Keto Garlicky Shrimp Zucchini Boats 😋
4 large zucchini, halved lengthwise
1 tbsp. extra-virgin olive oil
1 tsp. thyme leaves
2 tbsp. butter
3/4 lb. large shrimp, peeled and deveined
2 tomatoes, chopped
3 cloves garlic, minced
1/4 c. heavy cream
1/4 c. grated Parmesan
Juice of 1/2 lemon
1 c. shredded mozzarella
Freshly chopped parsley, for garnish
Preheat oven to 350°. Score zucchini (like you’re dicing an avocado) and scoop out insides to use later. Place zucchini boats in a large baking dish and drizzle all over with oil. Season with salt and pepper and sprinkle thyme leaves on top. Bake until tender, about 20 minutes.
In a large skillet over medium heat, melt butter. Add shrimp and season with salt and pepper. Cook until pink and cooked through, 3 to 4 minutes. Remove from heat and when cool enough to handle, chop into bite-size pieces. Return shrimp to skillet then stir in reserved zucchini, tomatoes, and garlic and cook until fragrant, 1 minute more. Add cream, Parmesan, and lemon juice, and cook until slightly reduced, 3 minutes.
Fill zucchini boats with shrimp mixture and top with mozzarella. Cook until cheese is bubbly, about 10 minutes more. Garnish with more Parmesan and parsley.

Lots to post from a delicious weekend. I didn't really sit down at dinner last night because helping 33 people get situated and fed takes some coordination, but once everyone was eating I grabbed a plate and piled on the brisket and mushrooms and asparagus. It was delicious!!! I ended up having a second plate. I definitely overate last night and you know what, it happened and I'm moving on. I still only had one glass of wine and I didn't eat any of the pear kugel I made, which I love (one day I'll adapt a low carb version), and I stuck to keto desserts, but I didn't track anything and I didnt weigh myself this morning. We live, we celebrate, and I'm grateful that I'm able to come back to a sustainable way of living and eating that will put me back on track. ❤️
Not complaining about my Easter dinner.
loaded bacon cheeseburger casserole.
topped it with sour cream, fresh shredded lettuce and diced dill pickle. had a few pork rinds with it.
Also made bacon wrapped jalapeño poppers. 🤤 can’t wait to eat my leftovers tomorrow.

I used avocado oil for searing and frying.
I also like to marinate my food overnight. It’s what I did for both the steak and the pork chops. The 🥩, after searing it in a cast iron skillet I put a tbsp of butter and I finished it off in the oven at 350. It was the most tender steak I’ve EVER HAD IN MY LIFE. 😤😤😤

Hi friends! We’re alive, I promise. After my failed attempt at getting some exercise earlier this week, @tw33 and I decided to get outside for a couple hours. Played some catch, hit some balls; it felt really good to get some fresh air and get a little exercise. I really appreciate everyone’s kind words and well-wishes. 1/2 cup pine nuts
1/2 cup Parmesan, roughly grated
2 cloves garlic
2/3 cup olive oil
2 cups basil
4 cup plain flour
2 eggs, beaten
3/4 cup breadcrumbs
Make the pesto: Put the pine nuts into a small frying pan and toast them lightly, stirring often, until golden brown. Transfer to a food processor, along with the Parmesan, garlic, olive oil and basil. Process to a very smooth pesto then fill a syringe ready to inject the burratas.
Prepare the burrata: Fill a large saucepan halfway with vegetable oil, and heat it to 375 degrees.
Put the flour, beaten eggs and breadcrumbs into three shallow bowls. Drain the burratas and pat them dry. Use the pesto-filled syringe to inject each burrata with pesto. Be careful not to overfill and split the delicate casing.
Roll each filled cheese ball in the flour, then spoon beaten egg over it until it’s completely covered. Finally, roll it in the breadcrumbs. Put onto a plate and chill for 15 minutes.
Heat the tomato sauce and get any other serving accompaniments ready, before you start to deep-fry.
After 15 minutes of resting, use a slotted spoon to submerge the cheese in the hot oil. Fry for 1 minute, keeping a very close eye on them — the outer layer of cheese will melt quickly and split the breaded coating if they cook for too long. Once golden brown, drain on paper towels. Serve on a bed of tomato sauce and garnish with basil and Parmesan
Made @peaceloveandlowcarb ‘s sausage balls. These are SO good. I made these to as a meal prep for lunch this week. I doubled her recipe and added a little SF Primal Kitchen Steak Sauce, Worcestershire Sauce, and a little mustard. Also added a bunch of other seasonings! Can’t go wrong with these Ballz! 😉

Honestly the most delish meal I think I’ve made so far!
The stuffing was cream cheese, garlic, spinach, basil and chorizo! Crumb was a simple salt, almond meal and Parmesan! So so so good and a lovely family dinner! Everyone was happy!

I’ve been making salmon for my meal prep for a long time! It’s my go-to! It’s easy, fast, healthy, & so good! I also try to stick with recipes that don’t use a lot of ingredients. I like to keep it simple! If you want to know how I make this easy salmon.. you can find the recipe below ⬇️
🔸Salmon 🔸Broccoli 🔸Avocado
Put your salmon on a baking sheet
Drizzle with olive oil and salt
Top with a few lemon slices
Place in a cold oven
Set to 400°
Bake for 25 minutes •
I don’t think I need to tell anyone how to cook broccoli but if you would like to know how I cooked mine feel free to send me a message! This recipe is very versatile.. you can swap broccoli for any vegetable you like.
When I’m ready to eat..I top it with fresh lemon and an avocado 😋

This size salmon works for me. I was buying larger cuts and not eating it all so it was a waste. However, any man trying this, might want to get a bigger salmon than what I use ☺️
