  • Definitely one of my favourite curries, you’ll need a good collection of whole spices, but the flavour is most definitely worth it!
SRI LANKAN CHICKEN CURRY
To Serve 3-4
Ingredients
For the curry paste
2 tbsp coriander seeds
1 tbsp cumin seeds
1 tsp whole cloves
1 tbsp green cardamoms
1 tsp fennel seeds
1 whole star anise
1 tsp mustard seeds
1 tsp nigella seeds
1 tsp cayenne/chilli powder
1 tsp ground turmeric
2 red chillies deseeded & chopped
1 tsp black black peppercorns
80g fresh coconut chopped
1 heaped tbsp chopped garlic
1 heaped tbsp chopped ginger root
100ml coconut milk

Remaining ingredients:
1 heaped tbsp coconut oil
2 medium onions, finely chopped
750g chicken thigh fillets cut into bite sized pieces
5 medium sized, ripe vine tomatoes
1 tbsp tomato purée
300ml coconut milk
200ml chicken stock
2 fresh bay leaves
1 tbsp tamarind paste or lime juice
Knob of butter
Handful chopped fresh coriander
Salt to taste
Method
1. Put the dry spices, the first ten ingredients for the curry paste into a small dry pan on a medium low heat for 5 mins to toast, giving it a shake every minute or so. Remove from heat.
2. Put the remaining paste ingredients into a blender and blend until smooth.
3. Now your spice mix is cool, use a spice/coffee grinder and grind until you have a fine powder. Add this to the fresh curry paste ingredients and combine to complete the paste.
4. Heat the coconut oil in a large heavy bottomed pan to a medium high heat. Add the onion and sauté until golden brown. Add the curry paste and fry this for 10mins, stirring regularly.
5. Add the chicken and seal on all sides in the paste for around five mins. Then add the tomatoes, stock, coconut milk and bay leaves. Stir well and bring up to a light simmer for around 40 mins, stirring occasionally.
6. Season to taste and finish with the tamarind paste/lime juice, a knob of butter, chopped coriander. Cover and leave to rest for five mins before serving.

• More “random” clean up sweeps of homeless encampments. Rather than implementing programs to improve the health and wellbeing of the homeless, we spend money on harassment and criminalization. It’s not an effective policy solution to the homelessness problem. They may push them away for a short while, but they eventually have to return and set up a place to sleep. It certainly does not allow unhoused people the opportunity to work their way out of their situation. Being constantly disrupted and chased away will do the opposite. We call on the city to instead allocate these resources to programs that help alleviate homelessness through shelters, medical care, and education.

1) Escolha uma boa carne, tais como fraldinha, alcatra, contra-filé, patinho, filé mignon e alcatra;
2) Tenha sempre 20% de gordura em seu hambúrguer, então se escolher uma carne magra como a alcatra e o patinho, acrescente um pouco de bacon, por exemplo;
3) Não mexa demais com a carne, quanto mais demorar para moldar os hambúrgueres, mais duro ele irá ficar, devido ao calor das mãos;
4) Após moldar o hambúrguer, devolva-o à geladeira por cerca de 30 minutos, antes de grelhar;
5) A frigideira deve estar bem quente para selar a carne o mais rápido possível;
6) Enquanto o hambúrguer estiver na frigideira, não o aperte, pois o ato de pressioná-lo extrai o suco da carne e deixa o hambúrguer seco;
7) Temperos como sal e pimenta do reino só devem ser adicionados quando o hambúrguer já estiver na frigideira;
8) Vire o hambúrguer apenas uma vez, deixando grelhar por cerca de 5 minutos de um lado e 4 do outro;
9) Depois de tirar o hambúrguer da grelha, deixe-o descansar por 2 a 3 minutos para que os sucos sejam redistribuídos;

  • HAPPY NEW YEAR! Are you ready to feel your best?! I know I am! I’ve been on this journey with hypothyroidism for about a year and a half now. I can safely say, I am so thrilled I’ve stuck to my new thyroid friendly nutrition regimen. And I hope these recipes will help you all feel your best too! NOW. The recipe for Beyond Meat tacos!

