To make:
Sauté 1 medium onion, 4 cloves of minced garlic + 2 tbsp minced ginger on medium heat until translucent. Add 1 can of drained and rinsed chickpeas, 2 cans of coconut milk (or 1 can of coconut milk + 2 cups of cashew milk), 3 handfuls of chopped kale, 1/2 cup chopped sundried tomatoes, the juice of 1 lemon, 2 tsp ground ginger + 1/2 tsp salt. Bring mixture to a simmer, and cook for 10-15 minutes until flavors have developed and chickpeas are softened. Once done, pour over sweet potato or quinoa + enjoy!

Loaded Sweet potato slices with harissa hummus, gomashio & pomegranate. Great for lunch with salad or just a delicious snack! 
Sort of soft, creamy and & crunchy - 
So good!

2 sweet potatoes sliced lengthways into aprox 4 slices
Drizzle olive oil
Pinch sea salt
Pepper
*
For the Hummus; 
1 can Chickpeas drained - reserve 2 tbsp for topping
Juice 1/2 lemon
1 clove garlic
2 tbsp extra virgin olive oil
Pinch cumin seeds
1/2 tsp sea salt
1 tbsp rose harissa or 1 tsp harissa
*
Gomashio
4 tbsp white Sesame seeds
2 tsp black sesame seeds
1/2 tsp sea salt
*
Pomegranates seeds
*
To cook the sweet potato;
Pre heat your oven to 180c
Place the veg on a baking tray and coat in olive oil, salt and pepper.
Bake for 25-40 minutes or until cooked.
*
To make the hummus;
Add all the ingredients to a food processor or high speed blender and blitz until very smooth and creamy (2-3 minutes).
*
To make the Gomashio;
Dry toast the sesame seeds and salt in a pan until lightly toasted. Be careful not to burn. Set aside.
*
To serve;
Spread the hummus over the roast sweet potatoes.
Top with the reserved chickpeas, gomashio & pomegranate seeds.
Enjoy xxx

  • BROWNIES!!! Who doesn't love these sweety sticky squares of deliciousness? We're celebrating Potato Day with an update to a crowd favourite - our Sweet Potato Brownies recipe! They're the perfect combination of health and indulgence!

SWEET POTATO BROWNIES

Cooking time: 30 minutes
.
// INGREDIENTS
▪️1 Pack of Fullgreen Sweet Potato Vegi Rice
▪️1/2 cup coconut sugar
▪️4 tbsp cocoa powder
▪️3/4 cup ground almonds
▪️1/4 cup buckwheat flour
▪️2 heaped tbsp coconut oil
▪️2 whole eggs
▪️Tsp baking powder
▪️Pinch salt
▪️Dash of vanilla extract
▪️Handful chopped almonds

// CARAMEL SAUCE
▪️2 tbsp smooth almond butter
▪️Heaped Tbsp maple syrup
▪️Almond milk as needed
▪️Pinch of pink Himalayan salt

// METHOD
Preheat your oven to 180c and line a brownie tray with grease proof paper.
In a food processor, combine the sweet potato rice, coconut sugar and coconut oil. Blend until smooth and well combined. Crack in the eggs and pour in the vanilla extract, then blend again.
Pour this into a mixing bowl, then fold through the dry ingredients so that you’re left with a smooth, velvety batter.
Transfer into the brownie tray and smooth over the surface. Scatter the almonds over the top and pop it in the oven to bake for around 20 minuets.
For the caramel sauce, mix the almond butter, maple syrup, salt and then gradually drizzle in the almond milk as needed.
Remove the brownies from the oven and allow to cool before slicing into portions. Drizzle over the sauce and serve!

  • Food prep as an act of rebellion | Inspired by today’s conversation on Slowing Down by @annaviolalovind👩🏻‍🍳💥 When I was growing up, an either/or attitude hung in our household air to the effect of: “cooking takes hours a day, Mom does that; holding a job takes 9 to 5 plus overtime, Dad does that. And you, you have to choose one path... & because of all of your privileges, you should choose career.”

In our kitchen, I was invited to “assist.” I  trimmed the ends off string beans, buttered rolls & mixed cookie dough, but I was never taught the art of the main course. It was Mom’s role. I respected that & believed I could never do it like her anyway. And in a world where girls could now become doctors & lawyers, “you won’t have to cook,” they said.

