A fresh one-pan meal idea that combines all that fresh crisp Summer zucchini, with a tangy garlic tomato & basil pesto.
Basically Summer in a pan!
makes about 3-4 servings
1 lb. shrimp, peeled and deveined
1 Tbsp olive oil, or avocado oil
1 fresh garlic clove, minced
2 large zucchinis, sliced
2 Tbsp sun-dried tomato pesto (recipe below)
For The Sun-dried Tomato Pesto
3 fresh garlic cloves
1 cup fresh basil leaves, plus more to garnish
1 cup sun-dried tomato packed in olive oil
2-3 Tbsp water
1/4 cup fresh Parmesan cheese
sea salt and fresh ground black pepper, to your taste
280 g cream cheese
1 tsp salt
5 tbsp (40 g) ground psyllium husk powder
475 ml crème fraîche or sour cream
150 g (325 ml) shredded cheese
60 g grated parmesan cheese
½ tsp salt
¼ tsp ground black pepper
120 ml fresh parsley, finely chopped
2 tbsp olive oil
1 yellow onion
1 garlic clove
600 g ground beef
3 tbsp tomato paste
½ tbsp dried basil
1 tsp salt
¼ tsp ground black pepper
125 ml water

Sandwich pinwheels 😍🔥 I woke up today craving a sandwich (a typical pregnancy craving for me) and said not today, Satan. I grabbed some @olemex_labanderita Extreme Wellness spinach and herb tortillas and rolled up some turkey, salami, mayo, avocado and romaine.

This recipe is so easy to adjust! Don’t like something? Remove it! You can change out the protein, types of cheese and seasoning! Sometime I use cauliflower rice, sometimes I don’t. You be the boss! :

Made these Joseph’s Lavash wrap chips in the microwave. Followed @kimchi.and.collards’s microwave directions of cooking them for 2 min. So much easier than baking them! Same great crunch! I sprayed my plate so they wouldn’t stick 😉. Dip is Aldi’s Jalapeño Artichoke 😋

Nice plate of dry rubbed baked wings for tonight's #dinner !! So so crispy and tasty, I have to say, I really outdid myself on these babies👌
After par-boiling toss them wings in coconut oil, add some Italian seasoning, garlic, onion chili powder & paprika- then baked at 450° for 25 minutes😉
Serving with a side of blue cheese & celery😊
