Now onto the food! You won't Tofu-rget about this bowl of ramen!! We've topped it off with bok choy, mushrooms, a soft boiled egg and the show stopper, crispy tofu! .
-1/2 block extra firm tofu cut into cubes
-1/2 cup corn starch
-1 tbsp sesame oil
-1 package Mike's Mighty Good Vegetarian Vegetable Ramen Cup
-1/2 baby bok choy
-3 shiitake mushrooms
-1 tbsp chopped green onion
-1 tsp sesame seeds
1. Add water to a pot to cover the egg by 1 inch. Bring to a bowl and then add the and lower the heat to a simmer. Cook the egg for 6 1/2 min. Then run the egg under cold water for 20-30 seconds.
2. Cook the veggie ramen cup according to package instructions.
3. In a plastic bag, add the tofu and corn starch and shake until the tofu is evenly coated.
4. Add the sesame oil to a pan and fry the tofu on medium heat for 10 minutes or until tofu is evenly brown.
5. Assemble the bowl by placing the bok choy into the broth and letting it cook for 30 seconds. Then add the shiitake mushrooms, tofu, green onions, soft boiled egg and sesame seeds. Then slurp up and Savor the Good.
🇯🇵AFURI - Tsukemen -8/10 - I can see why this Ramen chain is so popular. There’s a bit of simplistic elegance to it. Diced up pieces of pork are probably the first thing that catches your eye and there’s good reason to. They had a smoky and flaky kind of texture that combined with some marinating goodness. There is the right balance of fat to lean meat ratio in each of these little dices. The noodles were a perfect consistency clearly made out of some solid ingredients. The nori flakes were an artful nice touch. The egg was up to standard as well as the dipping broth. These last two elements didn’t get me awestruck… But they were surely passable. The texture of the dipping broth was a little too light and cut so wasn’t really enveloping the noodles and every dip. The hints of soy and sesame definitely gave it a unique flavor which made it all the more disappointing when it failed to adequately coat the noodles. I splashed some vinegar in there to let the flavor soak up a bit more which helped a lot. Overall an excellent place that should be on your list when visiting Tokyo.
