  • Tried out the sweet chili sauce I picked up from Trader Joe’s on our wild caught salmon last night! And by wild caught I mean our cousin @tony_tone31 is a great fisherman & hooks it up!🐟

I cooked them first in a cast iron skillet to get a nice char on each side then popped them in the oven to finish them off. I will be completely honest tho, I thought just a nice sear on each side would cook it all the way through & I was wrong! We sat down and both were a little too sushi like in the middle😆, but oven was already hot from the veggies so popped them in for a little longer & they turned out great! Would appreciate any shares & feel free to save this post if you plan on trying the recipe out eventually💗!

Sweet Chili Salmon & Honey-Soy Veg
⠀⠀
5-6 salmon fillets(4-5oz ea.)
2-3T sweet chili sauce
1lb tri-colored carrots(TJ’s)
1lb asparagus halved
1T raw honey
1/4C soy sauce/coconut aminos
1tsp minced garlic
1/4tsp ground ginger
S&P
⠀⠀
Start with veg,  add veg, honey, soy, garlic, & spices a bowl & mix. Put veg on a foiled baking sheet or greased baking dish & bake for 25-30min @400. Heat well oiled cast iron skillet on med/high heat. Season both sides of salmon w/ S&P(I also added TJ’s umami seasoning). When pan is hot lay fish skin side up & let sear 3-4min. Flip, brush on sweet chili sauce, & sear for 3-4min. Transfer to lined baking sheet & bake for 8-12min @350 or 6-8min @400 if veg is still cooking. Fish should be a light pink throughout & flake off skin with a fork. SIMPLY ENJOY!

Something about the sunshine always has me craving a smoothie. So it’s safe to say it’s been a hot minute since the last time I’ve made one here in Washington, and I took advantage of the last couple days! This recipe is seriously so simply, deats below. Ps. Don’t be scared of the cauli-rice you cannot taste it & it gives the smoothie amazing texture!

SB&J smoothie
1C frozen mixed berries
1C frozen cauli-rice
1-1.5T sunbutter
1 scoop vanilla protein(31g)
1C unsweetened coconut milk
(Can add more milk if you want it runnier, but I like my smoothies thicc😆)

  • Jason took me out to dinner at CI Shenanigans last night on the Tacoma waterfront to celebrate Valentines day & it was such a great time💗. It was such a great time I wanted to share it! Til I realized we had been there for 15 minutes & I hadn’t set my phone down...

I love sharing my life & all the goods with everyone on here but realizing when I’m “doing too much” on my phone has definitely been a struggle. Once I realized I was, I apologized to Jason, & put my phone in my bag.
⠀⠀
We had great conversation, laughs, enjoyed the views together, & our plates were cleaned by the end of the meal😆. I’m sharing this now because although I love being apart of this community nothing comes before the relationships & quality time spent with my husband & loved ones in person. It’s important to give that quality time your undivided attention & be fully present. Always take the time, special holiday or not to connect with the people you love💗 K thanks for reading this guys, love you all!

  • These @kalekouture remake cookie bites are perfect for a last minute v-day treat or skip the sprinkles & make them whenever your heart desires!

Yesterdays first batch was so tasty but just didn’t turn out quite as I expected. So I made a second batch today, and so glad I did! A little less dry ingredients & shorter chill time & they turned out just like the originals but allergy friendly! Protein powders vary in scoop size so weighing out your powder will provide the best results. Deats below:
⠀⠀
1C @sunbutter 
3T honey
1.5 scoops vanilla protein(50g)
1T @enjoylifefoods chocolate chips
Sprinkles(optional)
⠀⠀
In a microwave safe bowl add Sunbutter & honey. Heat for 1min. Quickly add protein powder and mix well ‘til smooth. Cover with plastic wrap & chill 10-20min. Scoop out 12-16 bites, & push chocolate chips into bites. Add sprinkles & SIMPLY ENJOY!

  • Sorry to make you guys wait all day for this goodie! Been meaning to get that workout post up for days, then went to work, & now finally heres this recipe!

Made this chicken bacon ranch casserole for the first time last night & WOW did it exceed my expectations. Inspo from a post I found on Pinterest by Jessie’s Food Table. And not to sound weird, but I used to live next to a Subway & there C.B.R sub was my go to! This totally reminds me of it in all the good ways!👌🏽😆 Let me know if you try it out I’d love to see any remakes!

