Sometimes when i watch 600 pound life it reminds how similar my life was to the people on the show. I could hardly walk or move. I only had two shirts that fit me. Couldnt fit in chair or have a seat belt go around me. When i was over weight it was like time stood still. I was watching others live their life while i just sat there. I can tell you personally that losing weight was one of the best decisions ive ever made. Transformation takes time. I didnt drop over 200 pounds in one day. Losing weight takes consistency and determination. You got to want it and do the actions to get there. Just don't give up and keep going. I track my food intake daily on a app called mynetdiary. I got a activity tracker and started to be more actived by getting steps in daily. I started caring about the things i put in my body. Just know you can do anything you are a warrior.

- Keto Mushroom Zucchini Lasagna Rolls . 😍😍
4 large zucchini thinly sliced lengthwise (I used a mandoline)
1 Tbsp olive oil for brushing + 1 additional Tablespoon for sauteing
1 small sweet yellow onion, finely diced
2 fresh garlic cloves, minced
8 oz fresh mushrooms, chopped well
1 tsp dry Italian seasoning
16 ounces high quality marinara sauce
sea salt and fresh ground pepper, to taste
1/3 cup organic ricotta
1 free range egg
1/4 cup freshly grated Parmesan cheese
a handful or fresh parsley, finely chopped
1/2 cup shredded mozzarella cheese
Preheat your oven to 375 degrees f. and line a baking tray with parchment paper.
Lay out the zucchini strips on a large cutting board, lightly sprinkle with sea salt and pepper and very lightly brush with 1 Tablespoon of oil.
Bake strips in your preheated oven for 10-12 minutes, or until slightly tender and easy to roll. Allow them to cool until ready to handle.
Meanwhile, add remaining olive oil in a skillet over medium-high heat. Add minced garlic and cook for 1 minute, until fragrant.
Add in the onions, mushrooms, Italian seasonings and cook for 4-5 minutes.
Stir in 3/4 of the marinara sauce and simmer your mushroom sauce for about 4 minutes, or until slightly reduced.
In a medium bowl add ricotta, parmesan cheese, the egg and a tiny pinch of sea salt + pepper, and fresh chopped parsley. Stir well to combine everything.
Use a 9×13″ casserole dish or an ovenproof cast iron skillet and spread remaining marinara sauce on the bottom.
To assemble the zucchini rolls, lay out one zucchini slice on a cutting board. Spread about 2 spoonfuls of the ricotta mixture over the top, then a spoonful of mushroom sauce mix.

1 1/2 c. marinara, divided
2 medium eggplants, halved
1 tbsp. extra-virgin olive oil
1 medium onion, chopped
1 tsp. dried oregano
Freshly ground black pepper
2 cloves garlic, minced
1 c. chopped tomatoes
1 large egg, lightly beaten
2 1/2 c. shredded mozzarella, divided
1/4 c. freshly grated Parmesan
1/4 c. Italian bread crumbs
Freshly sliced basil, for garnish .
Preheat oven to 350°. Spread 1 cup of marinara over the bottom of a 9x13-inch baking dish. Using a spoon, hollow out eggplants, leaving about a 1/2-inch-thick border around skin to create a boat; transfer to baking dish. Roughly chop scooped-out eggplant flesh.
In a large skillet over medium heat, heat oil. Add onion and cook until soft, 5 minutes. Stir in chopped eggplant and season with oregano, salt, and pepper. Cook, stirring often, until golden and tender, 3 to 4 minutes. Add garlic and cook until fragrant, 1 minute.
Transfer mixture to a bowl and add tomatoes, egg, 1 cups of mozzarella, and remaining 1/2 cup marinara. Mix until just combined, then scoop into eggplant boats. Top with remaining 1 cup mozzarella, Parmesan, and bread crumbs.
Bake until eggplants are tender and cheese is golden, about 50 minutes.
Garnish with basil before serving

