These crockpot maple chipotle chicken stuffed sweet potatoes are the perfect weeknight dinner. They are hearty, a little smoky and spicy-sweet. It’s such a tasty combo!
2 lbs boneless skinless chicken thighs
1 14 oz can crushed fire roasted tomatoes
1/4 cup apple cider vinegar
1/4 cup water
2 tbsp pure maple syrup
1 tbsp smoked paprika
1 tsp sea salt
1/2 tsp chipotle powder
4 sweet potatoes
8 cups greens (spinach, kale, chard, etc.)
1- Place all of the ingredients in crockpot in order listed above, except for sweet potatoes and greens. Cook on low for 6 hours or on high for 3 hours. You can also cook this in your Instant Pot for 20 minutes.
2- Preheat oven to 425° F. About 45-60 minutes before you want to eat, get the potatoes in the oven. Prick each potato with a fork a few times. Then, line a baking sheet with foil and place the baking sheet on the bottom rack (this is just to catch any juices from the sweet potatoes as they cook). Place sweet potatoes directly on the rack above the baking sheet. Cook for 45-60 minutes, until the potatoes are tender.
3- While potatoes are cooking, shred chicken in crockpot with two forks. Let it soak up even more of the sauce while the potatoes finish.
4- Once potatoes are tender, remove from oven and carefully slice in half lengthwise. Use a fork to mash the potato a bit. Scoop the shredded chicken mixture into the baked sweet potatoes and serve on a bed of greens.

On the left is probably the most embarrassing picture of me that I still allow on social media 🙈 It’s from July 2016 when I was at my heaviest (240ish). My family was visiting me and we went to a Yankee game. My boyfriend took this pic of me and my nieces and I was mortified when I saw it. I had no idea I took up that much space. I just don’t remember being that big. Logically it makes sense but it’s still a tough thing to confront, even when I’m just remembering it. Fast forward 20 months later and I’m down 108 lbs. and well I don’t take up nearly as much space! I still struggle with seeing my current self clearly but it helps to see how far I’ve come, especially when I can “recreate” certain moments like this.🌺

Truth is, we can’t decide where we lose our body fat. Everybody has their trouble spots, and for a lot of people, belly fat is a big one. So while you can’t spot reduce—doing sit ups, crunches, etc, are useless for getting rid of stomach fat, so you can stop doing those, right now—you CAN work to bring down your bodyfat overall. -- - 👉Here’s what I recommend. Start by cleaning up your diet. Get rid of the sugar and processed food. Load up on fruits, veggies, lean protein, and lots of water. That’s step one. After that, focus on short, high intensity bouts of exercise. Use resistance training and metabolic conditioning. Also, do as much walking as you can. Brisk walking is one of the ultimate secret weapons for getting rid of stubborn fat, especially when done in conjunction with a higher intensity exercise regimen. -- - ☝️Stress and sleep are the other major factors. Belly fat is often referred to as “stress fat” for a reason. Poor sleep and an overly nervous or excited lifestyle can attribute to fat accumulation in your lower stomach, love handles, etc. So be sure to have a good sleep hygiene protocol and ways of relaxing throughout the day. Even just the occasional cat nap would be a good idea. 🤧Meditation, too, can be quite beneficial. -- - ☝️Lastly, be patient. It’s always the trouble spots that take the longest to go away. Keto Onigiri. Dudes, let me tell you about Onigiris. My friends from Japan recently showed me how to make this very delicious food item and they made it look super easy! Lol Onigiri from what they told me is a very popular lunch or even breakfast item in Japan. Not to be confused with sushi. Onigiri 🍙 is eaten on the daily while Sushi is an occasional treat or made/bought for special occasions. I was like “What?! You mean to tell me ya’ll don’t eat sushi errrrr day?!” Anyway, lets just say I learned something new! Lol Growing up in Hawaii having a good number of Japanese friends and the Japanese being one of our biggest Asian groups that visit Hawaii, I thought I knew a lot about their culture I was wrong. Lol.
Anyway, I tried y’all I did try. For all my Japanese keto friends don’t laugh the second one I had a hard time shaping it into a triangle I was like “Let’s shape it into a ball that might look nice!” Lol

Pork Chop Loin with some greens. Always love to create simple recipes. Drizzled some olive oil with pepper and a squeeze of lemon on the greens. If you have a cast iron skillet, squeezing a juice of lemon on a skillet helps with iron absorption. Lemon contains Vitamin C. I have had iron defienecy in the past and this method does help. Just something to know 😉

Recipe: 8 medium mushroom fiats
60mls (1/4 cup) olive oil
garlic cloves, crushed
1/4 chopped fresh continental parsley
1 tablespoon fresh lemon juice
Salt & ground black pepper, to taste
Preheat grill on medium-high. Line a grill tray or baking tray. Place the mushrooms on the lined tray.
Combine the olive oil, garlic and 2 tablespoons of the parsley in a bowl. Drizzle the mushrooms with the garlic oil.
Place under preheated grill and cook for 4-5 minutes or until tender. Sprinkle with remaining parsley, drizzle with the lemon juice and season with salt and pepper

