  • Slurpilicious homemade noodles in mushrooms ginger sauce ‘香菇焖板面’😋Save this simple recipe for a perfect satisfying meal on cold weather days. Have a great & safe Tuesday, friends🤗
⁣
Recipe (yields 3-4 servings):⁣⁣⁣
🌱Noodle ingredients:⁣⁣⁣
~ 2 cups all-purpose flour⁣
~ 3 tablespoons aquafaba (chickpea water)/more ice water⁣
~ 1/4 cup + 2 tablespoons ice-cold water⁣
~ 1/4 tsp salt⁣⁣⁣
⁣✅Place all ingredients in a bowl & knead (with hand) into a smooth dough (mixer works too). Cover with a damp paper towel & let it rest for 30 minutes.
✅Divide dough into 4 equal parts.⁣ Using a pasta machine, run one dough through a dough thinner a few times, then change settings to cut. Cut dough into long noodles & coat noodles well with flour to prevent from sticking. (If not using a pasta machine, roll each dough out thinly, then cut the pasta to your desired width)
✅Bring a pot of water with a pinch of salt to boil & cook noodles until al dente, about 3 minutes.⁣⁣
⁣
🌱Other ingredients:⁣
~ 1-2 cups veggie stock⁣
~ 1 cup chopped cabbage/any veggies⁣
~ a few caps of softened Chinese mushrooms, sliced⁣
~ 4 slices of ginger, 3 cloves garlic - sliced⁣
~ 1 tablespoon soy sauce⁣, 1 tablespoon stir fry sauce (homemade recipe on highlights)⁣
~ oil, toasted sesame oil, salt to taste, cornstarch slurry (optional)⁣
⁣✅In a heated non-stick pan with 1 teaspoon oil, sauté ginger then mushrooms until lightly brown over low-medium heat. Continue to sauté garlic until fragrant & season with salt/soy sauce. Then, add in veggie stock, sauces & bring it to boil.
✅Add in chopped cabbage, turn heat to low & let simmer until cabbage is fully cooked through (I like my cabbage a bit raw for the crunch). Season accordingly to your preference. For a thicker sauce, stir in the cornstarch slurry. ⁣
⁣✅Before serving, toss cooked noodles in sauce until well coated & season with a drizzle of toasted sesame oil. Enjoy😋

I had leftover potatoes from my Malaysian Chicken Curry (recipe to come), spinach in the fridge and free range eggs from the farmer’s market. All coming together in @originalcupnoodles Nissin Demae Tonkatsu Black Garlic Oil Noodles. I love the black garlic oil 🧄 in this, it adds so much depth to the flavor. Vorsicht, the noodles cook real fast and the last thing you want are soggy noods. Like everything I make, I would sprinkle some fried shallots on top for the final touch and presto, a fancy ‘non-fancy’ noodle soup meal 🥰

  • Homecooking— I love cacio e pepe, I love how 4 or 5 simple ingredients (EVOO, cheese, black pepper and pasta) can come together to make a humble yet satisfying dish. How the two main components, while pungent in their own right, complement instead of overpower each other. Today’s cheese proportion is my favourite thus far— 3 parts  Pecorino Romano vs  1 part 24-month Parmigiano. Black pepper on its finest grind because you want its taste but not it’s bite. Very little salt was used in the pasta water because both the cheeses can be quite salty. And I’ve used Fusilli Lunghi Bucati because it is thick and has quite a bite. My favourite pasta for C and P is actually Pici but I can’t find it in singapore.

  • Woke up to a cool morning, the best weather to enjoy @malaramenmatsuri.sg Japanese-style mala ramen! Located conveniently along Tanjong Pagar Road (stone throw from Tg Pagar train station), the outlet features Mala ramen – choose from kway teow, ramen or glass noodles and your desired level of spiciness and Sichuan peppers with free noodle upsize.

Both the chili oil and chili paste are all cooked in-house; using more than 30 selected herbs, the special broth is high in nutrition & has body detox effect. I chose level 1 for Sichuan peppers (‘Ma’) and spiciness (‘La’) with glass noodles; the spice level was manageable. Love the combination of glass noodles with various ingredients and flavorful broth. Slurp slurp!

I feel like I have tried most of the Char Kuey Teow's in the UK... If you look back on my feed, find out how many times I've tried this noodle dish! This is from Glasgow's 2000 Mamak, located right next to Cowcaddens subway station. I also tried another noodle dish - Wat Tan Hor - flat rice noodles in egg gravy. It is a popular Malaysian noodle dish that features flat noodles submerged in a very thick and smooth egg gravy, accompanied by some prawns and pork. Delicious!💯⁣⁣

We tried their pre-theatre meal and ordered crispy pork belly and shrimp dumplings (har-gow). TAG your eating buddy!⤵