I eat meat, but also like to change it up with plant based dinners every now and then. I like Beyond Meat because it’s soy free. Soy is not good for anyone, but especially those with thyroid issues. Soy can actually increase levels of estrogen in men and women! Yikes!
BEYOND MEAT THYROID FRIENDLY TACOS!
-in a pan, heat up one tablespoon coconut oil. Put in medium heat. Add two beyond meat burgers. Cover and let cook. Flip over after 4 minutes and with a silicon spatula, cut up the burger into little pieces.
-add chopped onions and garlic. Sprinkle with IODIZED salt, cover, put on low heat. -while the onions, garlic and beyond meat burgers are sautéing, make 2 cups instant brown rice. Add 1 tablespoon organic turmeric powder to the rice and 1 teaspoon PINK HIMALAYAN salt.
-chop up tomatoes and radishes.
-sprinkle a little organic shredded cheese into organic blue corn shells. Then place organic blue corn shells in oven at 325 for 5 Minutes. -back to the big pan with beyond meat. Open a can of organic black beans, drain and pour into the beyond meat, garlic and onion mixture. Sprinkle with taco seasoning. Cover and simmer.
-assemble your tacos! Start with the beyond meat/bean/onion/garlic mixture. Top with tomatoes, radishes, jarred jalapeños and salsa!
*carb tip: I will eat two to three tacos and if I’m still hungry, I’ll too my rice with Beyond Meat, beans, radishes and tomatoes.
.
.
.
.
.
.
THYROID FUN FACT: Different salts have different health benefits! I try to make sure each meal I make has both IODIZED SALT and PINK HIMALAYAN salt. Each one has different nutrients and different flavors! .

  • Pork steak in a creamy mustard sauce. When @nigellalawson recipe of the day arrived in my mail box this morning I started craving this and knew I had to make it tonight! Pork steak pan fried in garlic oil then deglazed with cider, mustard and cream. She suggested baby potatoes or gnocchi which would work great but we settled for hassleback potatoes which is also delicious. See her recipe of the day for this amazing yet simple dish. .

  • CARAMEL SLICE ANYONE? I know I missed international peanut butter day but really it’s peanut butter day everyday in my kitchen 😆

NO baking needed, these are so easy to make! The base is made with digestive biscuits, topped with gooey caramel and a layer of raw cacao 😝 yum yum! Give these a try for a quick tasty treat!. RECIPE:
✨for the base✨
.
1/2 packet digestive biscuits
1/2 cup peanut butter
Water as needed
1️⃣ Combine ingredients in a blender and mix until sticky. Add more water gradually until it sticks together.
2️⃣ Press into a silicone pan and freeze for 15 mins.
.
✨for the data caramel✨
1 cup medjool dates
1/4 cup peanut butter
Water as needed
.
1️⃣ Soak the dates in hot water for 15 mins to soften then transfer to a blender. Add peanut butter & small amount of water to start.
2️⃣ Blend together & gradually add more water until it forms a smooth caramel.
3️⃣ Remove pan from freezer and add the caramel on top. Smooth the top with the back of a spoon & return to freezer for 15 mins. M
.
✨cacao topping✨
1 tbsp raw cacao powder
1/4 cup coconut oil
1/4 cup maple syrup
(You can use any vegan chocolate for this but a cacao layer or dark choc will work nicely as the dates are sweet enough)
.
1️⃣ Mix together until smooth. Adjust sweetness with maple syrup to taste.
2️⃣ Remove pan from freezer and pour cacao mixture on top. Return to freezer and let it set overnight. Slice into bars and enjoy!

Store in a container in the fridge for up to one week or store in the freezer to keep fresh for longer (I eat it straight from the freezer) 🤩

  • Turns out I don’t hate beets after all🤣 As I get further into this journey, I have found that foods that I thought I hated I actually like😉. It is crazy to me how much my taste buds have changed. ⁣
⁣
This roasted root medley recipe from the cleanse I am on is AMAZING🙌🏻 It was simple to make and delicious! It will definitely be in the rotation for me for dinners moving forward.
⁣
I’m definitely getting out of my comfort zone where ingredients are concerned this week👊🏻 Excited to try some other new recipes in the next two weeks!

