  • New project. We are getting more peppers than we can eat so will now be fermenting them. The lemon drops will make a great hot sauce. The banana peppers and poblano peppers will make a great mild green chili sauce. 🙂

  • PEPŘOVÁ OMÁČKA k hovězímu steaku

Ingredience:
30 g másla
1 cibule
1 stroužek česneku
40 g nakládaného zeleného pepře 
125 ml vývaru
150 ml smetany 31 % 
150 ml smetany 12 % 
Postup:
Na středním plamenu rozpustíme na pánvi máslo a přidáme najemno nasekanou cibuli. Smažíme za stálého míchání cca 5 minut doměkka. Přidáme prolisovaný česnek, zelený pepř bez nálevu a minutu mícháme. Nakonec vlijeme vývar, obě smetany a zamícháme. Přivedeme k varu, poté stáhneme plamen a necháme probublávat asi 10 minut, dokud se objem nezmenší na půlku.

B: 2 g 
S: 5 g 
T: 18 g 
V: 0 g

  • Choco Lava Cake

What you need: * 15 ml (1 tablespoon) Tabasco® Habanero Pepper Sauce
* 227g (8 ounces) bittersweet chocolate squares
* 220g (2 sticks) unsalted butter
* 4 eggs
* 100g (1/2 cup) sugar
* 60g (4 tablespoons) unbleached plain flour
* 1 teaspoon ground nutmeg
* 1/2 teaspoon ground cinnamon
* pinch of salt
* 45g (3 tablespoons) icing sugar, sifted for finishing
* Chili for plating (optional)

What to do:

1. Preheat the oven to 350°F/180°C
2. Grease 8 (4-ounce) ramekins (or a muffin tin, if that is all you have at 3 the station). LAVA CAKE
1. Chop chocolate squares and butter into small cubes; melt in a double boiler, stirring constantly until melted. Remove from the heat and set aside.
2. In a bowl, whisk together eggs and sugar.
3. Add TABASCO® Habanero Sauce to chocolate sauce mixture. Stir chocolate TABASCO® mixture into egg mixture; add flour, nutmeg, cinnamon and pinch of salt. Stir until blended.
4. Refrigerate while preparing the jalapeño pepper garnish.
5. Remove cake batter from the refrigerator. Pour batter infused with Tabasco Habanero Sauce into ramekins or muffin tins, filling 3/4 of the way. Bake 13-15 minutes (the top should be soft in the middle and cake-like on the rim). Sprinkle the top with sifted confectioners sugar, top with jalapeño pepper and serve immediately.
