  • Peanut Butter Crack Bars 🥜🍫 such a quick + easy no bake dessert that is SO DAMN SATISFYING. And unlike most fudge, it’s totally dairy free, much lower in sugar, and even sneaks in some protein 😊

You can use any nut/seed butter you like. And if you skip the collagen and these are totally vegan (no need to sub for anything). And keep stored in freezer or fridge!

Peanut Butter Crack Fudge 
PB layer:
1 cup peanut butter 
1/4 cup @thrivemarket maple syrup 
2 scoops @ancientnutrition collagen (optional)
3/4 cup @bobsredmill almond flour 
Pinch of salt 
1/3 cup chopped @eschocolate dark chocolate .

Chocolate layer 
2/3 cup @eschocolate blackout dark chocolate, melted 
1 tsp coconut oil 
2 tbs peanut butter 
1 scoop @ancientnutrition collagen (optional)

Directions 
Line 9x5 bread pan with parchment paper. Mix together peanut butter layer ingredients until well combined. Press into pan. Melt chocolate, and stir in coconut oil and peanut butter. Pour over pb layer, then place in freezer to harden. Slice and DEVOUR! Keep stored in the freezer.

  • RECIPE! No-Bake Cheesecake Bites 🍰 vegan | paleo | gluten free | low sugar .

Cheesecake but without the cheese 🧀🚫or the baking! Only 6g of sugar per square! . .

INGREDIENTS▪️
Cheesecake Filling:
2 cups raw cashews (MUST be soaked for at least 4 hours in 3 cups of water--best if soaked overnight. Drain when ready to use)
3 tbsp full fat coconut milk (skimmed from the top of a can)
2 tbsp lemon juice
¼ cup maple syrup (sub with any syrup sweetener you’d like)
1 tsp vanilla
Pinch of salt

Crust Ingredients:
½ cup creamy nut butter
¼ cup coconut flakes
¼ cup sunflower seeds
1 tsp cinnamon
1 tbsp coconut sugar
½ cup coconut flour

Extra Ingredients:
½ cup melted dark chocolate

INSTRUCTIONS▪️
Cheesecake Instructions:
Place soaked and drained cashews in large food processor and puree until a smooth consistency is formed.
Add rest of ingredients and puree again until a smooth, silky mixture is made.
If you don’t have a high powered blender, it may take a couple minutes for it to get smooth, be patient!
Set aside while making crust.

Crust Instructions:
Incorporate all ingredients in small food processor and blend until a thick dough is formed.
Press into bottom of a parchment lined 8”x8” pan.

ASSEMBLE▪️
Pour cheesecake mixture over crust and freeze for 6 hours, or overnight.
Pull from freezer, take out of pan and cut into 1” cubes.
Pour melted chocolate over tops, store in freezer.
Enjoy!

  • Breakfast bowl this morning 😍 Packed with veggies after a few mornings in a row of lots of sweet. I can never decide which I prefer, always in the moment I’m thinking “oh I 100% prefer savory” but then change my mind whenever I’m eating sweet 😂🤷🏼‍♀️ -
But this morning I went with 100% savory and it was delicious! I love getting greens in first thing 👌🏻 I tossed everything on a bed of spinach so technically I guess this is a breakfast salad 🤔 Perfect way to start Friday! Have a great one! -

#breakfast details 👉🏻 1 egg boiled for 7 minutes topped with @traderjoes African smoke seasoning + 1/2 avocado + sautéed kale and mushrooms + 1 sweet potato sliced into rounds and coated with 1 tsp of avocado and baked for 30 mins at 425F. These sweet potatoes are leftovers from a few days ago so I just reheated them in the skillet with the other veggies #paleo #paleobreakfast #choosingbalance

If you’re looking for a fun new fall dessert to try, these chocolate pistachio apples are the perfect treat for you 🍂🍏🍫⠀

