Breakfast of champions. 🙌 On the bottom (which you can’t really see, lol) is sweet potato toast, then avocado, @applegate bacon and a couple @vitalfarms eggs. Sprinkled on top is micro greens...and now I’m thinking I need to add micro greens to my patio garden. Hmm, I’ve never grown them though, have you? 🤔 If so, give me all your tips! Happy Wednesday!

SWEET POTATO Toasts via @tinashealthyworld
✖️1 sweet potato
✖️1/8 tsp salt
✖️1 tsp olive oil
✖️1 tbs hemp seeds
1. Slice the sweet potatoes into thick slices. Bake the Sweet potatoes slices at 350 F for 25-30 minutes or until they are fully cooked 2. In a bowl, mix the avocado, lemon, and oil together until well combined. Add in the tomatoes, salt, and hemp seeds and continue to mix until well combined.
2. Add this avocado mixture on top of the baked sweet potatoes 🎵Music by DJ Quads
Can you believe it’s my first time making Sweet Potato Toast?! This one is inspired by Turkish Eggs. Toasted sweet potato Slices topped with goat milk yogurt, avocado chunks, cucumbers, poached eggs, fresh parsley, paprika, and pickled red onions.
To make the toast, just slice a sweet potato lengthwise into 1/4” thick slices. Place in the toaster and toast on high. You’ll probably have to do it 2-3x to get it cooked fully! Worth it though. So good!
Goat milk yogurt is from the Brentwood Farmer’s Market. I make my own pickled red onions at home! There are plenty of recipes online, but I usually use Bon Appetit

Schil 3 flinke zoete aardappelen. Snijd ze in stukken en kook ze gaar. Maak ze fijn met een stamper in een grote kom.
Voeg de volgende ingrediënten toe:
100 gram kikkererwten meel
3 fijngesneden lenteuitjes
1/2 fijngehakte rode peper
flinke snuf zeezout
2 fijngehakte tenen verse knoflook
Kneed alles met de hand tot een smeuïge puree.
Smelt een eetlepel kokosolie in een koekenpan. Schep hoopjes puree (1 eetlepel) in de pan. Druk ze aan tot ze ongeveer 1 cm dik zijn. Bak de pucks aan beide zijdes bruin (+/- 5 minuten op vrij hoog vuur). Ik gebruik een portioneerring met een aandrukstempel. De puree blijft aan het stempel hangen. Ik schraap deze aan de binnenrand van de koekenpan af en druk ze dan nog een beetje plat met de bolle kant van een lepel.
Hier een gerechtje met een in kokosolie gebakken kippendijfiletje dat ik bestrooid heb met gerookt paprikapoeder, zeezout en vers gemalen peper.
Why do we have such hysteria about eating fruit? I went through years of digestive problems that made me feel like a bit of a freak😂 Those problems stemmed from imbalances in my gut and hormones that also caused big acne flare ups. There is such hysteria about fruit on the internet in a world still full of milkshakes and candy - can we give wonderful fruit a break? What is your experience with fruit and all the wellness hype about cutting it out?
I’m personally a fruit lover! These are sweet potato toasts I roasted on each side for 10 minutes at 400*F with blackberry collagen chia jam I made with frozen berries, @vitalproteins collagen, and @salbachia chia seeds. One has sliced banana and @beekeepers_naturals bee pollen on top and the other has pistachios, cashews, and freeze dried raspberries I got from @traderjoes - so yum!!
Current snack situation: GUACAMOLE SWEET POTATO TOASTS with CHILI LIME SHRIMP and ICED MOCHA MACA LATTE. Happy Thursday loves! I have started a new ritual where I sit down with an afternoon snack and a latte and take a break from the kitchen and emails. It’s a little time to decompress from “work” mode. This latte has been on repeat! I use @wanderingbearco cold brew, because it’s my absolute favorite. It is such a clean coffee and has a note of chocolate to it. I have a big box on my counter with an easy pour and a individual few to-go boxes in my fridge 🙃 If you love cold brew you will love this one! This afternoon ritual has helped me with my stress...it’s my “me” time. I’ve been running around from appointments to meetings all morning so this was needed. Do you have any daily rituals that help you escape from reality for a few minutes?
Deets: LATTE: 1 cup @wanderingbearco cold brew, 4 ice cubes, 1 tablespoon cacao powder, 1 teaspoon maca, 1/2 teaspoon vanilla, 1/2 scoop of collagen, 2 tablespoons dairy free creamer/dairy free whipped cream or coconut cream (your choice...I used coco whip in this one), and sweetener of your choice. Add all ingredients to blender and blend until frothy! TOASTS: 3 slices of sweet potatoes (cut 1/3 inch thick) and sprayed with avocado oil and air fried for about 5-7 mins on 390. (You can also bake for 25 minutes on 400 flipping halfway). Guacamole: 3 ripe avocados, 1-2 tablespoons lime juice, 1/2 teaspoon salt, 1/2 teaspoon cumin, 1/3 cup diced red onion, 2 tablespoons chopped cilantro, dash or two of garlic powder, 1 tablespoon minced jalapeño (could also sub with a jalapeño hot sauce). Shrimp: seasoned with Trader Joe’s chili lime seasoning and seared on medium high for about 2 minutes per side

