Alright guys ... here we have another one of those “not your usual review “ type posts... however this is a very close relative to the pizza family, and it’s simply too god damn delicious not to share with you all... so here it goes !
This right here is called A Foccacia Barese or (‘ookook’) abit of a delicacy if you like to the south eastern region of Italy called puglia... in particular it’s capital city Bari and it’s surrounding towns especially Molfetta... this is pretty sentimental to me as my grandfather would whip this bad boy up at most family get togethers... the best way to describe what this is... a Margherita pizza and a regular Foccacia roll met up .. had hot steamy sex and 9 months later popped out the baby “Foccacia Barese” ... thicker and fluffier than a normal pizza.. and more flavoursome and juicy than a regular Foccacia... each bite consists of a delightful lightning type crunch ... it’s bathing in olive oil and seasoned perfectly with sea salt and oregano ...then comes the tomato juice that just drips down your chin...the whole experience is a absolute pleasure. Some like to add olives on top as well... To get a traditional one like this is hard to find in Adelaide, you’d have to venture to Port Pirie where most of the immigrants from this region reside. the production of Foccacia Barese / ookook would be a regular occurence in the nonna households of port pirie 🤤. If you get the chance one day in your life, whether it’s here in adelaide , up in port Pirie or your travelling in Bari / Molfetta , Italy . Grab one of these ! You won’t regret it... Delicious!!
