Let me start by saying that while it is okay to have a vegan cookie or some of these other processed vegan snacks from time to time, they should not make up the foundation of a vegan diet.

When many people make the transition to a vegan diet, they often say that it’s really expensive. Many people fall into trouble because they don’t know how to cook from scratch and rely on many of the processed vegan food like products, which are commonly expensive.

If you look at the research on the health benefits of a vegan diet, the research is not based on soy imitation meats or processed grain and sugar laden sweet treats. Oreos, a Coke, and French fries are all vegan just as sweet potato, broccoli, and blueberries are.

A true vegan diet celebrates nutrient-dense whole foods that are made up of whole fruits, vegetables, whole grains, legumes, nuts, seeds, and herbs.

What’s so great about a whole food, vegan diet is that it provides an abundance of fiber, diversity, and beneficial phytochemicals which are found exclusively in plants and are ideal for optimal health.

These bioactive phytochemicals are what give these fruits and vegetables their bright pigment and flavor, and are apart of the plants defense system.

The more phytochemicals we consume, the better our body is able to combat oxidative stress, decrease inflammation, and protect our gut.

While not everyone thrives on a strict vegan diet, one thing that can be agreed upon by all health practitioners is that you can't eat enough vegetables, and we need a lot more of them. So go crazy on the veggies my friends, no matter if you’re an omnivore, vegetarian, or vegan.

  • Well miles off a PB this morning, Inverness parkrun was held at Whin Park which was very muddy. Went as fast as I could but it was very slippy and lots of puddles. Also stopped to help someone who had fallen over. Forgot to use my blue inhaler before I ran which made the run rather uncomfy breathing wise, I have a lovely wheeze now 😢. However nice run on a beautiful sunny day! Now to have more sleep before night shift. 😴😴

  • The salad bowl method🥗

I think the plate method is an awesome tool to help people portion out their food and make sure they're not overdoing it in one area and not getting enough in another.

This holds true for salads too. You want to build a well-balanced bowl, so that you end up with something filling and delicious while getting a variety of nutrients. And let's face it, people need to eat more salads. Not as a side, as the main dish!
➡️STEP 0
Get a HUGE bowl! If you don't have a salad bowl, use a mixing bowl. Don't use a little soup bowl. It will not be enough and you will get hungry and probably hangry. I know from experience.
➡️STEP 1
Load it up with those leafy greens. Try to get 2-3 cups worth in there.
➡️STEP 2
Non-starchy vegetables are next. Try to get 1/2 to 1 cup worth of these.
➡️STEP 3
Time for the starchy veg and the high protein sources. These are the powerhouses of the salad. They not only are going to be a main source of the calories (aka energy) but also add a whole other layer of flavor to the salad. Add 1/2 to 1 cup.
➡️STEP 4
The tastiest step. The fats that seal the deal. Fats aid in the absorption of nutrients but they are also calorie dense (9 Cal per gram) so you don't want to over do it. Fats can be in the form of a dressing like tahini, or simply nuts and seeds sprinkled on top for some added crunch. Try not to use more than a couple Tbsp in dressing form, and no more than 1/4-1/3 cup of nuts and seeds. Of course, it does depend on your health goals and whether you're in a calorie surplus or deficit.

  • The LA Marathon is less than 24 hours away and I’m ready to hit these streets I’ve come to know so well. I celebrated my 7th year living in Los Angeles this week, the longest I’ve ever lived in one place, so this one will be very special for me!

The training regimen for my second marathon was more detailed this time around. Runs were tailored for pace and I’ve become a better student of the game.

New toys this time include my Garmin Forerunner 235 which has been a necessary tool in tracking runs, keeping pace, and monitoring heart rates. 
I had a bout of bronchitis that sidelined me for two weeks and after that, I was left playing catch up my whole training. I tried some new recovery methods including cupping, infrared therapy, and yin yoga. Ive been using a CBD balm and essential oils mixture to keep my hamstrings in check. I’m in my 5th week of acupuncture to help deal with my chrondritis and it’s definitely helped with breathing during my runs.

All in all, my legs and head are set for a completion time of 3h30min and what an honor it will be to finish in my city!

It wasn’t an easy one, but it was definitely worth it. In the before picture I was extremely body conscious and believed because I was vegan that I could eat whatever and it was okay. Then I woke up, looked in the mirror and didn’t like what I saw looking back at me...so I decided to change with some help from an online program.

I cut out almost all processed foods, didn’t count my calories, ate whole plant based foods and saw drastic changes. Not only to my physical body but to my mental health and spiritual wellbeing as well. Shortly after the after picture was taken it became apparent to me that I could help others do the same. That’s what started my journey to become a certified holistic nutritionist. To inspire others to be as healthy as they can be. Everyone’s journey is going to be different but I can help guide you along the way ☺️

That is something that we share together in our accountability group. Showing up daily and being there for one another. Some days are easier than others but together we push through.

  • This is from last night. Sitting on the couch with an ice pack around my collarbone and already taking painkillers for the last 24h. 
During last Sunday's marathon fall I initially thought to only bruised my knees but turned out I also damaged my soft tissues around my collarbone. From Midweek it started to get really painful and I struggled to cycle to work or do any sort of rotation etc. Went to the doctor's, taking painkillers for the next few days with strictly no running, swimming, cycling etc and just some rest. 
On the bad side I will miss out on a race this weekend that I really like and the plus side i won't have tired legs all day long on Sunday and can actually enjoy the day with partner + family. 
So if you have an injury (small or big) give your body and mind the rest it needs. Otherwise you will carry it with you for a long time!

What a ferocious windy run!  Was attempting a regular run with a feel of tempo, but the wind decided otherwise.. Had to detour so many times, to avoid running against the wind. Fought that wind so hard to run the last two miles the fastest🙌🏾 Details in my stories.

There are so many lakes, coves and inlets to choose from. Rarely a boat in sight, no dangerous sea creatures, clear and warm water, a swimmer’s paradise ✨
Decided to take a break from running today, legs are still fried from yesterday’s peak adventures. Took this opportunity  to explore this private little area called Bob’s Cove.
Last day in Queenstown tomorrow and then it’s back to Auckland before flying to Australia 🏄🏼‍♀️🤙🏻!