What you’ll need:⠀
1 - 1 ½ cups dark chocolate chips⠀
3/4 cup pistachios ⠀
3 green apples⠀
3 Skewers⠀
3 mini bows (superglue to glue them to skewers)⠀
.⠀
What to do:⠀
1 - Puncture the apples with skewers and set aside.⠀
2 - Place pistachios underneath some parchment paper on a cutting board. Crush into small pieces with a rolling pin. Set crushed pieces into a small round dish.⠀
3 - Melt the chocolate in a small sized pot until smooth (or microwave)⠀
4 - Dip the apples halfway into the melted chocolate.⠀
5 - Dab the chocolate-covered apple lightly in the bowl of pistachios until crushed pistachios fully cover chocolate.⠀
6 - Let cool for a few minutes. ⠀
7 - Repeat the apples until all 3 are done⠀
8 - Eat after they cool or let them sit in the fridge until the chocolate hardens.⠀
9 (optional) - Superglue cute bows onto skewers for a pretty accessory. ⠀
10 - Combine the leftover pistachios and chocolate in a glass bowl for a tasty treat later.⠀

  • Okay it's official. Summer is over. I had to break out my winter jacket this morning. We had a lot of eighty degree days in DC that I was LOVING. And now I have to come to terms with the fact that it's getting colder and darker but all I want are these enchiladas and a margarita and a 90 degree day! INGREDIENTS (serves 2)
⠀⠀⠀⠀⠀⠀⠀⠀
NICECREAM 
1 frozen banana
1/2 frozen raw beetroot ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
CONE
55g oat flour
15g agave syrup 
15g coconut oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀
METHOD
1. Blend banana and beetroot together using a high speed blender (@thermomixuk @vitamix) until smooth
2. Place in the freezer for 30 minutes whilst you make the cones. This will help the nicecream to thicken up for piping
3. Melt the coconut oil, and mix together base ingredients until doigh forms
4. Split the dough into 2 and press into 2 muffin moulds. Freeze for 15 minutes to firm up 
5. Use a piping bag to swirl your nicecream into the cone and decorate with toppings of your choice ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

I used my @thermomixuk for this recipe and it is working wonders!:
- Blend bananas and beetroot on speed 2 for 10 seconds, speed 3 for 10 seconds speed 4 for 10 seconds and speed 5 for 20 seconds.

First step is to forgive yourself! 🤗 Whether it was a day, an unplanned meal or a weekend, don’t beat yourself up over it. We’re all human, we make mistakes, and hey, it’s perfectly ok to enjoy yourself. As I always say, you’re only one meal away from turning it ALL around. .
Remember: no single meal will get you fit and healthy, and no single meal (or day of meals) will make you fat and sick. The worst you can do is adopt a “f*ck it” mentality and throw all your hard work out the window!

After forgiveness, get back to your normal clean eating and workout routine! No need to do endless amounts of cardio or a juice cleanse to “make up for it”. Rather, be kind to your body, fuel it and approach yourself with kindness. Check your language since it can actually color your reality.

These (and other) diets can require a lot of planning and significantly limit your food options when eating out. They can also trigger binges and food obsession as a result of all the off limits foods.

Same with counting calories. It’s a great idea in theory to track everything you eat to help you lose weight. In practice, accurately weighing and measuring everything you eat can be tedious and time consuming. It might also mean increased obsession and anxiety around food and calories.

Just because a certain way of eating works for weight loss or health IN THEORY, doesn’t mean it will work when implemented in the context of your every day life.

  • NATURAL SUNBUTTER RECIPE
No added sugar or oil

INGREDIENTS * 6 cups raw sunflower seeds
* ½ tsp Himalayan salt
* 1 tsp pure vanilla extract

INSTRUCTIONS

Cover unshelled seeds with salted water, using 1/4 to 1/2 cup of salt per two quarts of water. Soak seeds in the salt solution overnight. Drain off the water the next morning and pat the seeds dry to remove excess moisture. (You can also roast the seeds unsalted, by simply skipping the soaking process). Preheat the oven to 300 degrees Fahrenheit. Spread the sunflower seeds evenly on a cookie sheet or shallow pan and bake for about 30 minutes or until golden brown, stirring occasionally. The seeds will often develop a small crack down the center as they roast. Test after each stirring to see if the seeds are completely roasted by tasting. After roasting, remove seeds from the oven and allow them to cool completely. Then remove the shells!

