Recipe:⠀⠀⠀
Ingredients:⠀⠀⠀
1 lb pasta of choice⠀⠀⠀
¼ cup olive oil or vegan butter⠀⠀⠀
4 cloves garlic, minced⠀⠀⠀
⅔ cup shallots, finely chopped⠀⠀⠀
8 cups mixed mushrooms, sliced⠀⠀⠀
3 tbsp unbleached all purpose flour⠀⠀⠀
3 cups unsweetened almond milk⠀⠀⠀
1 tbsp nutritional yeast, or ½ cup vegan parm, optional⠀⠀⠀
⅓ cup fresh parsley, chopped, plus extra for garnish⠀⠀⠀
2 cups frozen peas, thawed⠀⠀⠀
salt and pepper to taste⠀⠀⠀
⠀⠀⠀
Instructions⠀⠀⠀
In a large pot bring salted water to a boil. Cook pasta according to package directions and drain.⠀⠀⠀
While the pasta is cooking, prepare the sauce.⠀⠀⠀
Heat olive oil or butter in a large skillet oven over medium heat. Add garlic, shallots, mushrooms and ½ tsp salt and cook stirring occasionally, until mushrooms are browned and tender, about 10-15 mins.Turning down to medium low after 5 mins.⠀⠀⠀
Sprinkle flour over the mushrooms and stir to coat, allowing to cook for 30 sec-1 min. Bring heat back up to medium-high.⠀⠀⠀
Add 1 cup almond beverage, stirring constantly and it let simmer for 1 min. Make sure to break up any clumps.⠀⠀⠀
When completely smooth and thickened slightly, add remaining almond milk and pepper to taste, return to a simmer, stirring constantly.⠀⠀⠀
Cook until the sauce thickens slightly again, about 3 mins.⠀⠀⠀
Remove saucepan from heat and stir in nutritional yeast or vegan parm, if using until melted and or well incorporated. Add peas, and salt & pepper to taste and cook for 1 additional minute or until peas are heated through.⠀⠀⠀
Add the pasta to the mushroom sauce and toss to coat.⠀⠀⠀
Serve garnished with extra parsley and serve immediately. Enjoy!⠀

Recipe ⠀
Fried rice ⠀
1 1/2 tablespoons vegetable oil ⠀
1 small diced onions ⠀
3 cloves garlic, minced⠀
1 tablespoon minced ginger⠀
1 cup kimchi, roughly chopped⠀
2 1/2 cups cooked rice (day-old) ⠀
2 tbsp tamari soy sauce @ceresorganics ⠀
1 1/2 tbsp sriracha @ceresorganics ⠀
1 teaspoon sesame oil @ceresorganics ⠀
Salt and pepper to taste ⠀
In a large pan, heat oil over medium-high. ⠀
Add the onions, ginger, garlic and cook until they start to turn translucent, about 2 to 3 mins. Add the chopped kimchi and stir until heated through, about a minute. Add the rice, soy sauce, sriracha and sesame oil, and stir until all the rice has been well coated with all the sauces.⠀

1 batch baked tofu ⠀
1/4 cup soy sauce⠀
2 tbsp maple syrup⠀
2 tsp cornstarch⠀
2 tsp pepper ⠀
1 small red onion, finely minced ⠀
1 tbsp ground ginger⠀
6 garlic cloves, finely minced⠀

Prepare baked tofu. Drain 1 block (about 14 ounces) extra-firm tofu. Slice your block of tofu into 2 or 3 even slabs. Coat the tofu with 1 tbsp olive oil, a tsp garlic powder, 2 tbsp cornstarch, 1 tsp salt and 1/4 tsp pepper. Bake at 400f for 25 mins. ⠀
While tofu is baking, in a small bowl, whisk together soy sauce, maple syrup, pepper, cornstarch and ground ginger until combined. Set aside.⠀
In a large pan, heat the 2 tbsp oil over medium-high heat. Add the red onion, garlic and sauté for 2 mins. Slowly pour in the soy sauce mixture, and stir until combined. Continue cooking until thicken.⠀
Remove pan from heat. Add in the baked tofu, and toss until it is evenly coated in the sauce. ⠀
Serve the rice with the tofu. Enjoy⠀

  • RAW VEGAN COCOA BROWNIES! 😍🍫 adapted this recipe from @minimalistbaker ! I don’t tend to have tons of unsalted nuts at hand if I don’t plan my groceries, nor did I have cacao nibs. So I made this recipe my own 😋
✨ ingredients
👉🏼 1/2 cup oat flour (blended rolled oats!)
👉🏼 20 pitted dates
👉🏼 2 tbsp PB powder
👉🏼 1 tbsp chia seeds 👉🏼 1 tbsp flax seeds
👉🏼 2 tbsp cacao powder (to make more chocolatey, add an extra tbsp)
👉🏼 dash of cinnamon
👉🏼 dash of water
👉🏼 natural peanut butter for topping (I would’ve used melted vegan chocolate with coconut oil but had none)
✨ instructions
👉🏼 blend all (except peanut butter) in a blender or food processor
👉🏼 add more water if the mixture is too dry— should be a little crumby, but sticky enough to hold together 👉🏼 place in a loaf pan (you can use parchment paper so it’s easier, but I don’t use parchment paper, so I just added it directly) and mold it to the pan
👉🏼 freeze for 10 min
👉🏼 take out, spread peanut butter (or melted chocolate) on top, then freeze for 5 minutes
👉🏼 enjoy!
This is super easy to make, high in fiber, delicious, and very much customizable! It’s a great source of energy! I would add protein powder or nuts or coconut flakes or cacao nibs next time 🤔

  • Repotted my 2 toddler #monsteradeliciosa into 1. They were probably 4inches in height back in March (3rdpic). Long ways to go for these #leafybeauties but watching them grow is what gives me all the feels. 😍🌿🌱💚🥰

  • The #SouthOfFrance is very much like #SoCal. The land is very dry, rivers carry hardly any water, and you can go to the mountains and the beach usually in less than four hours depending on where you are.

The only difference? There is more deeper routed culture showing here than in #SoCal and you're not getting the same access to progressive eating habits that easily.

#SoCal is definitely more vegan friendly, but who is comparing 😆
