Chopped salad with lentils & sumac dressing 🍅🥒 .
feeds 4-6 as a side, 30 mins .
300g uncooked brown/puy lentils
300g cherry tomatoes, halved or 4 medium ripe tomatoes, diced
1 medium cucumber, diced
1 large red pepper, diced
bunch spring onions / small onion, sliced
small handful fresh mint, finely chopped
small handful fresh dill, finely chopped .
1 garlic clove, finely chopped
5 tbsp extra virgin oil
juice and zest of 1 lemon
2 tsp maple syrup or raw honey
2 tsp sumac
pinch of (aleppo) chilli flakes @ottolenghi or @rootedspices
sea salt & pepper . .
1. In a pan of boiling water, simmer the lentils (rinsed well and drained, soaked if time) until tender, about 20 mins, check the label instructions. .
2. Meanwhile shake the dressing ingredients together and season to taste .
3. Chop the herbs, tomatoes, cucumber, pepper and spring onions and mix together in a medium bowl /serving platter. .
4. Add the lentils, toss everything together and serve warm or once cooled

4 boneless skinless chicken fillets, 5 oz each
1 Tbsp avocado oil, or olive
8 cups mixed leaves
1 cup cooked fresh or frozen organic corn kernels
1.5 cups halved cherry tomatoes
1/3 cup chopped pecans
4 hard-boiled eggs, peeled and chopped
1 ripe avocado, diced
Sweet Onion Dressing:
2 fresh garlic cloves, pressed
1 small sweet onion, chopped
4 Tbsps extra virgin olive oil
1/4 cup apple cider vinegar
1/2 a fresh lemon, juiced
sea salt & pepper
Heat a grill pan on medium high heat. Rub chicken with salt, pepper and a bit of oil, then add it to grill. Cook for 5 minutes per side, or until cooked through and no longer pink inside. Set aside on chopping board, cover and rest for a few minutes, then slice thin.
Heat 1 Tbsp oil in a skillet over medium high heat; Saute garlic & onions for 6 minutes, or until soft and golden brown. Place caramelised garlic & onions in a small blender with remaining olive oil, cider vinegar & lemon juice; puree until smooth.
Season to your taste with salt & pepper, then refrigerate dressing until ready to serve.
In a large salad bowl, add lettuce, then cooked chicken, tomatoes, corn, eggs, pecans, and diced avocado as shown.

Quinoa herby rocket salad with a cumin lime dressing.
feeds 8- 10 as a side, takes 30 minutes
300g quinoa (tricolour or regular)
100g coriander, finely chopped
100g mint leaves, finely chopped
100g baby spinach/ rocket / watercress, very roughly chopped
1 red onion or spring onions, finely chopped
2 handfuls of fresh or frozen peas or cooked chickpeas
a few handfuls of pomegranate seeds or raisins or chopped fruit
a few handfuls of pumpkin seeds or sunflower seeds, toasted if you fancy
Cumin lime dressing
6 tbsp extra virgin olive oil
1 tbsp ground cumin or 2 tsp cumin seeds
pinch of chilli flakes or a little cayenne
juice of 3 limes and some of the zest
2 tsp raw honey or maple syrup
1 garlic clove, finely grated or chopped
salt & pepper
✔️In a medium pan, toast the cumin seeds or ground cumin for a minute or so until gently toasted and fragrant then transfer as much as you can to a jam jar.
✔️Add the rinsed and drained quinoa to the same pan and cook according to label instructions, lid on with a pinch of sea salt, usually around 15 - 20 minutes until tender then add the peas to the pan, take off the heat and leave to stand for a few minutes.
✔️Meanwhile add all the other ingredients to the jam jar, lid on and shake until combined then taste for seasoning and adjust to how you fancy, more chilli, more lime etc .
✔️Spread the quinoa onto a platter to cool quickly - or for speed, rinse the quinoa until cold.
✔️Chop the red onion, herbs and leaves then combine everything together along with the dressing and toss to combine.

I started a garden this summer. And I've kinda gone down the rabbit hole. Totally hooked. The only problem? I've had the smallest yield of produce in the history of backyard gardening. 😂
My herbs are going strong, but as for the rest... so far I've gotten 2 tiny banana peppers, one zucchini, 2 baby watermelon about the size of a softball, and a handful of cherry tomatoes. Yep. That's it. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Things are growing, sure. But there are not a lot of "fruits of my labor" happening.
I'm hooked nonetheless. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mostly because now I've learned a lot about what not to do, and how I can improve in the future. In fact, I've started the second round of plants, and things are starting to look up. 🌱
The other morning as I was doing my daily garden inspection/ sipping coffee routine, I realized gardening is teaching me a lot about entrepreneurship. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
In my business, I tend to avoid things that might make me look dumb. Like I don't know what I'm doing. I play it safe. Stick with what I know. What's been tested. Even if it's not what's best for me. And if something doesn't work out the way I expected or wanted it to, I shove that thing DEEP in the back cupboard. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
But what if that thing I abandoned so quickly and easily just needed a little more compost in the soil, or a nudge 2 feet to the left to get better light? What if a second dose of (all organic) fertilizer would have greened it up and put it over the hump?
Having 1000% trust that someday my counter will be overflowing with produce I grew with my own two hands has oddly given me 1000% trust that I can build a new business that's overflowing too. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
It just takes the right combination of soil, sun, water, nutrients, and care. Oh, and the most important ingredient: the willingness to plant a seed even if it never bears fruit. Otherwise known as the willingness to fail.
So what are you waiting for? The sooner you have a shitty season, the sooner you'll have an unbelievable season. Let's go!

This super greens salad comes from @halfbakedharvest, of course. I just love all of her recipes. This salad is a definite go to for me and my husband when we are indecisive (which happens more often than not) about the weekly menu.
This power greens salad has arugula & Tuscan kale, carrots, sundried tomatoes, toasted chickpeas & pine nuts, feta and an apple cider vin made with the oils from the tomatoes. Soooooo unbelievably delicious 😋. I also get excited because this recipe makes enough salad for a leftover lunch the next day.
Give this salad a try and add some blackened chicken or shrimp if you fancy some protein.
Detix Day 2 (part 2) - Raspberry & kiwifruit salad with a nectarine puree 😋😋 4/5. The challenge of no oil has meant the discovery of purees as a dressing and adding fruit to greens. This delicious salad was a huge food highlight. #yougottaeatthis
Ingredients: organic rocket, choi san greens boiled, cherry tomatoes, crushed organic garlic, organic red onions, nectarine puree (nectarine boiled in leftover sweet potato water), avocado, nectarine, walnuts, kiwifruit, organic raspberry, walnuts and organic lime juice.
Tonight’s dinner is looking like this 👆🏻 A little DIY version of one of my fav places that I am missing SO much (@cava) 😩 This bowl was super easy to put together + delicious! All 3 of the sauces are TJ’s purchases– the spicy Harissa, Mediterranean hummus, and Tzatziki dip, highly recommend them 💛
The base is arugula + spinach with shaved Brussels, feta, balsamic bbq chicken, my fav kalamata olives from @aldi, spicy + sweet jalapeños, and a cucumber tomato and onion mix with parsley, evoo, s+ p, and lemon juice!
