This purple carrot was 2 yrs in the making
(in gardening seasons)
Carrots take 2 seasons to produce seed. So I planted carrot seeds summer of 2018 and let the plant continue growing all through this year until it produced flowers in mid July. Those flowers were 🌼🐝 pollinated and formed thousands of seeds! I saved all but a few that I scattered mid August to see how viable they were. This is the result! Beautiful purple ombre carrots!

VEGAN CHILI RECIPE
3/4 diced white onion,
4-5 shaved cloves garlic,
2 diced ribs celery,
1 diced orange bell pepper,
1 carrot shaved into circle slices,
2 cans salt free assorted chili beans (drained and rinsed), 1/2 zucchini shredded in at the end, 1 (28 Oz) can fire roasted tomatoes,
1 1/2 tablespoons tomato paste,
1/4 cup Chili powder,
1 tablespoon dried oregano leaves,
1/2 tsp cumin,
2 bay leaves,
Water as needed (Simmer for 45 minutes/ Cook starting with the coarsest vegetables first then add everything and spice to your liking/ Serve with fresh greens or cilantro :)
I’ve been tweaking my meatloaf (lifeloaf) recipe for a few months since going #glutenfree and today’s lifeloaf was by far the best one I’ve made so far. ❤️❤️❤️ I paired it with a lemon garlic kale which was out of this world. .
