This one’s a little more ambitious with its choice of ingredients so perhaps ask your friendly local bartender to mix this when you’re out on the town this Christmas.

You will need…
•
35ml Isle of Harris Gin
12.5ml Ume Plum Vinegar
25ml Italicus Bergamot Liqueur
2 dashes of Peychaud Bitters
1 Bergamot orange.
•
Pour all the ingredients into a mixing glass with ice and stir until well chilled. Then strain into a Harris Gin glass over fresh cubed ice and garnish with a slice of dried bergamot orange.
•
The Tweedleplum is a flavoursome take on the Negroni, using plum vinegar to add a sharp vibrancy and balancing things with the floral sweetness of Italicus.
•
You can also make this in large batches for up to 10 people. Simply add 15% extra water and chill in advance before serving over ice.

  • At the beginning of our spirit making journey we chose to train local people rather than employ experienced distillers from elsewhere in Scotland.
•
This decision means we now have five distillers and two apprentice distillers, each with varying backgrounds from builder to joiner, ex-policeman to former facilities manager.
•
One such distiller is Donnie. Having spent many years travelling the world, it wasn’t long before the pull of our island shores had him returning to homeland.
•
Every drop of island spirit is distilled by these Hearaich, embarking on a challenge to produce spirits for Harris to be proud of.
•
We thank Donnie and the distilling team for allowing us to share the spirit of our island home with the world, directly from Harris hands.

Clear nights and colder days lie ahead with the low sun now setting around 4.30pm.

While modern central heating is most islanders' preferred source of warmth, there is still something special about an open fire.
•
Across the Outer Hebrides the old tradition of cutting and drying peat for fuel still takes place.
•
The hard work and effort from spring, like that done by Bill Cross shown here, is now well rewarded.
•
The smell of these 'fàds' of burning peat is a rare and evocative part of island life.
•

  • Tonight is Oidhche Shamhna (Pron: Oy-hya How-na), the eve of the ancient Celtic festival of Samhain and the root of all things Halloween.

It was believed that on this night, the boundaries between our world and the Otherworld overlapped, allowing ghosts and faeries to move freely between the two.
•
Local traditions here in the Outer Hebrides have changed as the centuries go by, each generation having different ways of celebrating this long-held cusp in the island calendar.
•
But it's always been a fun time for village children with costumes and disguises, turnip lamps or carved pumpkins, songs, games and stories...
•

Domhnall, Gaelic for Donald, has been sharing jokes with our distillery family since the original ‘Tarbert Ten’ in 2015 and his bubbly personality and pride for our island home shine through to all who meet him.

Hailing from the east coast village of Scadabay and although a builder to trade, you’ll usually find Domhnall distilling our island spirits or filling and transporting casks between our on-site warehouse here in Tarbert and our off-site warehouse in Ardhasaig.

  • Just four short years ago last night, we threw open our distillery doors for the first time and welcomed our fellow islanders to join us in celebrating the brand-new Isle of Harris Distillery.

Many drams of Isle of Harris Gin were shared among family and friends and we danced the night away in traditional ceilidh style with the Skipinnish band in our empty on-site warehouse.
•
We’ve come a long way since then, now employing almost 40 members of staff and that warehouse is now filled with 200 private casks maturing as each day passes by.
•
Many new friends have also been made along the way and we continue to send our sincere thanks to all those that join us both here in Harris and in spirit around the world.
•
Here’s to the many years that lie ahead of us as our story continues.

Bad weather can often cut off lifeline services and sailings, as stock on the local shop shelves quickly dwindles.

But water is one thing we always seem to have in abundance here in Harris.
•
The wet stuff has been falling from sky for weeks on end, swelling the streams and keeping the grass lush green.
•
But we shouldn't complain too much because we use this water, the softest in Scotland, in both our whisky and gin making.
•
So, let it rain we say, and let's keep our island spirits flowing!

