Eggless Wholegrain Chocolate Cake with a whipped dark chocolate frosting ...
A simple enough cake to bake with a simple enough 2 ingredient frosting that looks like you've put in a load of work!
Eggless Wholegrain Chocolate Cake
1 cup wholegrain flour/aata 150g
1/2 cup good quality cocoa powder 45g
1 cup thick yogurt 225g
3/4 cup brown sugar 100g
1/2 tsp baking soda
1 1/4 tsp baking powder
1/2 cup clarified butter / ghee 100g
1 tsp vanilla extract
200g 54% couverture chocolate, room temperature, chopped
200g fresh cream, room temperature
Preheat oven to 200C.
Grease a 6″ round tin, and line the bottom & sides with parchment.
Whisk the flour, cocoa powder and salt to mix well. Reserve in bowl.
Beat the sugar, vanilla and yogurt for 5 minutes on high speed. Add baking powder and baking soda, beat in on low, and allow to stand for 3 minutes. You will find that bubbles appear.
Beat in the ghee. Slowly add the flour mix in 3-4 lots, blending in well after each addition.
Bake at 200C for 10 minutes, reduce temperature to 175 C and bake for 40-45 minutes or till a toothpick inserted into the cake comes out clean.
Cool the cake for 20-30 minutes and then overturn onto a plate.
Melt the chocolate in the microwave for 30 seconds.
Pour over cream, and stir until smooth.
Cool, then chill. Stir every 30 minutes to distribute heat.
Once slightly thick, whip until smooth.
Frost & pipe the cake once cool completely.
Up until about a year ago, I was always looking to squeeze more and more into my days because I thought that was the only way to be productive. Just do more. But somewhere in my attempts to do more, I lost touch with the things I valued most.
Now I'm experimenting with a simpler way of living—one that's less stressful and more fulfilling. I am by no means immune to getting caught up in the crazy pace of our culture, but I'm improving every day.

The dresser was even a pre loved item that was easily repainted!
And the little pressed flowers were my craft yesterday.
Well, no I did not press the flowers 🤷♀️ but I found the pair, found a matching set of frame borders, and then found the perfect size gold frame 🥰 Possibly the best part, the whole “project” cost less than $2 🤭

Day 17, July 17 . . . . Working gives a lot to your life. When you deactivate, you have to figure out ways to replace the parts of it that matter to you: paycheck, work-family relationships, and a regular routine that organizes your life.
