Apple & cinnamon muffins 🌸 ready for the working week!
Makes 10 muffins 🌸 Ingredients
1 cup almond meal
1/3 cup oats
1 apple ( grate 3/4 & 1/4 slice thinly for the top)
1 apple to puree (pill & boil in water & mash when soft)
1 tsp vanilla extract
1/4 cup water
1 tsp baking powder
2 tbsp coconut oil
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp honey or mayple syrup ⚠️ Method
Pre heat the oven at 180 dagrees & lightly grease the muffin tin with coconut oil.
Combine all wet ingredients in a bowl & then add all dry ingredients stir to combine.
Scoop 1.5 tbsp in each whole and place a slice of the apple on top.
Bake for 20mins & leave to cool for 10mins untill flipping them onto a wired rack.