  • “My food philosophy is actually pretty simple and I do the same for me, my husband, and my kids. We eat 100% organic or no spray foods, mostly plants and whole fruits and vegetables. I listen to my body and try to listen to my children’s cues and if we are craving more animal protein, I stick to organic pastured eggs, some sustainable fish from Vital Choice Seafood, and a little bit of pastured turkey and bone broth. On a more philosophical level, I avoid food battles at all costs— everything in our pantry, fridge, and kitchen is open to my children. If they want raisins at 6 AM, they get raisins, if they have a sweet tooth and want a cookie or some vegan ice cream after dinner, I happily oblige and encourage them. I find that children are very self-regulatory and if we support them, they make wise food choices. Since all of the food in my home is whole, organic, nourishing, and thoughtfully sourced, I allow them full access and encourage them to select what they are craving.” -Mom of two and @springcafeaspen founder @springbysabrina tells us in our NEW issue! She’s also taking over our Stories next week, so be sure to tune in and ask any questions! Link to the full interview (and issue!) in our bio. 📷: @charliejulietphotography

  • Za’atar recipe share courtesy of  @spiced.nice 🥰❤️! You’ll want to save this one ! ・・・
Hummus and Pita Chips topped with tangy, herby Zaatar using my new favorite Zaatar from @terraneanherbs. 🙌🏼🌿 This Hummus goes perfectly with so many things — pita chips, warm pita bread, my kabob recipes, chicken or beef BBQ, or as a light snack with some carrots! This recipe is every hummus lovers dream: it’s creamy, lemony, and garlicky. You can see a video recipe in my highlights under “hummus” and just omit the red pepper paste shown in that video if you prefer a classic Hummus. Enjoy this #vegan recipe ⬇️⬇️ #spicednice⁣⁣
⁣⁣
🤍2 16 Oz. cans of Chickpeas ⁣⁣
🤍1 tsp baking soda ⁣
🤍1 tbsp tahini⁣ ⁣(or to taste)⁣
🤍2 tbsp olive oil ⁣⁣
🤍salt to taste ⁣⁣
🤍1 tsp cumin ⁣⁣
🤍5-7 tbsp ice cold water (depending on preferred thickness.)⁣⁣
🤍6 garlic cloves ⁣⁣
🤍Juice of 1.5 lemons (or to taste) ⁣⁣
🤍@terraneanherbs zaatar or spicy Zaatar ⁣
🤍pita bread, cut into chips ⁣
**There are no correct measurements for hummus. Some people prefer Hummus to be very lemony and some prefer a lot of Tahini. Feel free to adjust tahini, lemon, and garlic to taste. These are just my preferences.**⁣⁣
⁣⁣
1. Boil the chickpeas in water with 1 tsp of baking soda for about 20 minutes or until very soft and tender. Strain the chickpeas and wash under cold water. In a food processor, combine the garlic, lemon, and salt until the garlic has pulsed into a fine paste. Add the tahini into the food processor and while it’s still blending, slowly add in the ice cold water. ⁣⁣
2. Once the tahini is fully blended in, add the chickpeas into the food processor and slowly start to drizzle in the oil as the hummus is blending. Add in the cumin and pulse together until a creamy Hummus has formed. Plate and top with a generous drizzle of olive oil and @terraneanherbs Zaatar or spicy Zaatar mix.⁣
3. For the Zaatar chips, cut the pita bread into square chips and drizzle with olive oil and a generous dash of @terraneanherbs Zaatar. Place on a baking sheet and bake for about 10-13 mins at 400°F. Enjoy the Hummus with these crunchy Zaatar pita chips or with any of my Kabab or Chicken Recipes! 💕

  • If it was just about food, we'd all be where we want to be!
‍
A diet only works if you're able to implement it. That's why our 12 week online program "The Last 10 lbs Food Camp" includes weekly Mind Fuel modules, with exercises and worksheets focusing on the every day real-life challenges that sabotage our efforts. http://bit.ly/3836NAC
‍
Mindset - so crucial in creating lasting positive change, and so often overlooked in nutrition support.

  • I’m excited to announce the launch of my cooking blog for desi and fusion food.I have certainly had many failures in the kitchen, and I understand how discouraging it can be, but any small success quickly makes up for a botched recipe. My recipes are designed to be adjusted to your tastes, but offer a strong foundation to help kickstart your kitchen experiments. 🍽

I hope you rediscover your love for cooking Indian meals at home, as I have done over the past several years. But most of all, I hope you find joy in making these recipes for your close family and friends to share the art of cooking and the simplicity of finding delight and success in the kitchen. I’m excited to start this journey in the kitchen and can’t wait to share my struggles and successes with you.