Ps. I used @primalpalate ranch packet but I’m sure any brand would do the trick😁! C.B.R cauli-casserole
1.5lbs chicken breast
1lb bag broccoli(about 5C)
4 slices turkey bacon
4C frozen cauliflower rice
8oz. Light cream cheese(room temp)
1C Italian blend shredded cheese
1 small yellow onion
1 packet ranch seasoning
2tsp minced garlic
1/2C panko breadcrumb 
Start chicken breast first, bake @400 for 30-40min or cook in Instapot. I seasoned w/ garlic powder, S&P. While chicken is going, dice onion & add it along with minced garlic to a skillet sprayed with cooking oil. Cook ‘til translucent & add to large mixing bowl. Cook turkey bacon in same skillet, let cool, chop & add to large bowl. Add broccoli to skillet w/ 1/4C water, cover & cook ‘til tender. Roughly chop and add to bowl. Add eggs(well whisked), cream cheese, 1/2C Italian cheese, & ranch seasoning packet to bowl. Mix ‘til very well combined. Lightly spray a 13x9 baking dish, evenly distribute mixture into dish. Bake @350 for 30-35min(should be bubbly looking). Add remaining Italian cheese & panko(if using) to top of casserole. Cook 10 more min. Let cook 10-15min. Serve it up & SIMPLY ENJOY!

  • It’s Sunday and we just touched down in Seattle! I wish we were more stoked about it, but it’s freezing and there’s no pool here at home..😬. Plus side, we get to see Magdog!! Also on the agenda today, is grocery shop & meal prep for the week ahead. Nothing like jumping right back into real life, but most times when you just rip the bandaid off and get it done you are more satisfied in the end!

Above are three salad variations we had prior to leaving for vacay & will probly repeat this coming week along with some other prepped meals. Below is a “grocery list” of what it takes to make all three types of salads. So if you are thinking of what to make this week & haven’t done your shopping yet these are great options! Happy Sunday folks, ready to get this train rollin 🚂💨💪🏽 Proteins:

  • Was so cool to experience Joshua Tree yesterday, but I’d be lying if I denied my bummed attitude about not getting to do as much as we wanted to.

This is the only picture where my hair isn’t flowing with the crazy whipping winds that were there yesterday. It made it hard to get out of the car and explore but we did find the Cholla Cactus Garden 🌵 & even a little gecko scurrying through it with us lol.

Hopefully we’ll get another opportunity to go back and take in all it has to offer in the future, but still very glad we made the detour.🤍

  • Cheers to @simply_sabes 1st birthday! I created this page a year ago today while laying on my couch a month post knee surgery and probly slightly loopy from the pain pills I was on lol.
⠀⠀
While recovering from knee surgery I had a lot of down time and wanted to create something that connected all my passions. My love for cooking and experimenting in the kitchen, the active lifestyle I’ve always lived(which led to me having surgery), and to share my story of rehab and getting back to being myself again!
⠀⠀
And within this year a lot has happened! I underwent a second surgery, struggled threw a much longer rehab than anticipated, in a way completely restarted my fitness journey, found a creativeness through food I never knew I really had, and of course have to throw in I got married to my best friend!!
⠀⠀
To everyone who has followed from the very beginning or just started following last week, thank you sooo much! Seriously tho thank you for being apart of and interacting with this page, my journey, & welcoming me into this community. It truly has been one of the lights of my life this past year.  Excited for what we can do in this year to come!🥰1️⃣🎉🤍

  • Heading out of town this Friday! Asked you guys where you thought we were going for our first trip of 2020 on my stories, and it was kind of a trick question!😆 Well more like a multi answer situation...

Jason & I will fly to Scottsdale Friday and spend a long weekend there with family & friends. Then mid week next week we’ll be road tripping from AZ to CA & ending our time just us two in Palm Springs!

We love Scottsdale after experiencing it for the first time last year(where this pic is) & are very excited to road trip & explore Palm Springs for the first time!

    Jason & I will fly to Scottsdale Friday and spend a long weekend there with family & friends. Then mid week next week we’ll be road tripping from AZ to CA & ending our time just us two in Palm Springs!