1. Cut the ends off of a sweet potato, then cut the sweet potato into thin slices
2. Microwave for 4 1/2 minutes
3. Broil on high for five minutes each side

I haven’t posted a recipe in forever🤦🏼♀️ To be honest, prior to a few weeks ago, my old eating disorder habits had been very present since my injury and not being able to workout. I was restricting and tracking all of my food, because I was so afraid to get “out of shape”🙄 In the moment, it felt good to be in control, but it was giving me severe anxiety and definitely not helpful in my stress fracture recovery. It’s exhausting to live jumping from one ed to the next, so I decided to stop restricting in any way two weeks ago and start giving myself the rest and food I need for my stress fracture recovery, and almost immediately I stopped having anxiety and my back has felt so much better🙌🏽 Funny how that works, if you just stop treating your body like crap, it’ll stop hating you🙃

First time trying sweet potato toast... big fan 👏🏼 So many people have recommended this to me, I thought it was time to give it a go. 🥑🥓🍳 This is a great replacement for regular toast, which will spike your blood sugar in the morning and send you on the spike, crash, crave roller coaster the rest of the day.

First day back was a success! It's always an adjustment getting back to routine, and in years past, I come home from that first day of meetings with a fried brain. You know what happens? Takeout.
Not this time. I made sure my week was planned out and today most definitely included a simple crock pot meal. I feel so much better knowing that dinner is halfway done when I get home.
And it was so good! Pulled pork over sweet potato toasts and a mixture of fresh broccoli and cauliflower from the farmers' market. The only thing that would have been better, would be a little coleslaw on top!

I'm not a huge meal-prepper, but meal prepped Whole30 Breakfast Sandwiches are something I can get behind. This recipe is simple, delicious, and comes together really quickly in the morning so you can get some extra zzzs.
I LOVE sweet potatoes. And sweet potato toast is one trend that I am totally on board with. Just slice your sweet potato in 1/2" slices, bake on 400 degrees for about 30 min, and you are good to go!
I store mine and broil them on low for about 3 minutes when I am ready to eat them (you could use a toaster or toaster oven to reheat too!)
They are the perfect breakfast, snack, or even dessert! You can make them savory with smashed avocado or hummus, or sweet with nut butters and the like.
This one is dressed up with homemade cinnamon almond pecan butter and blueberries!

whenever I hear someone using veg and fruit’s low caloric levels as a motive to eat them I just want to plug my ears 🙉
yes it is true that they are low in calories, but that is probably one of the least important reasons I would give for eating them. calories should not be the selling point, the driving factor, if you will.
because not only does stressing over numbers take away from the enjoyment of food and the tradition and culture behind it, it also disregards (and inhibits) the incredible healing effect food can have on our bodies (queue the antioxidants, phytonutrients, flavonoids, proteins, bacteria, you name it). and, as you may already know, all calories are not created equal (e.g. eating 500 kcal worth of gummy bears vs 500 kcal worth of almonds is very, very different). it may be helpful or even necessary in specific medical instances to focus on calories, although usually in all other instances, I truly believe that if you’re eating whole, real food (in addition to practicing other healthy habits like getting enough sleep, managing stress, etc) you will begin feeling better, have more energy, be happier, etc.

-slice a whole sweet potato into 1/2 inch thick slices, roast at 375 for 20-30 min. mash avo, lime, salt, and cilantro together in a bowl and top the toasts. add some chopped cucumber if ya feeling it and dig in✨

I definitley find myself going through phases with food. Some weeks I crave smoothies, oatmeal bowls and other weeks I am all for potatoes, squashes, etc. I love meals that can be quick and thrown together in a jif because when I’m hungry, the last thing I wanna do is wait an hour for food to cook😂

SO, a little background on ELDER, did y’all know elder was known and is still known as natures medicine chest. It’s traditionally used for coughs & cold as well as congestion & allergies. Super rich in vitamin C which if you know me I’m always advocating on that vitamin C and D. Specially during Summer months that we tend to jump in the Pool (i mean who doesn’t), if you dint know chlorine depletes the body from vitamin C (I’ll post the link in my profile for y’all to read on it). Back to ELDERBERRY, they are also rich in FLAVONOIDS + have anti-inflammatory properties. I mean why not have abs enjoy this all year around. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Sweet potato toast for the one with a sweet tooth in the morning😍 Sweet potato toast is so easy for meal prepping! Just cut some potatoes lengthwise, spray with olive oil, avocado oil, or coconut oil cooking spray, sprinkle on some sea salt, and pop in the oven at 400 degrees for 15 minutes. Flip them all over and cook another 15 minutes. Once they cool you can keep them in the fridge until you want to use them like I did today!🤩 I stuck two in my toaster oven and broiled them until they were hot again, topped the roasts with organic almond butter, bananas, and blueberries, then sprinkled some hemp seeds on top!! So incredibly yummy and a perfect way to start your day🥰
