  • Espresso Muffins with Vanilla Buttercream Frosting by @sobeautifullyreal ✨

Dry Ingredients
2 cups (240g) all-purpose flour
2 1/2 teaspoons baking powder
1 cup raw cane sugar (or sugar of choice)
1/4 teaspoon baking soda
1/4 teaspoon salt

Wet Ingredients
1 cup soy milk
1 tbsp apple cider vinegar
1.5 tsp instant coffee mixed with 1 tbsp hot water, cooled
2 tsp vanilla extract with seeds
1/4 cup apple sauce
1/3 cup melted coconut oil
1 tbsp flaxseed meal 
3 tbsp water

VANILLA BUTTERCREAM
1/2 cup room temp coconut oil (so, solid)
1 tsp vanilla bean paste
2-3 tbsp soy milk
3-4 cups powdered sugar
----
Preheat oven to 175C
Whisk together the soy milk and apple cider vinegar and set aside to thicken.
----
Whisk together the flaxseed meal and water and set aside to form an egg replacement
----
Sieve dry ingredients together in a large mixing bowl.
----
Whisk together the soy milk mixture, flax eggs and the rest of the wet ingredients in a separate bowl.
----
Fold the wet ingredients into the dry ingredients and combine until just mixed & lumps are gone (Do not overmix)
----
Divide mixture evenly into lined muffin tins, filling them 3/4 of the way up.
----
Bake for 35-40 minutes until a toothpick comes out clean.
Allow muffins to cool completely before icing.
----
To prepare the buttercream, beat the coconut oil and vanilla with a electric beater until all lumps are gone. Add 1 cup of powdered sugar and 1 tbsp of soy milk at a time, beating well until you reach your desired consistency. Pipe with a piping bag. 
Keep muffins stored in a sealed container in a cool place.

  • After running a ton of errands and going grocery shopping after work, the first thing I wanted to do was eat and the last thing I wanted to do was cook. I am seriously glad it’s finally Friday and can spend 2 days relaxing. Happy Friday! ✨

  • Today I discovered this AMAZING coffee shop and the best part is that it's in KENDALL! Finally something delicious and unique close to me!! From top to bottom: ham, bacon and cheese quiche, croque monsieur, MANGO bread (yes, I know 🤯) and avocado toast. 🥑 The coffee was a black and white mocha latte with hazelnut and it was sooo delicious. 😋 I'll def be coming back to this place. I'm sooo happy I found this cute hidden gem in Kendall, it was much needed in this area! @magiccityperks #foodsmiami

Throwback to Barcelona where I enjoyed this amazing Torrija Cremada de Sta. Teresa (bread pudding), best described as a creme brulee in cinnamon pastry.  The outer pastry was crisp with cinnamon flavours and the centre was warm and creamy.  Enjoyed at Ciudad Condal which was probably the best restaurant I visited during my trip.

Loaded with fresh basil, lemon, walnuts, parmesan, and garlic ~ it is pretty much to die for! 😜 I have vegan variations included in the recipe too, all of which we have tried and loved.

We always keep our freezer stocked with this stuff, so we can enjoy the taste of summer all year long. Yep, it lasts for a year in the freezer! One week in the fridge. We love it on veggies, sourdough, and eggs especially. It can also be turned into a bomb ass salad dressing. Check out the article to learn more!

Remember, the more you harvest basil, the more it produces. Get it while it is tender, and keep making batches of this all summer! That's what we do. There is a related article "How to Grow Bushy Basil to Harvest All Summer Long" up there too. 🤙🏼