1)Choose a protein
Don’t complicate your life. Keep your meals simple. No “low carb” breads, tortillas or treats at first.
The closer you stick to the basics, the better your results will be 🙌
When first starting keto, don’t stress out about macros. Just focus on staying under 20 net carbs IMO. Your carbs should come mostly from non-starchy veggies not keto treats.
You’ll be making changes throughout your journey, so for now ,focus on getting your body into ketosis👌
Eat enough to be satisfied but not full and definitely not stuffed. Remember you’re trying to lose weight, so you need to cut back on portions (Calories in drinks count, so don’t drink 1/2 cup of heavy cream in your coffee).
If you feel hungry in between meals, you probably need to add a little more protein or healthy fats to your meals. Fats keep you feeling satisfied and satiated between meals. You have to find what works for you🙌
Tea and coffee is also a good “snack” ☕️
For those of you with a sweet tooth... if you’re dying for some sweets, make my “Reece’s” Fat Bombs and have one after lunch or dinner as dessert 🍫

3 medium zucchini, grated (about 5 c.)
2 large eggs, lightly beaten
1/2 c. shredded cheddar
1/2 c. grated Parmesan
1 tsp. dried oregano
1/4 tsp. garlic powder
Freshly ground black pepper
Sauce of choice for serving
DIRECTIONS *Preheat oven to 400° and grease a baking sheet with cooking spray. Place zucchini in a kitchen towel and squeeze all excess liquid out. *In a large bowl mix together zucchini, egg, cheddar, Parmesan, oregano, garlic powder, salt, and pepper. Spoon about 1 tablespoon of mixture and roll it into a tater-tot shape with your hands. Place on the baking sheet and bake for 15-20 minutes, or until golden.

Pizza keto con masa de coliflor 🍕 .
Para la masa:
1 coliflor pequeño.
1/2 taza de queso mozzarella.
1 cucharada de queso parmesano.
1/2 cucharada de orégano.
1/2 cucharada de paprika.
2 cucharadas de Salsa marinara
1/2 taza de queso mozzarella
1 lonja de jamón.
1 Tomate picado en cubitos.
Procesar el coliflor hasta obtener una textura similar al arroz. Secar el arroz de coliflor en el microondas por 8 min o en el horno a 220 grados centígrados por 10 minutos.
Agregar orégano, sal, pimienta, paprika, los quesos, batir el huevo e incorporarlo a la mezcla.
Colocar la masa en forma de pizza en una placa y hornear a 220 grados centígrados hasta que los bordes estén doraditos, aproximadamente 15 minutos.
Sacar del horno, colocar la salsa, el queso y los toppings de su preferencia.

I didn't find it for $4.89 like most people at @aldiusa but for closer to $9 at @stewleonards in Farmingdale.
The price point makes me hesitant to use it till I feel like I've got the PERFECT recipe. So I don't "waste" it as just another #cheesechip or #tacoshell .
Introducing @beccas_battle : How did I get started? I started out keeping it very simple- cut out sugar, sodas (even diet), breads, chips, rice and pastas. I stuck to simple recipes and made sure I had food prepped and ready to go so I didn’t go scavenging for food. I took baby steps guys. I didn’t dive right into Keto because quite honestly I didn’t understand everything behind it so I needed to research more on it. I didn’t start out fasting🤷🏻♀️ I let my body go into it naturally. My point: how do you start losing weight?- you just start taking baby steps to your goal. Don’t wait until you have all the answers on what you’re suppose to do for this journey, you can figure all that out along the way. Non of us knew everything we know now before we started. Every person you follow for inspiration started at square one and were just as lost as you. The thing we all have in common is we just started one day and didn’t quit. We didn’t know everything about Keto or whatever way of eating or exercise program got us to our goals. We learned it along the way. Don’t think you need to know it all to get to the goal. Just start. Take it one day at a time and figure out the small stuff along the way. Fuel yourself with research and try to understand what’s going on in your body🖤🖤you don’t need to know it all, all you need to know is that you want this and you aren’t going to quit this time! You got this🖤🖤

I’m in “chaffle heaven “ my first attempt making these, I was slightly nervous as I wasn’t to sure on a recipe to use.
I went with my gut , I used.
3 tbs almond meal.
Pinch baking powder.
1tbs mct oil.
I cooks really quickly and crisps up well.
My first attempt of a savoury “chaffle” and seriously its going to be addictive.
I used the left over taco mince and my go to fats of sour cream once again.

