Just in time for #PastaFriday . Made with @barillaaus new Chickpea Casarecce, which has 18g plant based Protein per 85g serve and naturally gluten free 💪 It’s made from just 1 ingredient - 100% Chickpea flour. So it’s filling, nutritious, lower in carbs and delicious! ❤️

You can take a lot longer to make this by baking or grilling fresh eggplant and using fresh cherry tomatoes, but after a busy week, we all need Pasta on the table FAST! So check out my cheat’s version below 😀
Pasta alla Norma
100g onion diced
2 cloves garlic crushed
400g can Cherry Tomatoes
300g jarred grilled eggplant chopped
2 dried red chillies crumbled
1/4 cup fresh basil torn (extra to garnish)
1/4 vegan Parmesan grated or nutritional yeast
1/2 tsp pink himalayan salt
Black pepper to taste
Sauté the onion and garlic for 3 mins in a frypan at medium heat. Add a splash of water (or oil) as required to stop it drying out.
Add the can of tomatoes, eggplant, chillies, salt, pepper and basil, and stir to combine.
Allow to simmer gently while you cook the pasta

Cook in salted water as per directions.
Drain and reserve liquid

RECIPE:🍝Tomato & Basil Veggie Pasta🍝
250g grams Barilla Red Lentil Penne (uncooked)
1 large eggplant, finely chopped
2 zucchinis, finely chopped
4 tbs sundried tomatoes, sliced
2 tbs extra virgin olive oil + extra for baking veggies
400g chopped tomatoes
1 garlic clove, crushed
Pinch of dried basil leaves
1 tbs tomato paste
1/2 tsp sugar
Fresh basil leaves
1. Preheat oven to 200C. Place eggplant and zucchini on a baking tray and coat generously with olive oil. Bake until cooked through and golden.
2. Prepare Red Lentil Penne according to packet instructions.
3. Heat olive oil on pan and cook garlic for 1 minute. Add tomatoes, paste, sugar & boil. Reduce heat and simmer for 10min or until sauce thickens. Stir through dried basil.
4. Add cooked pasta to the pan. Stir through veggies, pasta sauce and top with fresh basil leaves. Enjoy.