Process the sunflower seeds a total of 25-30 minutes, stopping every 2 to 3 minutes or so to break down the clumped-up mixture and scrape the sides a bit.

After about 20 minutes, the seeds should start releasing their oil and the butter will finally relax and become creamy. From this point, you will want to let it run for 5 to 10 minutes until really smooth and creamy.

Now add the salt and vanilla extract and process for another minute

Transfer to a glass, air tight jar.

Enjoy!!!

This simple recipe uses oats and flour, because in all honesty I can’t use almond meal for every baked recipe on a uni student budget 😂 regardless, it tastes ultra dense, delicious and is full of fibre & healthy fats!⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
My favourite way to serve it is with yoghurt and some nut butter for added healthy fats + protein, creating a satisfying snack 🙌🏼 without further ado, here’s the recipe!⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1 cup flour (I used spelt, could sub wholemeal, try buckwheat for GF)⠀
• 1 cup oats⠀
• 1 tsp baking powder⠀
• 2 eggs⠀
• 2 ripe bananas⠀
• 4 tbsp coconut or extra virgin olive oil⠀
• 3 tbsp Greek yoghurt⠀
• 1/2 cup chopped walnuts⠀
• 1/2 cup chocolate chips⠀
• Optional: 1/4 cup honey/maple syrup if you have a sweet tooth!⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ Preheat oven to 180 C / 350 F (fan forced) & line bread tin with baking paper.⠀

If you’re looking for a fun new fall dessert to try, these chocolate pistachio apples are the perfect treat for you 🍂🍏🍫⠀

What you’ll need:⠀
1 - 1 ½ cups dark chocolate chips⠀
3/4 cup pistachios ⠀
3 green apples⠀
3 Skewers⠀
3 mini bows (superglue to glue them to skewers)⠀
.⠀
What to do:⠀
1 - Puncture the apples with skewers and set aside.⠀
2 - Place pistachios underneath some parchment paper on a cutting board. Crush into small pieces with a rolling pin. Set crushed pieces into a small round dish.⠀
3 - Melt the chocolate in a small sized pot until smooth (or microwave)⠀
4 - Dip the apples halfway into the melted chocolate.⠀
5 - Dab the chocolate-covered apple lightly in the bowl of pistachios until crushed pistachios fully cover chocolate.⠀
6 - Let cool for a few minutes. ⠀
7 - Repeat the apples until all 3 are done⠀
8 - Eat after they cool or let them sit in the fridge until the chocolate hardens.⠀
9 (optional) - Superglue cute bows onto skewers for a pretty accessory. ⠀
10 - Combine the leftover pistachios and chocolate in a glass bowl for a tasty treat later.⠀

  • Taking these last seven days off of resistance training has really made me realize how important recovery is.

Before this week, I couldn’t even remember the last time I really took a week off from lifting. Typically I’d take 3 days off and even after then I’d get back in the gym and destroy whatever body I was working, day after day with a rest day twice a week. Im not new to the gym. Ive been lifting for awhile and for me to feel sore after workouts that I am very familiar with, finding it hard to recover from workouts I did 3 days ago, and finding myself not improving much really forced me to take a break.

Since last Friday I’ve noticed: I’m much more lean and less bloated. In this case I know it’s because I’m less inflamed and swollen from constantly lifting. Plus, with not working out and burning as much, I’m less hungry, so Im not eating as much as I would if I crushed a solid 30 minute workout. I feel much more limber. I can stretch my hamstrings further than I ever have in very long time. Overall I’m less tense and I feel a lot better than I would’ve expected. I always felt that I’d feel like crap if I took this much time off from the gym. (Weird? Obsessive? Maybe.) I can only imagine how badly my body needed this break. This isn’t supposed to show case that lifting or working out in general is bad. But to show how important it is to listen to your body and allow it to recover. Being obsessed with working out and constantly beating yourself up in the gym with no recovery is just as bad as not moving your body at all. There’s a balance.

There are definitely negatives... I have way to much energy built up inside of me making it a lot harder for me to fall asleep. I have so much extra time on my hands that I don’t even know what to do with it. Even though I’m much leaner, my muscles aren’t popping like they used to (although keeping in mind you don’t loose all your muscle by taking a week off) but I definitely have been able to see them show through a little more, which is only motivating me more to get back in the routine next week.

