I’m kicking off the week with this power packed muscle bowl. Have you had zaatar before? Its a middle eastern spice mix containing thyme, sumac, sesame seeds, sea salt. You can buy it ready made or make your own, but I really love using it … its got a nice tart + tangy taste that makes those taste buds happy.

I served the chicken with local cherry tomatoes, avocado, mushrooms, feta, dill, and greens.
.
Here is how I made everything:
.
1.To make this dish, I started by marinating my chicken as I always do. Adds so much flavor. I used chicken breast, but you’re welcome to use thighs (and in fact, I prefer thighs over breasts). I first pat down 1lb chicken with a paper towel and put in a glass container
.
2.To the glass container I added juice of 1 small lemon, olive oil, 2-3 tablespoon zaatar spice, sea salt, pepper, and garlic powder, Massage well, cover, & refrigerate overnight or at least 4 hours.
.
2.When you’re ready to make the chicken, cook at 425F. Ovens vary on time. When its almost done, remove and you can sear for a minute on a stovetop grill, though thats optional. Or alternatively, you can cook on a cast iron pan or on your grill. Let rest for a couple minutes, then slice up. Taste, and if you want, add more zaatar or sumac separately.

3.While the chicken was going, I sautéed some mushrooms on medium heat. I like them simple with just olive oil, sea salt, and pepper, but you can season them however way you like.

4.I served up the sliced chicken over a bed of @josiesorganics arugula and added some sliced cherry tomatoes, 1/4 avocado wedges, and some crumbled up feta for some extra Mediterranean flare.

Spices are always so key… and this tangy, tart, lemony, garlicky blend does not disappoint!

Here’s what you need: 
6 slices zucchini 
4 oz ground beef, divide into 3 portions 
1 tbsp Sharp Cheddar spreadable cheese, divided into 3 
Heat air fryer at 400F for 4 minutes. Next season your zucchini with salt and pepper and spray with avocado spray. Cook for 2 minutes on each side in the air fryer. Set aside 
For each slider take half a portion of beef, press down, and add 1 tsp of our Sharp Cheddar cheese in the middle, take the other half of the portion of beef and seal the burger. Do this for the remaining 2 burgers. 
Cook in skillet for 6 minutes over medium high heat and flip after 3 minutes 
To plate: Zucchini slice on bottom, burger, tiny bit of mustard (or more of our cheese 🤫 we won’t tell 😉) and top with zucchini.

  • Keto Spicy Beef Enchiladas! 💯

After hearing so many of you RAVE about the new Cauliflower @crepini_healthywraps I knew I needed to try them ASAP👩🏼‍🍳
.
I used @ketoincourt Spicy Ground Beef recipe, because it’s the only taco meat my family will eat now. 🌶
.
Step 1 - cook spicy beef mixture. 
1 lb ground beef
50 grams diced red onion
30 grams diced jalapeños 
2 cloves garlic
1 Tbsp Olive or Avocado Oil
1 Tbsp Chili Powder
1 t cayenne 
1 t cumin
Sauté veggies in oil until softened then add spices, stir well. Then add beef breaking it up and cook until browned. Set aside. 
Step 2 - Pour @fronteracocina Red Chile Enchilada Sauce just enough to coat 9x9 pan.
Step 3 - Take 2 egg thins and double up. Add 1/8 Cup Shredded Cheese and a tiny beat of meat mixture and roll up. Place seam side down in dish. Repeat 8x. So you are using 16 egg thins total. You double them up to make them thicker. 
Step 4 - Place rest of the spicy beef mixture on top of the Enchiladas
Step 4 - Pour remaining sauce over the meat mixture. 
Step 5 - Sprinkle 1 cup shredded cheese on top.
Bake at 350 until Cheese is nice and bubbly. 🧀 .

  • Crispy Low Carb Microwave Seed Crackers. Ready to eat in about 8 minutes and they taste just like a regular seed cracker with crunch.

The crackers pictured look oven baked... but they were cooked for 4 minutes in the microwave. Who doesn't love a quick and easy to make recipe that's healthy as well.

Perfect for when you run out of crackers. Quicker to make than rushing out to the nearest store for crackers, which wouldn't taste any where near as good as these homemade delights, nor be as healthy. 
Too hot to turn the oven on?? Not an issue in Sydney at the moment but these would be perfect to make in hot weather without heating up the house.

  • ✨ANOTHER KETO OPTION!✨ After hearing VERY good things I finally tried out @thewhiterabbitcafe.. I’m impressed! This was the cabinet option and there was also a burger option available. It’s so nice to have choices of cafes/restaurants that are keto friendly in little old Rotorua.

👉El cuerpo funciona con dos tipos de combustibles GLUCOSA Y CETONAS.

🚫LA GLUCOSA proviene de los carbohidratos y azúcares. .

✅Las CETONAS son moléculas simples de grasa.
.
.
👉Cuando ingieres POCOS CARBOHIDRATOS, en mi caso 20 gramos, pues se produce LA CETOSIS que no es más que el USO DE LA GRASA (cetonas) como ENERGÍA.
.
.
En LA CETOSIS la energía es obtenida de tu ALMACEN DE GRASA. (Grasa visceral =Grasa que cubre los órganos) y (Grasa Subcutánea = Grasa debajo de la piel) .
.
En mi experiencia logré bajar 14 libras en un mes y pasar de size 36 a size 32 mis pantalones🙂.

✅ Es Saludable? Super! Consumes mariscos, pescados, carne de todo tipo, ensaladas, vegetales, grasas saludables, semillas, (agucate, manteca etc) .
.
🚫NO COMER?
Pasta de trigo
Pan
Víveres (solo porciones muy pequeñas)
Derivados de la harina de trigo y maíz
.
.
👉Enfermedades que soluciona? Un montón! Sanó a mi madre y a mí. En el próximo post hablaré de ello.

  • Check out this mock mashed potato!!!! This FAR exceeded my expectations!!!! I’m shocked! 😱

So, a little back story—I had my wisdom teeth extracted this morning. All four of them! 🦷  So I’m really sore and can’t really chew anything right now. 🤕 My surgeon recommended that I eat soft foods like mashed potatoes—but I wanted to try a lower calorie option. So, I bought frozen mashed cauliflower from the freezer section of the store.  I’m so glad I found and decided to try this!  Would DEFINITELY recommend!
