This insanely creamy Spinach Lemon Cauliflower Rice Risotto is all things delicious. It’s made with sauteed cauliflower and a healthy cauliflower cream sauce (dairy-free or regular, your choice!) and has lots of fresh lemon flavor. Top with some spicy garlic prawns for a simple to make dinner everyone will love!

1 tablespoon olive oil
1 medium onion, finely minced
36 ounce Cauliflower “Rice”
1 cup vegetable broth
5 ounces baby spinach
OPTION #1 : CHEESY LEMON CREAM SAUCE
1 cup milk~1 cup white cheddar cheese ~1/4 cup grated parmesan cheese~1 teaspoon sea salt ~Juice of 1 lemon
OPTION #2 : DAIRY-FREE LEMON CREAM SAUCE 1 1/2 cups vegetable broth~1 cup raw cashews or pine nuts 1 tablespoon nutritional yeast~1 teaspoon sea salt~Juice of 1 lemon
THE GARLIC CHILI PRAWNS 1 tablespoon olive oil or butter 2 garlic cloves, very finely minced 1 lb. uncooked, peeled prawns (tail on or off, your choice) 1/2 teaspoon paprika A pinch of chili flakes and sea salt
Heat the oil in a large frying pan over medium heat. Add the onion and cook until it is transparent, about 3-4 minutes. Add the cauliflower and broth and bring to a boil. Cook the cauliflower, stirring occasionally, until it is soft, about 8 minutes. Remove the pan from the heat. If you’re using the Cheesy Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the milk. Blend on high until smooth. Add the cheddar, parmesan, sea salt and lemon juice and blend again until the cheese has melted. If you’re using the Dairy-Free Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the cashews, nutritional yeast, sea salt, and lemon juice and blend on high until smooth. Add the spinach to the cauliflower rice and put the pan back on the heat.

There’s days where this is more than enough but then there’s days where I get hungry a little later in the day so I made my own Nut Medley to hold me till dinner. It’s 1/4 cup per container. ⠀

Everything was purchased at Trader Joe’s and the Nuts and white chocolate chips are from Walmart. The white chocolate chips are 10x cheaper than Lily’s and the carb count is unbeatable 🙃

Lunch! Went to a pho place my office and ordered the rare beef + brisket soup without noodles. I use the sprouts they bring as noodles instead. They do the trick. Woke up this morning and my throat felt tingly. Hopefully not another cold right after I just had one last week!

People ask me all the time where a good place is to get high quality meats 🥩.
There is a world of difference between factory farmed meat, organic meat, grain fed, grass fed grain finished and..... Wait for it,
PASTURE RAISED GRASS FED GRASS FINISHED BEEF!
If it doesn't specify this then it isn't it.
The composition of the fat from #pastureraised#grassfedgrassfinished beef is way higher in beneficial #antiinflammatory omega 3s and way lower in pro inflammatory omega 6.
Don't shy away from the fatty cuts, the bones or the organ meats (power house of nutrients)
The process involved in raising these animals is also not only more humane for the animal but also incredibly beneficial for the environment.
If you habe done your homework and understand all the incredible health benefits of including high quality meat and animal products to your diet, you will care about how these products are sourced.

1/4 cup granulated erythritol
2 room temp eggs
2 tsp baking powder
2 scoops snickerdoodle ketochow
1 Tbsp granulated erythritol and 1 tsp cinnamon mixed together to roll dough in
Cream coconut oil or butter with mixer, add erythritol and eggs and mix well, add baking powder and ketochow and mix until well combined. Drop balls into erythritol/cinnamon mixture and roll until covered. Add to parchment paper and bake for about 12-15 minutes on 350 degrees

Voltei pro forno até o queijo derreter e tá pronto! 👉🏻 Aí você me pergunta: "ahhh mas a massa fica crocante?" E aí eu te respondo, NÃO, não fica crocante. Mas convenhamos, não tem como ter tudo na vida né? E nesse caso são escolhas... Tem gente que adora essas invenções e adaptações pra deixar o dia a dia mais gostoso, e tem gente que odeia e acha melhor escolher um dia pra comer de fato uma pizza em uma pizzaria. My husband's post-work, pre-workout snack. What's your keto snack?
What was your lunch today? This was mine 😋 I had leftover chicken I made from a @whole30 cooking book. It was moist and flavorful even re-heated. To go with it I just sauteed some chard briefly with salt, pepper and garlic powder. Quick and easy!
