76/200 - Norway 🇳🇴 This was a joint cooking effort and eat well we did! Kristin came up with menu that fit into Norwegian Christmas...
1. Jarlsberg cheese & Norwegian Crispbread. Nice app to start things off.
2. Christmas Cabbage with Bacon. Combine this with caraway seeds and you have yourself a nice side dish.
3. Kalrabistappe (mashed rutabaga + carrots). This side also was made with nutmeg, butter, a splash of heavy cream, a dash of red pepper flakes and salt. Good stuff.
4. Norwegian Ribbe. This was the main dish, as it’s a traditional Norwegian Christmas dinner... a rib roast seasoned overnight with salt, pepper and cloves. I scored the top of it and that made for a delicious crust!
5. Lefse. This is said to be the most beloved of all Norwegian foods. It is riced potatoes, heavy cream, salt, sugar and butter. Kris prepped this overnight and saved the day rolling these out to be made on the griddle. Served with some melted butter and sugar on top, this was an excellent dessert to close things out!
Norway gets the #26 spot out of 76 country meals so far 😃

The morning I took this one, I was planning to head out to Hillesvåg and then to Salhus for a knittery kind of day. But as I walked to my bus stop, I caught sight of Bryggen across the wharf and couldn’t bring myself to leave my neighborhood - it was my last day in my beloved Bergen, and I felt a sudden need to just be in it for those final hours.
I’m still on Norway time (getting back to Texas was a bit of an ordeal, and no, not only because I jammed ten pounds of @freia_norge into my carry-on tote) and it seems hard to believe I just spent a week in my most very favorite place, and that it’s over so soon. I miss it so much already, I’m ready to head right back - but sadly for my pining heart, it will be 2021 before I can squeeze in another trip. Still, Bergen, we’re not done with each other, you and I. The pieces of my heart that I leave behind on every visit, one day we’ll reassemble them into a whole - on your side of the world. My last visit to Flam was made a few days before Christmas in 2017. The motive of the trip is to see snow and the winter as I have not had a real winter in the last few years in UK. Unfortunately, there is nearly no snow down in Flam and the fjord and I experienced the most miserable days in Bergen as it rained so heavily. I was literally soaked in rain and water for two days and I broke two umbrella due to the bloody wind. The only chance I can see the real Norway winter and the snow is when I was spending a short transfer stay at Myrdal station before heading to Flam. It snowed so strong that day and I have not seen such strong snow for last 10+ years. I was actually quite thrilled about the snow and the white world there at that moment and I told myself that one day I want to return to stay in the village near Myrdal and jumped in the thick snow like what I did in childhood. ❄️ #Norway#myrdal

Pssssst, it's been 10 days since I posted...and it's literally been that manic! I haven't had any time to sit on Instagram and the only reason I am now is because I woke up in the middle of the night and can't get back to sleep!
But, the fact I've had no time is a good thing, being busy is fun but....I head back to ireland tomorrow and I'm looking forward to slowing down and just doing a lot less 😋
