The toast topped with spicy hummus + #avocado ribbons 🥑 + roasted harissa spiced #chickpeas + roasted sweet potatoes + sprinkled with a little dried parsley + pepita + and topped with a couple sprigs of mint. #realandvibrant
When I saw this recipe I immediately knew, from the ingredients listed, that this would be a dish I'd enjoy making and eating! Packed full of veggies, coated in a delicious marinade, topped with crispy grated tofu, cashew nuts, sesame seeds and fresh coriander 👌🏽 Korean Japchae Noodles with Crispy Tofu - @antoninaparker recipe - I used sweet potato glass noodles which were delicious!
Sweet potatoes and lentil curry are a match made in heaven. I love using lentils as a protein, since they’re not only extra nutritious but also very filling. The orange colours in this bowl are also super visually satisfying as well. This week has flown by and we’re already at Thursday. I’m so ready for the weekend. 😴 We have plans to visit @plantaqueen on Sunday and we’re hoping it’s as good as it looks! Will keep you posted.
Today’s not about me- but I’m sharing something that my hubby struggles with and I’m sure others can relate to: eczema. About 3 years ago my hubby started getting really bad hand flare ups to the point of it being unbearable. He saw 300 million different dermatologist, tried the creams, and everything else under the sun. It wasn’t until we started experimenting with dairy-free, plant based protein powders that he started to see it clear up and the flare ups 100x less severe. Before he was using a whey & dairy based protein powder every single morning & his flare ups would get so bad his hands would literally bleed. .
So we are constantly trying new plant based proteins that taste great & are packed full of all the nutrient he needs and craves. Easy af snacks - zucchini chips. Cut, season, bake, munch. So bomb by itself, or dipped in hummus or salsa.
You can even get creative with how you season it. You can do a barbecue flavor with liquid smoke, date syrup, and a homemade bbq seasoning. You can do salt and vinegar with sea salt, lime juice, lime zest. You can do sour cream and onion with tahini blended with onions, lime juice, and herbs. You can freestyle like I did with these - sofrito and whatever seasonings were on hand. They turn out great, and are a great alter@stuvevyo potato chips and are healthier/lower in carbs than burro banana chips.
🥒 Slice them thin and even, and press with paper towel to remove moisture.
🥒 Coat zucchini with your desired seasonings + oil. .
🥒 Place on parchment lined baking sheet and bake in either a 350 oven for 10-20 minutes, or in a 225 degree oven for about 2 hours. Baking it slower and longer yields a much crispier chip, but the first version is great for a quick snack too.
🥒 Watch your chips to make sure they do not burn. All ovens are different. If you notice they are getting brown too quickly you can loosely cover it with aluminum foil.
🥒 Once crispy, ENJOY!
Chickpeas are in their best when transformed into a falafels ! Ultra crispy on the outside, moist and fluffy on the inside, everybody loves them and the best part is breaking open the golden brown balls to reveal the dazzling green insides!
