This insanely creamy Spinach Lemon Cauliflower Rice Risotto is all things delicious. It’s made with sauteed cauliflower and a healthy cauliflower cream sauce (dairy-free or regular, your choice!) and has lots of fresh lemon flavor. Top with some spicy garlic prawns for a simple to make dinner everyone will love!
1 tablespoon olive oil
1 medium onion, finely minced
36 ounce Cauliflower “Rice”
1 cup vegetable broth
5 ounces baby spinach
OPTION : CHEESY LEMON CREAM SAUCE
1 cup milk~1 cup white cheddar cheese ~1/4 cup grated parmesan cheese~1 teaspoon sea salt ~Juice of 1 lemon
OPTION : DAIRY-FREE LEMON CREAM SAUCE 1 1/2 cups vegetable broth~1 cup raw cashews or pine nuts 1 tablespoon nutritional yeast~1 teaspoon sea salt~Juice of 1 lemon
THE GARLIC CHILI PRAWNS 1 tablespoon olive oil or butter 2 garlic cloves, very finely minced 1 lb. uncooked, peeled prawns (tail on or off, your choice) 1/2 teaspoon paprika A pinch of chili flakes and sea salt
Heat the oil in a large frying pan over medium heat. Add the onion and cook until it is transparent, about 3-4 minutes. Add the cauliflower and broth and bring to a boil. Cook the cauliflower, stirring occasionally, until it is soft, about 8 minutes. Remove the pan from the heat. If you’re using the Cheesy Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the milk. Blend on high until smooth. Add the cheddar, parmesan, sea salt and lemon juice and blend again until the cheese has melted. If you’re using the Dairy-Free Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the cashews, nutritional yeast, sea salt, and lemon juice and blend on high until smooth. Add the spinach to the cauliflower rice and put the pan back on the heat. Credit to @keto.meal for this post

The pizza #chaffle ! .
I've had this for lunch the last few days. It's a kick and I'm definitely not over it.
I used shredded parmesan (about 10grams) as a base and then added 1/3rd of a scrambled egg, 3 slices of pepperoni and then another pinch of parm before closing the lid on my mini waffle maker. I used 1/3rd of an egg because on my first run through, a half was a bit too much. So! I get 3 little pizza chaffles out of one egg.
I've been eating them hot and crispy with my bare hands, dipped into either ranch or marinara.
So much more waffling ahead of me :)
I did not invent the chaffle (cheese and egg waffle) and every time I give credit to the "originator" I get messages that it was actually someone else. So I'll just say this. I didn't come up with putting eggs and cheese on a mini waffle but I'm very glad I got in on the game 😂😂

For the recipe I used
• 1 cup of water
• 2 tazo passion tea bags
• 4 Tbs of Gelatin
•1/2 tsp of liquid stevia
•Bring water to boil steep Tea Bags for 5 min • Let TEA COOL!!! (Very important)
• add gelatin (mix thoroughly)
• Add stevia
• Heat up in micro wave 30 seconds X3 • Stir again (remove all bubble from the top)
• Add to mold and chill for 1 hour

Look at that bright, colorful plate! This was a little mis en place happening before putting together some low carb salad rolls (with peanut sauce, duh). I made salad rolls even lower carb by swapping the rice paper out for collard greens. Rolling them up took a bit of practice, but I'm solidly on the collard-greens-as-a-wrap-for-everything train now.
