Another extremely popular pizza topping, and my personal favorite.
How ever, many haven’t seen many mushrooms outside of cremini/buttons/baby bells, shiitake, Chanterelles or morels.
While we have used all of the above on pizzas, In fact our fungus among-us pizza has some of these, we love to discover new flavors and ingredients.
On pizzas we have used: oysters(1st pic), lions mane(3rd&4th pic),pink oysters (5th pic), porcinis, shiitake, creminis, and chestnuts(last pic).I think lions mane mushrooms are now at the top of my favorite for pizza toppings. Lions mane can be a great substitute for meat in just about any application and amazing for your brain. Honestly, all mushrooms are pretty underrated for their amazing qualities and differences in flavors.
Y’all know us and know we are all about sourcing as locally as possible me. Most of our mushrooms came from @tangerinemoonfarms , another local female farmer full of mushroom knowledge. (Check back Friday for Farm/Farmer Friday!) 📸pc: @schotsch

Bella Gusto Urban Pizzeria, (@bellagustoaz) serves some delicious rustic Italian inspired food and Napolentana style pizza. Gnocchi Bolognese - BG gnocchi, veal ragu, herb ricotta, arugula, served with Carletto Montepulciano wine paired nicely. This was my favorite dish of the night. Great flavor in the ragu and herb ricotta was perfect. You could taste the veal and care that went into this dish.
Mini Burrata - wilted kale, apricot jam, rosemary balsamic glaze; served with Flor Prosecco. The rich creaminess of the Burrata complimented the nice fruitiness of the apricot jam and made for one great tasting bite.
Amazing Grace - cinnamon-honey mascarpone, wine poached pairs, salted-caramel. The dessert pizza was heavenly and was so delicious, not too heavy, perfect finish to the evening. •
