For the Chicken:
1lb Chicken Thighs
Tbsp Garlic Powder
1 cup UNFLAVOURED Whey Protein Powder
For the Sauce:
SF Orange Marmelade
Monk Fruit Sweetener
(Equal Parts of Each)
Crushed Red Pepper
(Each To Taste)
1. Cut small bite sized pieces of boneless skinless chicken thighs (about 1 pound, I had 6 thighs in my package). Mix them with one egg, a tablespoon of garlic powder, teaspoon of salt, and teaspoon of pepper. Add one tablespoon of any kind of milk.
2. Add about one cup of whey protein powder (UNFLAVORED, not natural, people) and mix it around to coat the chicken. I GRADUALLY added the protein powder as I mixed and the powder settled/got stuck to the bottom or side so this step is dependent on how it sticks to the chicken.you could likely use less for sure. There just needs to be some sprinkled on the chicken for there to be a crunch. It shouldn’t be a sludge like batter though. Like a wet dusting, if that makes sense.
3. Drop the “battered” chicken one piece at a time in hot oil (375 degree) - cook for at least 3 minutes but just take it out when it’s crispy enough for you.
4. While the chicken is cooking, heat a skillet on low and mix equal parts sugar free orange marmalade, soy sauce, & monkfruit sweetener. Then add ginger powder, garlic powder, and crushed red pepper to taste. Stir the sauce and then add a tablespoon of water because it thickens fast.
5. Take the chicken out and put it in a bowl. Pour the sauce over it and then place another bowl on top and shake it.
6. Serve with a side of steamed broccoli.

KETO CHICKEN NUGGETS - Next time you’re hungover, skip the McDonalds/Burger King/KFC nuggets and make these spicy ones instead! 🤤💃🏻🍗

1 pound ground chicken
1 1/2 cups crumbled pork rinds
1/2 cup parmesan cheese
1 tsp cayenne powder (use half if you’d prefer them not to be spicy)
Salt, Garlic, Pepper Seasoning to Taste
21 Seasoning Salute from @traderjoes
1/4 cup @franksredhot sauce (don’t include this if you’d prefer them not to be spicy)
1. Shape ground chicken into nuggets and freeze for approximately 1 hour (this will make it easier to bread them)
2. Mix together pork rinds, parmesan cheese, cayenne, salt, pepper, garlic and 21 seasoning in a small bowl
3. In another bowl, mix together eggs and red hot sauce
4. Dip nuggets in the egg mixture, then coat in pork rind mixture. Repeat so it’s double battered.
5. Pop them in your air fryer and cook on 400 degrees for about 15 minutes on each side or until cooked through and crispy!
TIP: You can put them in the freezer and make lots in advance as a dinner meal prep. Then whenever you’re ready, you can just take them out and cook them!

Yeah! I have a neck NOW!
When I was at my highest weight ( 715 lbs), I thought it was impossible to lose this much weight.
But now I know I Will make it to my goal. I don't have a number for my weight goal because I do better with smaller goals.

1 ½ lb Shrimp peeled and deveined
2 Tbsp Butter or Ghee
4 Garlic Cloves pressed
1 Cup Heavy Cream (the video says milk but I used heavy cream. Human error so I Apologize)
1 Tsp Gluten-free Flour
½ Tbsp Lemon Zest
1 Tbsp Italian Seasoning Mix
1 Tsp Chili Flakes or to taste
1 Tsp Cayenne Powder
¼ Cup Sun-dried Tomatoes Chopped
A handful of freshly chopped basil leaves picked and chopped
Sea salt and pepper, to taste
Melt butter in a large skillet or nonstick pan over medium heat. Add the garlic and cook for about 30 seconds, or until fragrant.
Meanwhile, in a bowl, whisk flour and heavy cream until well combined, then pour it into the pan.
Stir in the lemon zest, Italian seasoning, chili flakes, cayenne powder, and sun-dried tomatoes. Lower the heat and simmer for about 3-4 minutes, or until the sauce starts to thicken.
Add the shrimp and cook until becomes pink and curly. About 4-5 minutes.
Take off the heat and stir in the basil. Season with salt and pepper if needed and enjoy!

