. Cook for 2 minutes on each side in the air fryer. Set aside ⁠
For each slider take half a portion of beef, press down, and add 1 tsp of our Sharp .⁠

💖 INSTRUCTION⁠
Cheddar cheese in the middle, take the other half of the portion of beef and seal the burger. Do this for the remaining 2 burgers. ⁠
Cook in skillet for 6 minutes over medium high heat and flip after 3 minutes ⁠
To plate: Zucchini slice on bottom, burger, tiny bit of mustard (or more of our cheese 🤫 we won’t tell 😉) and top with zucchini.⁠

🚨🚨Recipe: Garlic mushrooms:
7 oz mushrooms 200g,
1 garlic clove
1 tbsp olive oil
1/2 onion optional
1-2 tbsp soy sauce or tamari

Vegan Cheese Sauce
1 medium russet potato 4 oz, peeled and cubed
1 small carrot peeled and halved
⅔ cup raw cashews 100g,
1 cup water or more as needed
1 tbsp olive oil or canola oil
1 onion chopped, or sub 2 tsp onion powder
3 cloves garlic minced, or sub 1 tsp garlic powder
4 tbsp nutritional yeast
1 tsp mustard or 2 tsp white miso paste
1 tsp sea salt or to taste
2 tsp lemon juice or white vinegar
To Serve (optional)
½ cup dairy-free cheese shredded
vegan parmesan cheese
fresh herbs

Instructions
Garlic mushrooms:
Clean mushrooms and slice. Finely chop the onion and garlic.
Heat the oil in a large pan and fry the mushrooms in hot olive oil for about 5 minutes on both sides until golden brown.
Add chopped onion and garlic and fry for another 1-2 minutes. Then deglaze with the soy sauce and fry for more 1-2 minutes over low heat.

Cook Pasta & mushrooms
In a large pot of salted water cook the pasta according to package instructions until al dente, adding the mushrooms to the pot in the last 2-3 minutes.
Preheat oven to 355°F (180°C). Vegan Cheese Sauce
Add the potatoes, carrots, cashews and 1 cups of water in a pot. Cook for about 10 minutes, or until soft enough to blend.
Meanwhile, heat the oil in a skillet over medium heat. Add the onion and a pinch of salt. Cook until tender and translucent, about 3 minutes. Then add the garlic and cook for another minute until fragrant.

Why is it that people we haven’t seen in a while or even complete strangers ask us if we’re married or if we have kids? I get messages from complete strangers asking about my relationship, asking when I’ll get married & asking why I haven’t got children yet as I’m ‘getting on’. It’s annoying & to be honest, it’s downright rude.

What business is it of other people? Why do they feel the need to comment on my life? I’m HAPPY and honestly, that’s all that really matters.

If you’re going to ask an old friend a question or worse yet, someone you don’t even know; let your first question be “HOW ARE YOU” or ask if they’re happy or living their best life? Ask them if they’re ok? - You might be the first person to check in with them!

To all my ladies (and men) who feel behind in life… trust me YOU ARE NOT! Although it might feel like everyone around you is getting married, having kids or growing up… it’s just your focus. Trust me that there are equal if not more people starting new relationships, ending relationships, going back to uni, starting uni, traveling the world, throwing in their jobs or changing careers to pursue what truly sets their soul on fire. There’s no right or wrong with life - you just do it the best you can & honestly as long as you’re happy that’s ALL THAT MATTERS

This is your little reminder that no matter where you are in life, you are NOT behind. You are not in front. You are not at the top. You are not at the bottom. You are exactly where you need to be ♥️ So let’s stop asking questions & making people feel inferior, let’s instead start asking how they are - because being kind is all that really matters ♥️