  • We’ve got you covered for weekend breakfasts with these Paleo Fluffy-Crunch Maple Pancakes! 😋 Recipe below...
.
Ingredients
1 ½ cups almond flour
2 tbsp tapioca flour
1 tsp cream of tartar
1 tsp cinnamon
1 egg
¾ cup almond milk
1 tsp vanilla extract
1 cup Maple Pancake Paleonola, divided
1 tbsp coconut oil (for skillet)

Directions:
In a medium size bowl, add all the ingredients reserving ¼ cup of Paleonola for garnishing. 
Whisk together until you get a thick-ribbon batter. 
Heat a small pan over medium heat with 1tbsp of coconut oil. 
Once the pan is hot, scoop ¼ cup of batter onto the pan.
Let the pancake cook slowly and wait for the batter to start bubbling. Carefully flip the pancake over.
Once cooked all the way through, remove from heat.
Repeat with the remaining batter.
Enjoy these crunchy-fluffy pancakes stacked up with syrup and Maple Pancake Paleonola on top.

They say somewhere between 66-75% of people are actually lactose intolerant. Meaning there’s a lack of the necessary enzymes to properly break down and digest dairy products. ⁣⁣⁣⁣⁣

Feel like you chronically struggle with gas, bloating, diarrhea, digestive woes, acne, or period problems? Milk, cheese, yogurt, ice cream, and other dairy products could be a contributing culprit.⁣⁣⁣⁣⁣

If calcium, potassium, or protein are a concern for your kiddos, it’s actually easier to skip the milk and get these through fruits, vegetables, beans, and animal meat. ⁣⁣⁣⁣⁣

Carefully check labels. Some milks we saw had upwards of 12-23g of sugar in a cup!⁣⁣ We shared some of our favorite brands. Califia’s Vanilla Almond Milk is probably our all-time favorite choice.⁣⁣⁣

If you’ll notice, soy milk isn’t present in the list. Our Whole Foods actually didn’t even carry it! Soy seems a controversial food that may potentially fuss with hormones, so other dairy-free options like almond, pea, oat, etc may be safer bets (:⁣⁣⁣⁣⁣

• Check ingredients and try to shy away from gums and stabilizers. Carrageenan is a common source of digestive woes for many people, for example. Also look for as few ingredients as possible.⁣⁣⁣⁣⁣
• Choose organic, if possible.⁣⁣⁣⁣⁣
• Buying cow milk? Consider finding it raw, locally. Otherwise, look for milk from A2 cows (it’s easier to digest).⁣⁣⁣⁣⁣
• Sugar isn’t the devil, but neither you nor you kid needs to be drinking sugar water either. Opt for unsweetened or vanilla varieties, and check nutrition labels for options lower in added sugar⁣⁣.⁣

  • You’ll hear me say over and over how diets (for lack of a better word) like whole30 are not about weight loss, and I wanted to take a second to share my own #NSV (that stands for #nonscalevictory if you didn’t know).

Two summers ago, I was stressed AF, for a multitude of reasons that I won’t get into now, and my face started breaking out. I had never dealt with acne, even as a teenager, and now at 31, I just couldn’t get rid of it. It made my self-confidence plummet and I refused to leave the house without a full face of makeup (another thing I had never experienced before).
.
In addition to the stress, I was caught in a “treat yo’ self” cycle of ice cream and Sour Patch Watermelon and I just couldn’t get it together, even though I KNOW BETTER and I teach people this stuff. I mean, what the heck was wrong with me?!
.
Today is day 28 of my most recent whole30 and my skin is almost fully cleared (for the first time in a year and a half). The picture on the left doesn’t even really show how bad my skin got, but it’s one of the only pictures I have to compare because I hid behind makeup and filters.
.
Am I going to stay on the whole30 forever? Of course not. (It’s called the whole30 and not the whole365/24/7 for a reason), but committing to the program broke me out of that sugar cycle I was stuck in and gave me the confidence and the motivation I needed to clean up my act and make the best choices for my body going forward. And that’s what it’s all about. ✌🏼
