Back home now! This is an over due post about the exciting visit to Caves Byrrh in Southern France, where I was invited to join a bartender program designed for professionals.  Unfortunately, I was only able to attend the second day, but it was still very exciting.  Caves Byrrh has such a rich history, home to Byrrh, Suze, Pernod Absinthe. I hope to talk more about this amazing place through various drinks in the future posts. Do check out my story today for additional pictures!

This post is about Byrrh.  Byrrh is an aromatised wine-based apéritif made of red wine, mistelle, and quinine.  It is pronounced as "beer", created by the Violet brothers back in 1866, distributed through the pharmacies.  While there, I watched a video in French, which seems to suggest the name creation was pretty random by picking up a few code letters attached to the rows of clothes! Byrrh soon became popular, the architect Alexandre Eiffel created the today's Caves Byrrh which has over 70 casks. In 1950s, 30m litres of Byrrh were sold on the French market and the entire cave production would have stored barely six month's production. It still has the largest cask for fermentation in the world!  A staggering 1,000,200 litre cask that took nearly 15 years to build.

0..75 Giffard white cream de menthe .

Method: shake and pour in a coup. Served on a bed of Anis de Flavigny ( a very traditional French mint pearl candy). Mint leaves are presented on a moroccan tea cup I acquired.  This drink is all about to emphasize the aromas of spice in Byrrh: quinine, coffee, cocoa, elderflower and bitter orange dance on a bed of mints.
