Gisteren was een gezellige avond🥰. Samen met my man pizza maken en beleggen. Lekkere groentjes op een gezonde en vegan (maar met veel kcal) pizzabodem. Meng 300 g volkoren speltmeel met 50 ml olijfolie en 180 ml plantaardige melk. Kneden tot een gladde deegbal en extra meel/bloem toevoegen indien nodig. Lekker beleggen en 20 minuten op 180° in de oven. Aanrader hoor. Prettige dinsdag.
Yesterday I had a lovely evening. Went to the gym and made pizza with my cuteeee boyfriend. Mix 300 g whole wheat flower with 50 ml of olive oil and 180 ml soy milk. Put in the oven for 20 minutes at 180 degrees celcius. It was sooo good. Whe shared 1 pizza and had some rocket salad with it. Topped with mozzarella, bellpeper, asparagus, tomatoes, tomato sauce, mushrooms and capers.

Mixed Tomato tart🍅
This delicious savoury tart works great for a light lunch or even as a reason to get your cake stand out during appetizers!
Whole wheat Crust:
~ 1/2 flour
~ 1/2 cup whole wheat flour
~ 6 tbsp butter
~ 4 tbsp ice water
Crumble flour & butter together till it becomes breadcrumb like, add ice water in to mix until a dough ball forms. (You can use all whole wheat flour if you'd like as well)
Chill the dough and blind bake at 180C/350F for about 15 mins until browned.
~ 1/2 cup pesto
~ 1/2 cup cream cheese
~ 10 multi coloured cherry tomatores
~ 1/4 cup mozzarella
~ 3-4 leaves parsley
~ salt, pepper, garlic powder
Mix pesto, cream cheese, salt, pepper and garlic powder together and spread it on the crust
Chop the tomatoes in half and spread them out covering the pesto cream. Fill torn up pieces of mozzarella between the tomatoes. Bake again at 180C/350F for about 15-20 mins till the cheese is bubbly and lightly golden
Tear parsley on top and serve warm!

Dinner is served! My first attempt at a homemade black bean burger turned out fantastic. Tweaked the recipe a little to lower the carbs and sodium and increase the fiber, and of course added way more garlic. :) Thanks to @mercyforanimals for the original recipe, and @hayleyhudson26 for bringing it to my attention.
