Ingredients: 
1/2 cup shredded coconut 
1/3 cup natural peanut butter 
1 tbsp butter 
1/2 tbsp cocoa powder
1/4 tsp vanilla extract 
5-8 drops liquid stevia

Instructions:
1. Melt butter in bowl
2. Add the rest of the ingredients and mix
3. Add to non stick baking cups (each cookie should be about 1 tbsp) and then add to the freezer for 15 minutes
4. Add to ziplock baggies and store in refrigerator! .

Serving size is 1 cookie (recipe makes 6)
Calories: 148
Fat: 14g
Protein: 3.5g
Net carbs: 2g
Fiber: 2.5g

These don’t store well at room temperature so you want to eat pretty quick when you take them out of the fridge! Also, they’re extra crunchy if you keep them in the freezer 😋 and if you don’t like coconut, you could replace it with crushed nuts! If you don’t have stevia, just use 1-2 TBSP regular sweetener. .

  • The pizza #chaffle! .
I've had this for lunch the last few days. It's a kick and I'm definitely not over it.

I used shredded parmesan (about 10grams) as a base and then added 1/3rd of a scrambled egg, 3 slices of pepperoni and then another pinch of parm before closing the lid on my mini waffle maker. I used 1/3rd of an egg because on my first run through, a half was a bit too much. So! I get 3 little pizza chaffles out of one egg.

I've been eating them hot and crispy with my bare hands, dipped into either ranch or marinara.
.
.
So much more waffling ahead of me :)
.
I did not invent the chaffle (cheese and egg waffle) and every time I give credit to the "originator" I get messages that it was actually someone else. So I'll just say this. I didn't come up with putting eggs and cheese on a mini waffle but I'm very glad I got in on the game 😂😂

If you saw my stories you saw that I was celebrating the 30% OFF SALE! that @gooddeesmix is having today. When pressed, (Because I've never tried a mix I didn't like), I say that the blondies are my favorite. They are perfection! I added a cheesecake layer to this batch and baked it for an extra 15 minutes!

One bag of @gooddeesmix blondies
4 oz. Cream cheese
1 egg
Dash of vanilla extract
2 Tbs. Sweetener of your choice

Prepare the blondies as directed and pour into a buttered baking dish. In a separate bowl, whip up all the cheesecake ingredients and pour on top. The next time I do this I may prebake the blondies a bit before adding the cheesecake layer. Oh no! More experimenting! (Fake. Tears)

The salted caramel sauce is something I've been working on today. I got my first bag of allulose and I'm really excited about the possibilities! That syrup had cooled on my counter for 2 hrs and had that texture. Allulose doesn't recrystalize!

I'll post the caramel tomorrow after one more run through for timing. .

  • Peanut butter and jelly waffles for dinner!

I heard a rumor that @choczero peach syrup was going to be back in stock tonight so I had to celebrate. This whole plate is a tad over 6 carbs. Yes, those are actual peaches and I sliced them super thin and weighed them 😂😂

The waffle recipe is on my website! I did add a dash of cinnamon to this batch. I used to love roasted peaches with cinnamon and honey. Adding a bit of cinnamon to the batter was great! The peach syrup is thick like honey and drizzled over my 1 carb per Tbs. Peanut butter (smuggled in from Canada! ) is out of this world. This scratches that pb&j itch so well. Will probably have this again for breakfast tomorrow :)

  • Yellow Spanish Rice with Tuna and vegetables 
This is probably my favorite meal since I started #keto in April. Tastes like home...and latinos love us some rice.
-Fried a scrambled egg and put aside -sautéed onions, garlic, yellow and red peppers in olive oil and butter.
-added Sazón (cilantro y achiote) seasoning and mixed
-added broccoli florets and sautéed a little longer added egg
-prerinsed and drained Zeroodles rice and added to pan and left to cook in about 7 mins
-added small can of tuna in Olive oil by Unico (the best tuna) -stirred and mixed few mins to heat tuna and done 
Fast and yummy 😋

1/2 @cutdacarb wrap
3/4 cup shredded mozarella
8-12 pepperonis
2 tbsp butter (or coconut oil)
Salt & seasonings of preference
Marinara for dipping 
You can also add other pizza toppings, I just try to avoid the sauce because in my opinion it turns out way better if you just dip in pizza sauce rather than cook the flatbread with it. .

1. Melt half of the butter and coat the outside of the wrap with it + the seasonings. 
2. Add the mozarella and pepperonis to the inside of the wrap. I usually do 1 layer with half of the mozarella, add the pepperonis, then add the rest of the mozarella. Fold in half like a flatbread.
3. Fry on medium high heat in the rest of the butter for like 2-3 minutes on each side or until it browns to your preference. Cut into 8-12 bite sized pieces with pizza cutter and enjoy!!

  • Today has been a shit show in my brain 🤯 All I want to do is eat all the sweets to make myself feel better. Even though that’s the wrong thing to do in this moment. I didn’t want to go massively off track so I got low carb, low sugar treats. The peanut butter and jelly ice cream was bomb!! The other ice cream was eh. And of course some chocolate🤤🍫 #ketogenicdiet #ketotreats