It's been awhile but here I am back to sharing my keto lifestyle! I'll call this an open omelette consisting of my favorite @pedersonsfarms kielbasa, jarred Jalapeños, and cheese. So delicious!
I've been MIA as I'm adjusting to a new journey I've taken on which is homeschooling my 2 oldest children, a 4th grader and kindergartner. I'll be sharing bits and pieces of our Homeschooling life as it's becoming a great passion of mine. We officially started our Homeschooling on Tuesday and so far it's going great! .
I’m kicking off the week with this power packed muscle bowl. Have you had zaatar before? Its a middle eastern spice mix containing thyme, sumac, sesame seeds, sea salt. You can buy it ready made or make your own, but I really love using it … its got a nice tart + tangy taste that makes those taste buds happy.
I served the chicken with local cherry tomatoes, avocado, mushrooms, feta, dill, and greens.
Here is how I made everything:
1.To make this dish, I started by marinating my chicken as I always do. Adds so much flavor. I used chicken breast, but you’re welcome to use thighs (and in fact, I prefer thighs over breasts). I first pat down 1lb chicken with a paper towel and put in a glass container
2.To the glass container I added juice of 1 small lemon, olive oil, 2-3 tablespoon zaatar spice, sea salt, pepper, and garlic powder, Massage well, cover, & refrigerate overnight or at least 4 hours. .
2.When you’re ready to make the chicken, cook at 425F. Ovens vary on time. When its almost done, remove and you can sear for a minute on a stovetop grill, though thats optional. Or alternatively, you can cook on a cast iron pan or on your grill. Let rest for a couple minutes, then slice up. Taste, and if you want, add more zaatar or sumac separately.
3.While the chicken was going, I sautéed some mushrooms on medium heat. I like them simple with just olive oil, sea salt, and pepper, but you can season them however way you like.
4.I served up the sliced chicken over a bed of @josiesorganics arugula and added some sliced cherry tomatoes, 1/4 avocado wedges, and some crumbled up feta for some extra Mediterranean flare.
Spices are always so key… and this tangy, tart, lemony, garlicky blend does not disappoint!

Another successful day of fasting. I made it to 28 hours. I needed all of my strength and energy for household maintenance so I broke fast with some chicken fried riced cauliflower burrito and some beef ribs. 2 days in a row 💪🏾. Can't wait for Saturday #nointermittentfasting .

Ingredients *2 lb ground beef
*1 cup pork rinds with seasoning @baconsheir
*2 teaspoons salt
*1 teaspoon pepper
*2 teaspoons garlic powder
*4 slices ham
*8 slices cheddar cheese
*2 cups spinach
*10 slices bacon
*Preheat the oven to 350˚F (180˚C).
*In a large bowl, mix the ground beef, eggs, pork rinds , salt, pepper, and garlic powder. Mix until well combined.
*Put the mixture in a medium baking tray lined with aluminum foil and distribute the meat mixture evenly.
*Add the ham, cheese, and spinach on top of the meat.
*Carefully lift the meat and form a roll.
*In another aluminum-lined baking tray, place the slices of bacon side by side, one next to the other. Place the meat roll on top of the bacon.
*Roll up the meat with the bacon, then wrap with foil.
*Bake the aluminum-wrapped roll for 25 minutes.
*Increase the temperature to 500˚F (260˚C). Remove the foil and bake for 20 more minutes until the bacon is golden brown and crispy.
*Cool for 5 minutes, then slice and serv *Enjoy!