Tomorrow will mark one month since starting my new medical eating plan to control my Autoimmune issues. During this month I have been able to go to Zumba, sleep, and work all without Arthritis pain. During this month I’ve seen all of the swelling in my face, stomach, neck and limbs due to my Angioedema go down to normal. During this month, I have been able to repair my relationship with food. Ever since all of these health problems started (2013) I’ve been on medical diet after medical diet. And I say diet because that’s what they were. Restrictive, labor intensive and unrealistic in the long term. Will power was never my problem. I always stick to whatever my doctors tell me to do. However with each diet not only did my existing symptoms get worse, but I had new problems cropping up. This past month has shown me that eating the right foods for MY body can help my body heal. I have said multiple times this month “My body is working! My body is working!” For the past six years I’ve felt like I had no control over my health or my body despite medication and diets. I have control again and for the first time since 2013 I truly feel at peace with my body... and that’s the best feeling in the world. 💕
It’s been a while since I whipped up one of my Paleo friendly loaves 〰️ we had a morning tea at work today so I made this loaf for the team.
Banana & Coconut 🥥🍌 Ingredients〰️
3 free range eggs
3 ripe organic bananas
1 tsp cinnamon
2 tbsp dedicated coconut
1 tbsp pure maple syrup
1 tbsp chia seeds
1 cup gluten free flour
1 cup almond flour
1 tsp baking powder
Add protein of choice if wanted. I didn’t for this one.
Mash the bananas up then add the eggs and combine. Add the maple syrup. Mix the dry ingredients then add to the wet mixture.
Line baking tin with baking paper and can add some coconut and coconut sugar to the top.
Bake for 40 mins at 180 then let it sit for up to 5 minutes.

🍯🍫 INGREDIENTES PARA LA BASE 🍫🍯.
•1 Paquete de LALEMOM MIX sabor Vainilla.
•60ml de aceite de coco.
Coloca todo los ingredientes en un recipiente, mezcla muy bien, asegúrate que no queden grumos, debe quedar una masa compacta igual que la de las galletas. Aplana esta en un molde de 10” redondo o cuadrado, previamente le debes haber colocado un poco de aceite o papel encerado y un poco de aceite también, cuando coloques la masa, está debe quedar uniforme, la colocas al horno por 10 min a 350*C, lo retiras del horno, dejas enfriar y procedes al colocarle el paso 2.

Happy Thursday!! 🙌🏻 Very late recipe post in the week, but this recipe came to mind when I got my Friday Freebie from the @registereddietitianapproved! I was looking at the different pastas and substitutes. The edamame spaghetti caught my eye because I love edamame, I had never tried it as spaghetti and also because of it’s nutritional value! Since edamame is included in a lot of Asian like recipes I decided to prepare a Spicy Ginger Edamame Spaghetti with Veggies and Chicken! 😋
Ingredients: - 4 boneless skinless chicken breasts - 1 box (8oz) of @explorecuisine edamame spaghetti - 1 1/2 bag of @heb broccoli slaw
- 2 cups of @heb kale
- 2/3 cup @bigtreefarmsbali coconut aminos
- 3 tablespoons sesame oil
- 3 tablespoons rice vinegar - 2 teaspoons @mccormickspice ground ginger
- Juice from 1 lime
- 2 teaspoons @mccormickspice red pepper flakes (adjust to preference)
- 1 teaspoon minced garlic (adjust to preference)
- Sprinkle with sesame seeds (optional)
- Salt and pepper
- @chosenfoods Avocado oil
- Preheat oven to 400F - In a medium to large pot boil 8 cups of water, reduce heat and place the edamame spaghetti for 3-5min, then drain - In a small mixing bowl combine all the spices, coconut aminos, rice vinegar and sesame oil
- Season the chicken with salt and pepper and place it in the oven for 25-30min depending on the thickness of the chicken breasts. You can cook them on the stovetop if you prefer
- In a large skillet heat some avocado oil and then add the kale. Let it wilt, then add the broccoli slaw, mix well. Add the marinade and mix everything. Place the spaghetti in the skillet and make sure it gets well coated with the marinade. If you desire, add the chicken to the mix.
When everything is well cooked serve immediately or save for later. If you’re eating it immediately, sprinkle with sesame seeds or peanuts! Enjoooy! 😋😋

Who says airplane food has to suck? It doesn’t…well, at least the food you CHOOSE to eat on the airplane (and in the airport on your layover) doesn’t have to suck with a tiny bit of advanced planning.
Why settle for tasteless barely-food loaded with chemical additives and other yucky ingredients that you know will leave you feeling less than your best on what’s already a long and stressful journey involving international overseas travel? Figuring out a doable strategy to bring my own food with me on these kinds of trips was a complete GAME CHANGER.
True, it does require doing some cooking the day before your trip (or further in advance if you’re really on the ball). But it can be as easy as cooking yourself a normal dinner the night before your trip, then immediately storing the leftovers into separate food storage containers ready to grab and go the next day. I found a cute lunch tote that does a good job of keeping my food cold for hours on end with a couple ice packs while at the same time being lightweight enough to toss into my oversized tote bag I use as my personal item without adding a ton of extra weight and bulk.
I find this extra bit of effort so worth it especially on long overseas flights traveling across multiple time zones that already taxes my system enough as it is…no need to deal with stomach issues, brain fog or fatigue as a result of eating questionable processed foods on the plane. I do usually request the gluten free meal on the flight and eat whatever I can from the meal they serve...usually I at least get some salad and fruit out of it to complement my own meals.
Nothing feels more amazing than diving into your own home cooked truly DELICIOUS meal when everyone else is eating cardboard. I suspect that the balance of quality protein, healthy fats, low glycemic vegetables and a little bit of starchy vegetable to round things out helps promote a greater state of relaxation on the flight, helps me sleep better despite uncomfortable conditions, and have greater energy when I arrive to my final destination.

Trying to eat up my favorite summer recipes before fall. These Grilled Garlic Shrimp are my go-to grilling dish this summer. It's so easy and you only need olive oil, garlic powder, salt, green onions and obviously shrimp.
My favorite part is that you don't even have to peel the shrimp beforehand. Grilling it with the shell on actually keeps it from drying out so the shrimp is extra juicy and yummy.
