DECONSTRUCTED CHOCOLATE MUGCAKE PARFAIT 🤩🍫🌈

Ok. This breakfast was heaven. .
Good morning, my beauties ✨ after another full on week (despite it only being Wednesday), this breakfast was the PERFECT pick-me-up to get me through another day. I’m not going to lie I’ve been a bit stressed n all over the place, but at the same time it’s only made me push myself to really take a step back and be grateful for all that I have, and I couldn’t ask for anything more 💛 I’ve been really trying to stay present, really trying to live in the moment, and really try to make every second worthwhile as I am determined to not let this busy-ness get to my head. A few ways I practice this are:
1. Waking up in the morning and mentally listing down all that I am grateful for, what I choose to let go of, and what I want to focus on.
2. Journalling and affirmations
3. Becoming aware of my subconscious and noticing my track of thoughts. I’m becoming aware of how I am thinking, I can catch myself when I’m thinking negatively and practice a more positive mindset ✨

🍫 Back to brekkie 🍫
I made my super frothy and DE-LICIOUS (seriously) mugcake by mixing 1/2 cup of oats, 1 and 1/2 tbsp of cacao powder, and the last of my @thatprotein powdered flaxseed and pumpkin seed with soy milk + water. I microwaved this for 1m30s and in the bowl, combined it with coconut yogurt, 1 banana, @rawpressco raw granola, cacao nibs, and @sesame.kingdom sf choc tahini 😍 one of the best bowls I’ve made in ageeees 🥰

There was a time I found myself saying “sorry” way too often. I thought I was “polite” but after some self-reflection, I realized deep down I was using being “polite” and “down to earth” as an excuse for people-pleasing.
Don’t get me wrong there are so many things that we need to apologize for. It’s admirable to genuinely own the mistakes that we’ve made or when we believe we have hurt someone else.
.
But sometimes we apologize for things beyond our control or what someone else might not like about us or when someone else actually is in the wrong or for life choices we have every right to make.
This weekend as you interact with other people, I challenge you to be conscious of how much you apologize explicitly or implicitly for things that you should never apologize for. I’m curious, what do you apologize for the most that you don’t need to?!

True story: I USED TO BE AFRAID OF BREAD. For so many years I avoided bread like the plague & I feel like most of us can relate to this on some level for some time in our lives. But, when done right, bread can be a perfectly healthy addition to ones diet, especially when based on QUALITY. A good sprouted, whole-food based bread, when tolerated, can be perfectly healthy!

Although I stick to a mostly grain free diet, because it makes me feel best, I like to treat myself to some comfort food like this every now and then. Woke up feeling festive & nothing brings me back more than winter mornings & French toast sticks! Put a little spin on them & made them pumpkin spice & I couldn’t be happier 😍

All I did: dip slices of @littlenorthernbakehouse sprouted gf bread in a mixture of 1 flax egg + 1/4 cup almond milk + 2 tbsp applesauce + 1/2 tsp cinnamon + 1/2 tsp vanilla. Broiled until crispy, flipping every now & then. Removed from the oven, cut them into sticks, Rolled them in pumpkin spice & coconut sugar mixture, & then dipped them in an almond butter caramel sauce 😍

throwing it back to this vegan chili I made a few weeks ago because I could so use a bowl of this comforting winter stew while watching the game today. this recipe was super easy and didn’t take all day in the kitchen, which obviously makes it more appealing;) first one I’ve tried that turned out just like a regular chili, but I didn’t have the bloated guilty feeling after eating it. (snuck a few extra veggies in too) started with chopping a purple onion and some cloves of garlic. then I sautéed that in my pot with some olive oil. chopped up some red, yellow, and green bell pepper and added that to my pan along with some chopped celery. next I added a can of diced tomatoes and some vegetable bouillon. I let that simmer on medium high until my veggies were nice and tender. lastly I added my beans. I like thick chili so I added red kidney beans, black beans, and pinto beans, but you can cut down on those or add more water at the end for a less chunky consistency. I let that cook then added my spices to taste- garlic powder, salt, pepper, chili powder, turmeric, cumin, and ground mustard. (at this point you can add water until you reach desired thickness) then I just let that cook until everything was heated through and seasoned. also this recipe freezes great! I have had to sound like a broken record to myself. Repeating the same information, the same affirmations, the same gratitude and pumping the same ideas to myself daily to get to where I am today. Sure it’s not easy! It’s not always easy to even remember to work on your mindset let alone actually sit down and do the meditation work.

If you hear a lie enough times, you’ll eventually believe it as truth. But if you tell yourself the truth enough times, you’ll believe that. Repetition needs to happen. Repeat your affirmations every day whether you’re feeling great or at the lowest points. Yes it’s hard! But the outcome is change and if you want to change, then you must actually change. Our daily/weekly/monthly/occasional/moderated habits determine our futures, so make sure they’re good ones!

Another great race day ☺️ As always, the volunteers and support were amazing throughout the whole course. If you’ve never races this course I’d highly highly highly recommend! Got to run with my friend and her special guest in utero, which made today even more special.

It’s great to look back on life happenings and realize that even though hard times come up, we always find a way to work through them and be stronger for it and there will always been wonderful people in our life, like @erinreads_ 🥰 to cheer us on along the way. 🙏🏻 it helps when they insist on @spiraldiner dates to do so. 😏🍴👌🏻