We entrust this job to our diver Lewis Mackenzie who dons a wetsuit daily to gather this special salt-sweet plant for us.

Armed with only a net and a sickle, his careful management of the marine environment always ensures a sustainable harvest.
•
He even picks off any little crustaceans clinging on to the golden green fronds, and carefully returns them to the water.

Paul became our first "Distiller For A Day" thanks to his wife gifting him the experience after winning it during the West Harris Trust's fundraising endeavours.

It was an early start, this was to be a real day of distilling work after all, as he got hands-on with every stage of our gin-making.
•
From botanicals to bottling, his journey led him all the way from the copper still to placing the final seal on the stopper.
•
His reward was his very own bottle of Isle of Harris Gin from the batch he had helped make.

Matured by the sea in the village of Ardhasaig, in the shadow of the Clisham hills, we’re intrigued to know what our island elements will bring to our inaugural dram.

Centred around the new marina on our distillery doorstep, the 4 day event is a real celebration of our island's cultural connection to the water.

Some of our distillery team took to the sea last night after work, putting their paddling techniques to the test as they set out for nearby Scotasay island.
•
Tonight, we're hosting a fireside talk from seadog and adventurer Will Copestake as well as the festival's award ceremony tomorrow.
•

This unique and fragile ecosystem is a joy to behold at this time of year, as the coastal grasslands erupt into a riot of wildflowers.

A bright white sea of daisies will give way to hundreds of yards of yellow buttercups before the sea pinks, purple clovers and rarer orchids, trefoils and bluebells battle it out.
•
If the weather holds, it's the perfect place to pick a careful path and wander to, and perhaps even sit nearby with an Isle of Harris G&T (or two).

  • Last week our little, Italian-made copper gin still completed her 1000th run of distillation.

    When we began life at the end of 2015, we could not have imagined just how busy she would be.

    Nicknamed 'The Dottach' after a legendary local lady, every drop of Isle of Harris Gin has been made in her fiery belly.

  • We recently enjoyed some great food, drink and musical celebrations at the opening of 'The Hebridean' @thehebridean_  gastropub in Glasgow.

Chef Nico Simeone alongside his Executive Chef, Andy Temple, recently travelled from the Butt of Lewis to Barra learning all about island produce.

We were happy to welcome them to our distillery and let them sample some of our Isle of Harris Gin on their travels.

  • While @isleofharrisdistillers are renowned for their award winning and world class gin (rated best in Scotland), the single malt whisky ”Hearach” they are crafting here in the heart of the island will be sure to make a statement, once it’s ready. 
The warm Outer Hebridean welcome you receive when you enter the distillery, with the open roaring fire, is second to none. What’s unique about the tour here compared to other distilleries is that we started with a tasting. The 63.5% 3 day old new spirit naturally packed a punch and was just the ticket at 11am, after a crisp night in our campervan! We then tasted a whisky with a similar flavour profile to that of the forthcoming “Hearach” - a Gaelic word referring to someone born and bred on the isle of Harris. Unlike it’s robustly peaty southern Hebridean cousins, we can expect Hearach to be a delightfully smooth and lightly peated dram with notes of honey and vanilla. We loved the way the guide explained the parts per million (level of peatiness) with the use of their Harris tweed abicus made specially to represent the elements that go into making their whisky. It gave us a nice visual indication of how well it could go in a potential batch of our own Hot Scotch Sauce!🌶
As was explained to us, Harris Distillery are “enemies of average”. Along with the likes of Raasay they are taking on the establishment of the Scotch whisky industry in their own way and not rushing it, with six local distillers crafting a whisky from what is the softest water source in the British isles. It will be ready when it’s ready and we cannot wait. For now we will enjoy their beautifully bottled gin of 9 botanicals. 
It’s always more poignant when we visit independent distilleries who are not owned by large corporations. Isle of Harris Distillers are certainly at the heart of the community here and their ethos of being “The Social Distillery” has meaning. Looking forward to coming back next year! Slàinte 🥃🔥
