Carrot and coriander soup with homemade olive bread rolls for dinner tonight. I freaking LOVE this soup. If the word ‘wholesome’ had a taste it would be a close call between this soup or a lentil stew. Anyway, this is SO simple to make (serves 2).
1onion, 6 carrots, 1small potato, thumb size piece of ginger (this is ESSENTIAL), some chilli flakes, a handful of fresh coriander and 1/2 litre of veggie stock. METHOD:
Fry your onion, chilli flakes and ginger in a little oil on low heat until onion has caramelised. Next add both your carrots and potatoes to the pan (the smaller you chop the veg the quicker it’ll take to cook). Give everything a stir and cook the veg for a few minutes before adding your stock and coriander to the pan. Simmer until the veggies have cooked (you should be able to put a fork through the veg easily) and then you’re ready to blend everything up! Feeling refreshed and renewed after a few weeks of takeout and pre-made meals. I was pretty burnt out on cooking for the book, but just a week or two of a nice break and so many awesome veggies at the farmers market got me all excited again. I feel like this applies to so many things! If you’re feeling burnt out, just take a short break and come back to things. Often it will be better than before!

East Brunswick Recreation is hosting a children’s concert June 27th at 7pm featuring Mr. Ray! Free Face painting, crafts, plus pretzels, and Maple Magic cotton candy to the first 150 guests. Our Parks and Rec staff work hard to bring so many wonderful events to our community.
I love granola bars. They’ve always been a favorite quick go-to snack for me and these little guys from @madegoodfoods are my absolute favorite brand ever now.
They’re made in a facility that is dedicated to be free of: tree nuts, peanuts, fish & shellfish, wheat & gluten, dairy, soy, egg, and sesame. Their granola bits are school safe, have nutrients that are found in 1 serving of vegetables, and are certified vegan.
As someone who has an allergy to some things on that list, it is so satisfying and safe knowing that I can happily indulge in one of my favorite snacks with no worries of cross contamination!
My favorite flavors so far are the chocolate chip, strawberry, and chocolate banana, but I can’t wait to try some of the others! Scroll left to check out the ingredients for the chocolate chip flavor!

I had a really great, full day with the bebe today, spent mostly outside exploring in the heat and the sun. Naturally, I’m exhausted, so dinner is extra simple again. When is it not, though? One of my favorite new freezer editions are @drpraegers chick’n tenders in either buffalo or bbq flavor. These are the only “breaded” faux meat option that I can find in my area that are allergen-friendly. The breading is rice-based and the faux chicken is primarily pea protein, deeming it soy free 🙌. Swipe for the nutrition facts! I love having a crunchy, fried texture to mix things up every now and then. I don’t think I’ve mentioned this, but I’m vegan for the animals 🐄🐖🐓 soooooo not everything I eat is the healthiest. Everything I eat helps the earth’s health, though. That counts for something.🌿🌎✨

Air conditioner is being repaired this week, temperature is that of the sun and had the oven running at 375 for a couple hours today. If these didn’t turn out... I just, I just don’t think I could have dealt with it 🤣 I ll plop this into the blog tomorrow!
