1 cup vegetable broth⁠
5 ounces baby spinach⁠
OPTION #1: CHEESY LEMON CREAM SAUCE⁠
1 cup milk~1 cup white cheddar cheese ~1/4 cup grated parmesan cheese~1 teaspoon sea salt ~Juice of 1 lemon⁠
OPTION #2: DAIRY-FREE LEMON CREAM SAUCE 1 1/2 cups vegetable broth~1 cup raw cashews or pine nuts 1 tablespoon nutritional yeast~1 teaspoon sea salt~Juice of 1 lemon⁠
THE GARLIC CHILI PRAWNS 1 tablespoon olive oil or butter 2 garlic cloves, very finely minced 1 lb. uncooked, peeled prawns (tail on or off, your choice) 1/2 teaspoon paprika A pinch of chili flakes and sea salt⁠

Heat the oil in a large frying pan over medium heat. Add the onion and cook until it is transparent, about 3-4 minutes. Add the cauliflower and broth and bring to a boil. Cook the cauliflower, stirring occasionally, until it is soft, about 8 minutes. Remove the pan from the heat. If you’re using the Cheesy Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the milk. Blend on high until smooth. Add the cheddar, parmesan, sea salt and lemon juice and blend again until the cheese has melted. If you’re using the Dairy-Free Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the cashews, nutritional yeast, sea salt, and lemon juice and blend on high until smooth. Add the spinach to the cauliflower rice and put the pan back on the heat.⁠

Nuts are super healthy and generally low in carbs, making them an easy choice on Keto. But, since they are so small and snackable, they’re easy to over-consume.

When snacking on nuts, stick to 1-2 handfuls. Put them in a bowl and walk away — otherwise, just like eating a bag of chips, it’s easy to eat a whole bag of nuts when you’re not thinking about it.

Also, try to avoid nuts that have added salt and definitely avoid ones that have added sugar, like “honey glaze” or spiced nuts.

From least to most, these are the best low-carb nut options:

3. Macadamia Nuts
4. Walnuts 
5. Peanuts

  • Check out my story and please give me answers! I’m very very proud of what I’ve accomplished. I’ve had 0 cheat meals and I know I’ve been on point. But this stupid scale is going back and forth! Once I hit 239 the next day I’m back to 240! Ready to be done with 240’s! I know things are changing. I’m fitting in a 16 now with ease. I feel and see the changes. Once I hit 239 the next day I’m back to 240! Ready to be done with 240’s! I know things are changing. I’m fitting in a 16 now with ease. I feel and see the changes.   • That evening, I got rid of all the soda bottles I still had in my room. I bought ground beef and a ton of vegetables from the grocery store. I got myself a little notepad and wrote down everything I ate that day. And I finally did something I swore I'd never try to do; I calculated all the macros in what I ate.

I don't really know why I had an aversion to calculating my macros in the first place. If I was able to micromanage dozens of competitive Pokemon teams down to each individual IVs and EVs, then it shouldn't be difficult to calculate things that actually affected my body.

It has officially been 20 days of being back on keto for the second time. I feel so good and so proud that I stuck through the first 2 weeks. I didn’t lose the weight I thought I would but now it’s just melting off. Down 8 pounds since I’ve started again and I can’t wait to see what I can accomplish the rest of the month!
