South indian Chicken curry
800 gm chicken
2 tbsp coriander seeds
2 tsp black peppercorns
1/2 tsp fenugreek Seeds
6 tbsp white cooking oil / Coconut oil
1/2 tsp black mustard seeds
2” piece of cinnamon stick
2 medium-sized chopped onions
1 tsp garlic paste
1 tsp ginger paste
3 medium-sized chopped tomatoes
1 tsp turmeric powder
1 tsp red chili powder
1 1/2 tsp salt
1/2 tsp sugar
1 tbsp lemon juice
400 ml can of coconut milk
2 to 3 fresh green chilies
First, remove all unwanted tissues from chicken, then make some cut marks on chicken and break from joints and remove a tendon from it.
On a small pan frying pan add coriander seeds, fenugreek seeds, and black peppercorns into it, to dry roast till slightly darker and fragrant. Then grind the roasted spices to a fine powder. Keep aside for later use. .
Add oil ( i used vegitable oil, u can use coconut oil ) into a wide pan and set up to heat on medium-high heat. When the oil is hot then add cinamon stick and musturd seeds to gently infuse and flavour the oil. As soon as the mustard seeds start to splutter, add chopped onion and fry until it become slightly golden brown. Then add ginger-garlic paste, saute for 5 min then add chopped tomatos, cook till the tomatoes have turned soft and mushy. .
Now add homemade roasted powder, turmeric powder, red chilli powder, salt, lemon juice and stir until you see the oil separating from the sides. Then add cocomut milk and stir.
Now add chicken on a low flame cook until it cooks. Serve with basmati rice.