    We love Scottsdale after experiencing it for the first time last year(where this pic is) & are very excited to road trip & explore Palm Springs for the first time!

  • Going back to my oats! Much prettier than this mornings work oats lol. I feel like I get into meal patterns when I’m at my best & I love that. The consistency of the same meal but prepped slightly different keeps my attention but also keeps me on track diet & nutrition wise!

Going off of my word for 2020, consistency! I want to keep my diet more consistent this year. Not by actually dieting in a deficit, which I’m not but will later this year, but with consistently nurishing my body with Whole Foods that are rich in the micronutrients my body needs to perform at its best!

This bowl of oats is prepared very simply by microwaving 1/2C oats with water just to fully cover oats. Then I topped with fresh banana coins, spoonful of sunbutter, a sprinkle of cinnamon, & coconut whip from Trader Joe’s that is too good!🙌🏽

Other ideas for toppings to switch your oat bowl up:
- fresh/frozen berries
-other butters
-cacao nibs(crunchies!)
-choco chips
-granola
-Greek yogurt(protein!)
-protein powder(mix in pre-cook)
-maple syrup drizzle
-honey
-nuts(if not deathly allergic..lol)

  • Still asking myself why I haven’t made these in so long?! They are so simple & quick to make for meal prep! Packed with protein making them perfect for work breakfasts, a post workout snack, or even as dessert!

I always want to make my recipes easy for you all to access, & I have some exciting new ways to make this happen in the near future! For now, I added the recipe below so you aren’t searching for it on my page🤗.

Last time I made these I used 3 bananas, & this time I only used two and both turned out great! So weigh your bananas & just get between 250-300g. Recipe deats👇🏼

2 bananas(250-300g)
2 eggs
1tsp vanilla
1 scoop chocolate protein powder(33g) @gardenoflife 
2 scoops @vitalproteins collagen
1tsp cinnamon
Pinch of pink salt
2 cups oatmeal
3T mini chocolate chips @enjoylifefoods

Heat oven to 350. In a medium mixing bowl add bananas & mash well with fork til puréed. Add in eggs & vanilla, mix w/ hand mixer till well combined. In small bowl, mix protein powder, collagen, cinnamon, & salt. Add dry ingredients to banana mixture(I put mine threw a sifter on the way in, this is optional but avoids clumps!) Mix til well combined. Add oatmeal & choco chips & fold ingredients in till combined. Add batter to an 8x8 baking dish lined with parchment paper & bake 25-30 minutes.(mine were 28min). Let cool 20 min & cut into 12 bars. SIMPLY ENJOY! *store in air tight container in fridge.

  • Crockpot Turkey Minestrone that was made last night, and I’ve had it for both lunch & dinner today! It’s that good lol.

Typically minestrone doesn’t have any form of meat in it, but we had leftover ground turkey so decided to throw it on in! By all means this is optional & can be omitted for a more traditional minestrone.

With the snow supposed to stick around all week this is a perfect meal to keep your insides warm and toasty! Especially if you add a piece of toasted sourdough for dipping😋. My personal favorite addition to any bowl of soup! Recipe deats below:

1C diced celery
1C diced carrots
1C diced zuchini
2C chopped cabbage
1 medium onion chopped
1tsp oregano
1tsp parsley
2tsp minced garlic
2 bay leaves
S&P
2 can fire roasted tomatoes
1 can dark kidney beans
1 can garbanzos beans
1 box @eatbanza shells
4C low sodium vegetable broth
2C water
 1/2lb ground turkey(optional)

Chop all veggies & add them to a 6qt or larger crockpot(if using 6qt use only 1C water). Add all seasonings,broth, & water. Cook on low for 6 hours. After that add beans let cook 30min on low. Cook pasta according to box, when Al dente place in a strainer & rinse with cold water for 1-2min until pasta is cold to touch(this seizes pasta to stop cooking & prevents mushy noods). Add pasta to crockpot stir til soup is well combined, let pasta warm in soup for 3-5min. Then it’s ready to serve! Top with shredded Parm & toast some sourdough if desired. SIMPLY ENJOY! *If meal prepping & not eating til next day. Add noodles, mix, & place in fridge.