Besides rare times we ate out, my mother never missed a meal. The first time she was too sick in bed to cook, I was in high school.
.
So I tried to cook... rice. My master plan was to add it to a can of Campbell’s chicken soup for our family of 4. How hard could it be? The directions on the box were black & white, but I overrode them with logic: “There is NO WAY that little amount of rice is enough for us, I should use 4x the amount!” And I proceeded to, using a small pot, & within 20 minutes, you can imagine: bubbles & wet, undone rice on the stovetop, in all 4 burners, every-freaking-where. The burning smell drew my mother out of the sickbed to the kitchen where she cleaned up the mess. I sat on the tile floor in shambles, watching her through my tears, feeling so incapable & awful that she never did get a full day off from cooking.

Today life is different. In my adult years, by challenging that early conditioning, slowing down & taking time (& trusting quantities in recipes 😂) I have learned to prepare beautiful, nourishing meals for my family & even for large groups of people in meditation programs. Now my husband & I make it a daily practice to grow some of our own food &... [continued in comments]

  • Ever have one of those days/weeks were you feel like you’re not doing enough or feel like locking yourself in a sound proof room and screaming as loud as you can because your child has pressed your last button 🙃😬😭 🙋🏻‍♀️ Jesse is amazing and I love being around him but I also love being by myself sometimes and Daddy being away a bit recently has meant very little of that 😴

When I’m tired, self doubt starts to creep in & I start to doubt everything I’m doing for him even though I know I’m being ridiculous as I couldn’t do any more for him. 
Today I felt bad that I hadn’t made him any meat in time so just gave him an omelette for tea with sweet potato, yoghurt and strawberries (a completely adequate tea 😂) However the most amazing thing (to me) happened and he picked the spoon up to feed himself 😭( so proud) he’s been so fussy recently not wanting me to pass him the spoon, he’s Mr independent so gets annoyed with me 😭🙃! I’ve been sending myself crazy thinking of ways I can encourage him to use it again but he just needed time to figure it out and I finally realised he’ll get there in his own time & maybe I should take a chill pill 🙊!! I’m sure most parents feel this way but having a prem baby adds extra stress 😰 the worry that they’re behind babies their age 😭! Anyway just thought I’d share Incase anyone else ever feels this way🥰

    Today I felt bad that I hadn’t made him any meat in time so just gave him an omelette for tea with sweet potato, yoghurt and strawberries (a completely adequate tea 😂) However the most amazing thing (to me) happened and he picked the spoon up to feed himself 😭( so proud) he’s been so fussy recently not wanting me to pass him the spoon, he’s Mr independent so gets annoyed with me 😭🙃! I’ve been sending myself crazy thinking of ways I can encourage him to use it again but he just needed time to figure it out and I finally realised he’ll get there in his own time & maybe I should take a chill pill 🙊!! I’m sure most parents feel this way but having a prem baby adds extra stress 😰 the worry that they’re behind babies their age 😭! Anyway just thought I’d share Incase anyone else ever feels this way🥰

  • dinner tonight made by yours truly: sweet potato cottage pie 👩🏽‍🍳

actually really enjoying cooking a nice dinner after work, it’s super mindful and i’ve never really been into cooking before but being on slimming world is opening me up to new recipes and new ideas and i love it 😁

🧡 500g lean mince
🧡 1 onion
🧡 1kg sweet potato
🧡 250g white potato
🧡 150g carrot
🧡 3 tsp lazy garlic
🧡 parsley
🧡 375ml beef stock
🧡 paprika
🧡 a lotttta salt n pepper
🧡 1.5 tbsp worcestershire sauce
🧡 1.5 tbsp tomato purée
🧡 40g reduced fat cheddar (HexA)

In short: Fry mince, onion, lazy garlic and carrot until brown/soft. Add parsley. Boil sweet & white potatoes until soft. Add worcestershire, tomato purée, paprika & beef stock. Keep stirrrrrin’. Add salt and pepper. Drain potatoes & mash well. Once cooked, pour mince mixture into big dish, layer mash on top and sprinkle cheese. Cook for 20 mins and voila, delish! 😋