For all you who are not rebooting, here’s a simple recipe! There Turkey Sausage meatballs, are protein packed and this recipe is a surefire hit!

1 pound lean ground turkey
1 teaspoon ground fennel seeds, optional ground sage
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes, more or less to taste
1/2 teaspoon kosher or salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Combine all ingredients, besides the olive oil, together in a bowl. Form into small balls.
Place one tablespoon of olive oil in a skillet over medium heat and allow to heat (you will see it shimmering, but don't allow it to smoke). Working in batches, place sausage balls in the oil and cook until brown on the outside and cooked all the way through, for about 8 minutes. Place on paper towel lined plate. Cover to keep warm. Repeat with second batch, adding more oil, as necessary.

What’s even more crazy, since disconnecting our furnace in 2016, and using only a wood burning stove to heat our house, my body fat level is at a historic low. Instead of hitting the thermostat button while sitting on my ass, I have to actually chop wood nightly and gather kindling or we’ll freeze our asses off.
It may sound archaic, but this added commutative weekly activity, over time, has helped me stay shredded with zero structured cardio.

FRIENDS. it is a beautiful day in Cristanland! my dinner rolls are OFFICIALLY GONE! my weight loss overall hasn’t been very speedy compared to many on keto. sometimes it gets disheartening. 😞 but it’s moments like this that snap me back to reality and let me know that my efforts are paying off, even if I don’t notice them day to day. I made a taco and cheese tostada made using the @cheesefolios parmesan wraps. It was define! Very good!
Miso Glaze Salmon
Avocado with Furikake
Steamed Broccoli in liquid aminos
1/2C liquid aminos
1/4C rice vinegar unseasoned
1T miso paste
2tsp mirin (optional)
Boil, simmer for a few minutes
Brush on salmon, brush again halfway thru after flip then broiled to perfection.
Sunomono Salad :
Half a cucumber, thinly sliced and salted with 1/2tsp kosher, set aside for 8mins
Slice 4 jumbo shrimp in half, then dice
2T Nori, cut into strips (scissors)
Dressing is simple:
6T soy or aminos
1/3C rice vinegar, unseasoned
1 tsp black sesame
1tsp white sesame
Mix. Set aside.
Place cucumber into paper towels and squeeze excess liquid out.
Add all ingredients together and serve.
Keto Almond Joy Cream Truffles 1 ½ cups heavy whipping cream, left at room temperature for 30 minutes
1 ¼ cup keto approved chocolate chips
¼ cup powdered erythritol
1 teaspoon almond extract
1 tablespoon butter
½ teaspoon coconut extract
½ cup shredded unsweetened coconut
1 Add ¼ cup keto chocolate chips to a small microwave safe bowl. Melt the chocolate in the microwave at 30 second intervals, stirring in between, until melted.

2 Combine heavy whipping cream, melted chocolate, powdered erythritol and almond extract in a medium bowl using an electric mixture. Whip until stiff peaks form.

3 Using a cookie scoop or tablespoon, scoop 1 inch sized balls of the thick chocolate mixture onto a parchment lined baking tray, spacing about 1/2 to 1 inch apart. Place in the freezer for 1 hour or until hardened.

4 Melt remaining 1 cup of keto approved chocolate chips and butter in the microwave at 30 second intervals until melted, stirring in between. Stir in coconut extract.

5 Dip each chocolate truffle in the melted chocolate using a toothpick or fork. Return to parchment lined baking try to set. Immediately sprinkle shredded coconut on top. Store in the refrigerator or freezer until ready to serve.

~~ French Silk Chocolate Pie ~~ Basically its the Keto french chocolate Silk Pie but i didnt add sweetner, i used the normal sugar so mine was the non keto version. Rest of the ingredients remained the same. Recipe credit goes to @patrickmaese. Thanks again.
We had Mexican food for dinner. Just had meat & veggies (parriada). It came with their flour tortillas but I heated up some low carb tortillas at home from @olemex_labanderita. I really could’ve made this a burrito🌯😋
