Can you tell that I’ve been all about the Mediterranean eats this week?! My easy baked falafel recipe is fool-proof, full of flavor and the STAR of this bowl! The base is brown rice and greens, cabbage, and then we’ve got feta, Israeli salad and three scoops of my fav dips (hummus, tzatziki & harissa)! Oh and pita! DIG IN. 💗

  • I'm finally back to loving salads again... HORRAY! For a minute there I was nervous I wouldn’t like them for my whole pregnancy. 😩 And I've got a tasty one the blog today --> Fattoush salad with fresh vegetables, herbs, crispy pita bread and a sumac dressing. Great as an appetizer or topped with protein for a meal-sized salad! 🥗💃🏻💯

If you're not familiar, Fattoush salad is a traditional Middle Eastern salad. It’s typically made with fried pieces of flatbread (aka pita), herbs and vegetables (typically radishes cucumbers and tomatoes) all chopped and mixed together AND it's so yummy. .
There's a secret spice in the dressing called sumac that has a tart flavor similar to lemon juice or vinegar. If you haven't tried it before, this salad is a great place to start!! .

  • Une seule envie pour aujourd’hui, envie de fraîcheur..donc j’ai préparé cette salade composée roquettes, crevettes avocats et ananas  caramélisés..Oui j’adore le mélange sucré salé 🙈 et vous quelles sont vos ingrédients préférés ? Chehia tayba 🙏🏻

  • I don't know about you, but quinoa salads are a summer staple over here and my current obsession is this Southwestern Quinoa Salad. 🌶🍠🌽🥑🥗 .
It's loaded with all the goods --> roasted sweet potatoes, avocado, corn, black beans... tossed with an easy spiced-up lime dressing. We love bringing it to parties and potlucks but it's also an awesome #mealprep recipe for lunches (or snacking 🙊).

  • I was able to try @bittendressing Lemon Poppy Seed Dressing (For Free Thanks to @pinchme )and it was absolutely amazing! The flavors blend so well together!

  • Anyone else not sleep a wink!? 👹 Here's the recipe to a *veggie nicoise* which takes a chilled 15 mins and always makes me feel a bit more alive 🌿 This version is vegan but I'd add jammy eggs & anchovies too (and sometimes shredded leftover chicken if there's any) . *Nicoise* Salad

feeds 2 - 3 as a main, 15 mins
.
200g green beans, topped but not tailed
Handful of pitted olives 
Handful radishes/celery /cucumber
Large handful parsley or basil, chopped 
Large handful of chives / spring onions/finely sliced onion
2 large handfuls leaves (rocket, spinach, watercress) 
2 tbsp capers
1 tbsp coconut oil or ghee
280g cooked beluga/puy lentils
280g cooked chickpeas or beans.

Dressing
1 teaspoon mustard eg dijon
1 teaspoon maple syrup or raw honey
2 tbsp apple cider vinegar / lemon juice 
5 tbsp extra virgin olive oil
Salt and pepper.

✔️In a large frying pan add oil, salt & pepper and the chickpeas. Fry them on a medium heat until crispy, takes about 8 minutes, stir halfway through then set aside. ✔️Meanwhile in a saucepan, steam the green beans in about ½ mug of salted water, lid on, for about 5 minutes until tender. .
✔️Assemble your salad by adding everything to a large platter then in a glass/ jar add the dressing ingredients and shake/whisk until it looks creamy and combined. Pour the dressing over and toss everything together to coat. Enjoy immediately! 📸 @sarahmalcs

  • ✨Salade de melons d’août ✨.

Les melons 🍈 sont à leur meilleur en saison( soit du début de août à la mi-septembre environ). Il faut donc en profiter 💁‍♀️. Et cette délicieuse 😋salade, douce et légèrement salée, est une des belles façons d’y arriver.
💦Vous aimez plus ou moins boire de l’eau? Raison de plus pour consommer des melons 🍉🍈 car ils sont composés en grande partie d’eau 💦. Ils nous permettent de s’hydrater et de se rafraîchir l’été🥵.
Ils sont aussi très nutritifs et peu caloriques.
Le cantaloup ou melon brodé est riche en potassium, en vitamine C, en folates et en bêta-carotène(se transforme en vitamine A dans l’organisme).
Et le melon miel 🍈 (honeydew) est riche aussi en vitamine C, en potassium et très riche en folates.

👩🏻‍🍳Voici la recette:
Ingrédients:
• 2 tasses de melon miel 🍈.
• 2 tasses de cantaloup (melon brodé).
• 12 tomates cerises coupées en 2.
• le 1/4 d’1 oignon rouge finement tranché.
• 4 on.de mozzarella fraîche en morceaux.
• 4 on.de jambon cuit(contenant au moins 21 % de protéines), coupées pour faire des petits rouleaux.
• 2on.de fromage feta en petits morceaux.
• quelques feuilles de basilic 🌿 coupées grossièrement.
• quelques bleuets.
• sel et poivre au goût.
👉Pour la vinaigrette:
• 3 c.à table d’huile d’olive.
• 1c.à table de vinaigre balsamique.
• 1 c.à table de sirop d’érable.
• 2 c.à table de jus de lime.

📌📌📌Avant de commencer, bien laver l’extérieur des melons 🍈 à l’eau tiède pour enlever les bactéries 🦠 (salmonelle par ex.) qui pourraient s’y retrouver.

👩🏻‍🍳Mettre les ingrédients de la vinaigrette dans un bol, bien mélanger et mettre de côté.
• Faire des boules de melon 🍈 avec une cuillère parisienne ou couper les melons en morceaux si vous préférez.
• Les mettre dans un bol et y ajouter tous les autres ingrédients sauf les petits rouleaux de jambon.
• Ajouter la vinaigrette et bien mélanger.
• Déposer les petits rouleaux de jambon sur le dessus.

Failing to prepare is preparing to fail...this veggie burger salad can be made in minutes for lunch or dinner 👩🏾‍🍳
Ingredients, Serves: 1
• Spinach leaves 🥬
• 3 slices of halloumi cheese 🧀
• 2tbs chopped red onion (1/4 of an onion) 🍠
• 4 chopped mushrooms 🔪
• 1/2 avocado 🥑
• 6 slices cucumber 🥒
• 1 vegetarian burger 🍔
• Pink Himalayan salt 🧂
• Black pepper 🧂
• Fry Light oil spray 🍶
• Sweet chilli sauce 🌶
Method:
• Preheat oven to 180 degrees
• Place vegetarian burger on a baking tray and allow to cook for 10-15 minutes.
• Spray fry light onto a heated non-stick frying pan and add the mushrooms allowing them to cook on a low heat for 2 minutes.
• Add desired amount of spinach leaves on a plate, then add the onion, cucumber and avocado.
•  Add halloumi slices to pan, turning once. Cook until tanned. Once cooked, add both to the salad.
• Remove vegetarian burger and allow to cool for 30 seconds. Chop into quarters and add on top of salad
• Finally, drizzle the sweet chilli sauce and ENJOY...🤤
