This creamy pumpkin soup is super tasty, easy to prepare, and makes for a perfect meal addition on a chilly afternoon! Plus, it’s sure to keep you on track with your goals 😁⁠⠀⠀
.⁠⠀⠀
What you’ll need for the soup:⁠⠀⠀
(makes about 6, 1 cup servings) ⁠⠀⠀
15 oz can pumpkin puree ⁠⠀⠀
2 carrots, cut into chunks ⁠⠀⠀
1/2 medium onion, cut into chunks ⁠⠀⠀
1 tbsp ghee or avocado oil ⁠⠀⠀
3 cups chicken broth (or veggie broth) ⁠⠀⠀
1 cup full fat coconut milk ⁠⠀⠀
2 tsp minced garlic⁠⠀⠀
1/4 tsp ground ginger⁠⠀⠀
salt + pepper to taste⁠⠀⠀

What to do:⁠⠀⠀
1- Hit the sauté button on the instant pot and add ghee. ⁠⠀⠀
2 - Add the carrots, onion, ginger, sea salt & garlic. Sauté for a few minutes.⁠⠀⠀
3- Add the can of pumpkin puree and the 3 cups chicken broth and stir.⁠⠀⠀
4 - Turn off the sauté feature on the instant pot, secure the lid and set to 8 minutes manual on high pressure.⁠⠀⠀
5 - Once the instant pot has depressurized naturally, blend the soup with an immersion blender or in a regular blender.⁠⠀⠀
6 - Stir in the 1 cup coconut milk and add salt & pepper to taste.⁠⠀⠀
7 - Optional: top with arugula and pistachios, then enjoy!⁠⠀⠀

  • I hope everyone is staying safe and warm this week!  I have been enjoying this snow so far as it has been so much lighter and brighter than our normal wet slushy winter.  It is kind of nice to be forced to take a break and spend some time with my girls.
 I even managed to start organizing my receipts for tax time yesterday lol. 🤣❄🗂

  • Oatmeal for breakfast again ⭐️⭐️⭐️⭐️ I cooked 1/2 cup of rolled oats in a mix of water and @almondbreeze unsweetened vanilla almond milk. While it was cooking I added some vanilla powder and puréed pumpkin (hence the orange color). It’s topped with sliced 🍓🍓, @lilys_sweets #vegan dark 🍫🍫 chips, and walnuts (added some more of all these toppings about halfway through) ⭐️⭐️

I used pumpkin from the fall that I froze in anticipation for this craving. In America, we throw out over 1.3 billion lbs of pumpkin each year. Isn't that crazy??⠀

Pumpkin is delicious and nutritious, and it's low-calorie. If you buy it, why not eat it? Check my previous post for instructions on how to freeze it yourself.⠀

Blend:⠀
1 cup frozen pumpkin⠀
1 fresh or frozen organic banana (I throw the whole thing in, peel and all, minus the ends)⠀
1-2 cups of almond milk⠀
1-2 scoops plant-based protein powder ⠀
2 Tbsp ground flax⠀
A pinch of cinnamon⠀
⠀
And enjoy!⠀

  • ✨ Delicata Squash Yogurt Bowl
I like to call this “Dessert for Breakfast” 🤩 So tasty & the perfect sweet but healthy breakfast 🙌🏼 Sweet, crunchy, nutty, & full of nutrients makes for the best morning pick-me-up 😋 Also, I roasted the squash this morning before work in LESS THAN 10 mins in my new @ninjakitchen toaster oven 😱 Already in love 😍 👉🏼 Vanilla Skyr (@siggisdairy) topped with pumpkin spice roasted delicata squash, maple almond (@purely_elizabeth), & hemp seeds (@manitobaharvest). Drizzled with almond butter (@wholefoods)!

Roasted Squash - Slice in half moon shapes. Spray with coconut oil & sprinkle with pumpkin spice on each side. Roast in your toaster oven for 8 mins at 400° (regular oven - 425° for 10 mins).
